My husband usually (as in always) packs my lunch #KeptWomen . But when I opened up my container of Fruits this afternoon, I was in LOVE with the colours!!! I HAD to share them with you.
Doesn't it BLOW your mind how the Earth can create food to nourish us and that's also so freaking beautiful and colourful??

Hey there Friday! This week I’m sharing my spin on dirty rice! I made a large portion for my meal prep but you can cut the recipe in half if you want less :) To make the rice you need:
3 cups brown rice
4 cups No salt added chicken broth
3 cups water
1 tablespoon olive oil
To dirty up the rice you need:
4 hot chicken sausage
4 sweet chicken sausage
1 red bell pepper (finely chopped)
1 green bell pepper (finely chopped)
1 medium white onion (finely chopped)
1 tablespoon garlic (minced)
2 tablespoons olive oil
2 tablespoons fresh oregano (roughly chopped)
1 tablespoon ground cumin
1 tablespoon ground cayenne pepper
Turn the stove on to medium-high heat. In a large nonstick pot, add all ingredients to make the rice and stir well. Cover with a lid and let it simmer approx 30 minutes (stirring occasionally) or until rice is fully cooked. Remove from heat and set aside.
While the rice is cooking, cook your sausage. I used a grill pan on the stove set to about medium heat. Approx 8 minutes on each side or until cooked through. Let them rest for about 5 minutes then cut them into half inch slices. While the sausage is cooking you can also start your vegetables.
In a skillet set to medium heat, add olive oil and onion. Sauté for about 3 minutes or until they begin to caramelize. Add in your chopped peppers and sauté for another 4 minutes or so. Add the garlic, oregano, cumin, cayenne, and sauté for about 2 minutes to coat everything evenly. Finally, add your vegetables and sliced sausage into the rice and mix thoroughly.
If you want to make your rice more mild, adjust your spices! This is such a satisfying dinner. I like to add a pinch of cheese which adds an extra gooey element ☺️.
