Buffalo Chicken Salad
This was fun to make and I have tons of leftovers!! I served on a bed of romaine lettuce but would be awesome as a wrap with other stuff too!
First I boiled 3 chicken breasts, yep boiled, with salt. Removed and shredded in my kitchen aid blender with just a few twirls🤗
Next I chopped 2 celery stalks, 1/2 red onion, 1/2 red pepper, 3 cloves garlic and sautéed in 2 Tbls ghee. Tossed in with chicken.
I had a bunch of cooked spaghetti squash left and added that to the mix, at least 3 cups.
Next I made a sauce from franks red hot and a little mayo, lemon juice, nutritional yeast, s&p, garlic and onion powder. Whipped 3 eggs and added to the sauce and then mixed in with the chicken mixture.
Baked at 350 for 1 hour.
When we were eating it, we couldn't even tell there was Squash in it!!! Not that I would mind but it was just so yummy.
It will be on repeat for sure. .
Well this was a totally inspired dinner! I planned on steak I bought fresh last weekend, unfortunately I let it go too long and it went bad😞
So, plan B.
I always keep an uncured ham steak in the fridge for emergencies such as this 😂
When I think ham, I always think egg. I wanted something interesting and creative. Something with a surprising flavor profile.
First I sautéed shiitake mushrooms, the stems of chopped bok choy and garlic in ghee with s&p. Once it was tender I added the bok choy leaves and stirred until limp. Removed from pan.
Next I added more ghee and my sliced up ham with lots of black pepper. Cooked until browned a bit.
In a separate pan with ghee I dropped 2 eggs in with s&p and did a quick cook and scramble.
Sauce made from homemade mayo, Bubbies Pickles horseradish, pepper, chili flakes, onion powder and garlic powder. The bomb with this dish!
I had some red onions marinating in FarmhouseCulture beet gut shot that were perfect to top with.
Now I made a taco with Siete Family Foods coconut flour tortillas, however you can eliminate them and serve this layered in a bowl!

But no excuses on my healthcare! Inspired by my own work on mssavedmylife.com I made a taco salad for my hubby and I while we keep working.
I also did something today I have been planning on doing for a few months and finally pulled together today!! A prepacked travel kit that we will take with us anytime we travel by car to a hotel, or somewhere else kinda foreign that will help us stay on track with our lifestyle without so much stress! Hint: it's not really food, I pack that when we leave. Stay tuned🙌
Wow! Slow roasting is just awesome guys!
I took some frozen chicken(bone in), seasoned, covered and slow roasted on 220 all day. Last 10-15 mins I took the lid off and broiled to make crispy.
Soooo Yum and almost zero effort or pre planning!
Roasted broccoli, red pepper and re onion with olive oil, s&p and garlic
Fresh salad with romaine, kale, avocado, raw walnuts and creamy Basil dressing.
Red wine vinegar
Omg where have I been?! I was working and got really caught up and forgot to post my dinner!!! Gasp
Grass fed beef burger, garden fresh tomatoes( so sweet) , bed of spinach, buffalo roasted cauliflower, avocado, and pickle🤗
This meal is a go to for me when I am busy, well minus the cauli. I cook the burgers in my iron skillet with ghee and call it a day. Seriously, this gal is working a lot and needs to rest a bit more✔️Here's my thing, we all say how busy we are....it's a choice. I am choosing to be busy. I like it. My body just needs me to slow down a bit. So, guess what, I listen🤗
I always eat on the floor at this little round table, I don't care for chairs when dining
Anywho, my hubby and I have been busy little bees cleaning out the two boys rooms (as they are headed off to the Army). God bless all the parents who have had to do this task😳 At first it was sad and many years were shed, then it got kinda gross, then It was shocking, and by the end really rewarding when the rooms were transformed into something that humans could live in again😂

I marinated some grass fed stew beef in olive oil, coconut aminos, ACV, garlic and s&p
Cooked over medium high heat in coconut oil until crispy in all sides. Then added Szechuan bone broth from Nona Lim.
Next I added a lot of fresh basil, sliced Brussels and garlic. Cooked a bit and added more broth
Served over raw kale with avocado, kimchi, fermented beets and egg
I just throw these things together in the fly. The key is having the good foods around to choose from!

Made my pho beef into a bowl of course and it was excellent! So much flavor here and my house totally smells like a Vietnamese restaurant

I hope you guys aren't afraid to mess with, tweak and make recipes your own! I always encourage people to cook by feel as your body knows what it needs and likes. It is nice to be inspired and have a road map too!
Well, I did it!! I made a DELICIOUS raw, dairy free blueberry cheesecake!

NO, this is not WPP. This was made as a Fathers Day treat! Way better than many desserts!
I added only about 1/4 cup (at most) raw honey for sweetener. I also used all raw nuts. Crust I used half walnut half pecan (instead of walnut/almond in recipe)
I also recommend NOT soaking your cashews overnight, it is too long. You only need to soak them for 1-4 hrs.
We also only placed in the freezer for 3 hrs and then ate, it was not frozen hard at that point. By the next day, if left in the freezer, yes you will need to thaw a bit before cutting.
I am already thinking of ways to improve this gem, like maybe some ginger...?

PANCAKE FISH, yep, I made paleo pancake cod nuggets and they were awesome! I bought a paleo pancake mix a long time ago and tonight wanted to eat cod and thought, hey why not! The mix is from Birch Benders Micro-Pancakery and is gluten free, grain free and soy free. I cut some cod fillets into nuggets, whipped an egg and stirred in with fish. Next added some of the mix until coated. Cooked over med heat in Tin Star Foods ghee just until browned on both sides and sprinkled with salt and pepper.
Served with romaine salad - I made a quick dressing with FarmhouseCulture gut shot, olive oil, mustard, s &p

1 cup frozen strawberries and blueberries
1 big stalk celery
1 handful fresh parsley
1.5 cups fresh spinach
1 tsp turmeric

1 Tbls ginger juice @the_ginger_people
1/2 cup full fat coconut milk
1/2 cup kombucha GT's Kombucha
