Which once was home to The Bank of Italy, revived and preserved beautifully, is now home to NoMad Hotel and Restaurant. The decor complements the grand architecture and I was over the moon to find the original bank vault. A narrow staircase leads to a chandelier lit fault, and old safety deposit boxes. I dig this shit, can you tell?! If you only gazed at the building and hotel, then you will surely miss out on an stunning dinner and a unique variety of cocktails. Easily one of the best known secret weapons! In our last two menus (Mexico and Peru) we have learnt so many interesting ways to use garlic, Sometime we try to get the raw flavour to run through and dish to create warmth and balance and sometime we boil it multiple times or salt it to round out the flavour and make it more approachable. Good quality organic garlic would have to be one of my favourite ingredients #atlasperu
