Shakshouka is a Middle Eastern dish of poached egg in spicy and robust thick tomato and green chili stew with onions and garlic spiced with North Africa spices from Tunisia and Morocco.
Over the years as my gastronomic adventure begins, I discovered and started to experiment with old fashion authentic recipes from various regions of the Middle East and different Shakshouka recipes was one that I kept trying.
I kept trying until I found a recipe that I really like. It's a recipe from Lebanon which had this fiery red photo with specks of greens amidst the sunny yellow yolks of the dish. When I tried the spicy recipe on my father, he exclaimed that this is exactly like what he had in a cafe in Beirut back in the early 60's! It's is now our favorite
So below's the recipe, albeit with a few tweaks and enhancements, using spices from Athene Spices to make it easier and quicker to make. And it's healthier too.
I assure you shakshouka will be a wonderful change from your usual poached or scrambled egg. It will definitely be great conversation starter during those weekend brunches too, imagine having friends over to share a skillet of this wonderful dish, mopping the gravy and yolks with crusty French bread, fighting over the last bit of gravy.
ingredients - 4 fresh eggs
- 2 tbsp olive oil
- 1 onion, sliced
- 4 garlic, minced
- 2 tsp Athene Spices Ras el Hanout
- 1 tsp Athene Spices Tunisian Harissa
- 1/2 can whole tomatoes
- 1 green chili, de-seeded and sliced
- 1 bunch coriander leaves (chop leaves, roots minced)
- salt to taste

Whilst the shocking kicker is at the end of the blog, MSG is found in most processed foods around the world. I'm sure most of you have been limiting your junk food intake but on take aways in particular Chinese food, food stock, soy sauces (not tamari) , parmesan cheeses, canned soups, some seasonings & casein protein powders etc. ..................... Yes by & large this is not stated on ingredient list & comes under flavorings.
It may even be stated as : ☢L glutamate ☢Yeast extract ( not nutritional yeast which is good) ☢Hydrolysed yeast extract ☢Hydrolysed vegetables protein.
Sorry vegans your certainly not safe marmite & vegmite include this deadly substance.
Even our beloved Bragg's liquid aminos... ☮What does it do? Studies have shown it diminish eye sight, lesions in rat brains. ☮It was created by a Japanese guy probably inspired by the umami flavour from kombu or dashi. MSG or aji no moto however is highly processed. cheers Japan 🎌
The glutamate industry formed a nonprofit to counter the bad reports amalgamating in the late 60's. STOP BELIEVEING WHAT YOU HEAR OR READ AS MOST SCIENTIFIC STUDIES HAVE BEEN BACKED BY CORPORATIONS.

Essentially glutamic acid which is present naturally is fine but the glutamic acid made when processing, this is TOXIC.
Would you believe me if I said crops are sprayed with a runoff called (AuxiGro). There are even a handful of organic fertilizers with this approved at least in the states. Meaning even organic may contain MSG... Naturally try & eliminate processed foods, flavourings & the extensive list above. However going organic & biodynamic from farmers market is king, I doubt any farmers at these markets use MSG on crops but who knows.
What's your thoughts on MSG? did you think it was limited to Chinese take out too?

Kebetulan si mbak masak nasi kuning, eh dateng keripik kentang hebi dr onty @tatasous .
Ini terbuat dr kentang, udang kering sama ada bawang merah gorengnya juga. Enak loh ini ga terlalu asin, jd digado jga enak. Ga pake msg dan pengawet loh.
Kita semua pasti mau hidup sehat kann bebas dr msg dan pengawet tapi hrs tetep enakk, nah ini salah satu pilhannya :)
