I prepared these little cookies as a snack for a cycling day and after 60k they were a lifesaver! They are super easy to prepare, high in protein and low in sugar = perfect fitness snack!
Blend 1 cup of oats in a food processor until flour texture, add 1 banana and 2 tbsp of peanut butter (home make always better ;)), 1 tbsp of coconut oil. Mix for 1 min.
Add a 1/2 cup of fresh blueberries and blend for 5 seconds.
Place the cookies in a baking tray and bake for 15 min.
