House party with the boys. Southern meal. All homemade. Kaeng luang(spicy sour curry) seasoned with homemade fresh tamarind juice, stir fry liang leaves with egg and crispy dried shrimp, sator beans stir fried with prawn, minced pork and seafood paste. Raw tamarind juice! Got raw #tamarind from my friend's farm and made this for my cooking. The southern Thais use it to season their curry for sourness. Other parts of #thailand are more familiar with using makam piak (ripen #sour tamarind) as they keep very long. Gonna try using raw tamarind juice tomorrow for my house party which I am making all the southern dishes!
A Michelin star chef once told me to try putting sliced banana on a low heat pan (with no oil or butter). He said the sugar in banana will come out and caramelize the banana making it sweet and the outside crisp. One of the techniques I learned from chef which has improved my dishes over the years.
Today I did caramelized banana on #pancake .. It was absolutely delicious.
