ONE POT WEDNESDAY
Dammit, you are not over Christmas. I repeat, you are not over Christmas! You’ve barley got your 2018 socks on, it’s still freezing, you are still sleep deprived and it’s #humpday . Well I’m not having it. So I give you this glorious no fuss delight of a #midweekdinner - my (a lie, Martha Stewart’s) one pot wonder, but in typical ‘never stick to a recipe’ style I’ve made a slight alteration to make this a little more hearty and meaty taste given it’s still baltic out there!!! My addition - porcini shrooms 😍 This pic served one (me) :) and I went all out on the tomatoes and chilli flakes to warm the cockles. This kind of dish only depends on one thing - your ability to fling things in one pot and wait 10 minutes. Add pasta of choice to a large pot with baby tomatoes, half a sliced onion, good pinch of chilli flakes if you want some heat, teaspoon of oregano or basil, clove or two of garlic and the piece de resistance, about 2 tablespoons of dried porcini
mushrooms (chopped into small pieces once rehyrdated for about 5 mins in 1 cup/230ml of boiling water). The most important part of this is to make sure you use the brown water that the mushrooms were soaking in and add it to the pot along with approx 1 more cup of boiling water (and a splash for good luck). Bought them over the weekend at farmers market, and they’ve had no fancy packaging at all. Speaking of packaging, did you hear that EU declared that ALL of its packaging to be recyclable and reusable by 2030?!? How great is that?!? 🙌🏻 To use less plastic is one of my goals for this year, and it’s great to see more and more people participating in the similar idea!

2كوب خبز سوري مقطع ومقلي
1حبة بادنجان كبيرة تقطع شرائح وتشوح بقليل من الزيت والملح
250 غ لحم مفروم توشح مع بصلة صغيرة مفرومة ناعم
في مقلاه اخرى نشوح 1فص ثوم مهروس مع رشة زيت زيتون ومن ثم نضيف 1م.ك معجون طماطم مع 1/2 م.ك معجون الفلفل الاحمرو 1 م.ك دبس رمان و 1 م.ك عصير ليمون ونتبلها بملح،فلفل،برش ليمون ونضيف 1/4 كوب ماء لتخفيف الصلصة
11/2 كوب لبن،2 م.ك طحينة،1فص ثوم مهروس 1 م.ك عصير ليمون،ملح، فلفل،برش ليمون .تخلط جميعا في الخلاط ويضاف لها قليلا من الماء لتخفيفها. ونسخنها قليلا على النار
اخيرا في طبق عميق نرص الطبقات كالاتي: الخبز المقلي،صوص معجون الطماطم،شرائح الباذنجان، خلطة اللحم،صوص البدوة ونطش اخيرا 1/2 كوب سمنة او زيت (حسب الرغبة). يزيين بالبقدونس واللوز او الصنوبر المحمص.

Recipe of today:(( eggplant fattah))
Ingredients for 2:
2cups beta bread diced and toasted until crisp
1large eggplant sliced salted and fried with a little bit of oil
250 g minced meat cooked with 1s onion finely chopped
In a pan sauté 1 glove of garlic with little bit of olive oil, add 1tb tomato paste, 1/2tb red pepper paste, 1tb pomegranate molasses,1tb lemon juice,salt,pepper,lemon zest,add 1/4 cup of water to thin the sauce.
11/2 cup yogurt, 2tb tahini,1glove of garlic, 1tb lemon juice,salt, pepper, lemon zest. Blend together and thin it with 1/4 cup water and heat little bit.
Spread layers in a deep bowl start with bread, tomato sauce, eggplant, meat, yogurt sauce, and top with 1/2 cup of margarine or oil hot and steamed just before serving, garnish with chopped Parsley ans toasted almond and pin nuts.

The end result of a lot of waffle but a very fun evening of cooking for myself none the less. I love @kenmare_foodie so much and her style of #snapchat and #instagram#foodie clips that I thought I’d give it a go 😂😂 Defo needs some work. But sure all for the sake of getting @happygrubclub up and running in whatever guise it may take. For reference I combined 2 veggie chilli recipes for this: @jamieoliver’s Kerryann’s Chilli Con Veggie and @food52 Smoky Bean Chili and tweaked it as I went adding a sly dash of @enconasauces Texan Chilli BBQ 🌶😍👌🏻It wasn’t fancy and had no trimmings as I’m doing a super #SP#slimmingworld day tomorrow to get back on track but boy does it pack all the punches 🤛 🥊 Go forth into the week and #batchcook like a ninja!

I've just added a new and improved Vegetable Noodle Miso Broth recipe to the Honest Project.
I've been re-visiting old recipes and working on them to refine and improve them and it's so satisfying. I've been blogging about food for almost three years and some of the recipes are firm favourites that I make again and again. Others are forgotten gems that I'm rediscovering. A few others are best not mentioned.... I've deleted these ones. It's funny to see how the blog evolved. When I started I was eating plant based pretty much 90% of the time and spent a good six months (almost) vegan. Now I'm firmly back in my vegetarian roots, and finding this is the type of cooking I enjoy the most and I hope that shows in my recipes. By the way this broth is vegan, just in case my rambling is confusing. The recipe link is in my profile.
And just like that it's Monday again..... We have lots of fun projects on the agenda this week. Kicking off our Monday with some new client meetings today then we are going to be working on our first DIY projects for 2018.

Sunday dinner was based around @nomnompaleo ’s Asian inspired cauliflower-rice with chicken! #nomnom I honestly couldn’t believe how good this dish was! Sides of caramelized sweet potatoes and grilled assorted veggies and this meal was a #WINNER 🤗 #paleofood#allnatural

There’s just something so soothing about cooking a roast beef dinner, is it the smell? Is it the expectation of those crisp light Yorkshire Puddings or is it the deep glass of red wine you have with it? Comforting and soothing.

How was your Sunday Dinner?
The last of the eggs from @curgurrellfarmshop (and a rogue quail's egg from the pantry🙄) hardboiled and ready to be de-shelled, eaten with salad and sprinkled with "dukkah"...an Egyptian seasoning of ground roasted nuts, seeds & spices. I mixed in some celery salt too. #simplesnack
Food doesn’t get much better than this and apples really don’t fall far from trees.
These gorgeous dried Porcini or Ceps were picked by my son and his girlfriend in the Czech Republic with her family....it’s how they roll over there and I just wish we all did it more here.
I’m soaking these in hot water and then making a Steak, Red Wine and Porcini Pie in my Slow Cooker for tomorrow’s dinner. I’ll be using the liquid they’re soaking in as a base for the stew with the red wine.
