Sweet Summer Salad from our “2018 Chrisco Recipe Calendar”
1 cup sweet potato, diced and cooked
1 cup pumpkin, diced and cooked
1 avocado, cut into small pieces
1⁄2 cup bacon pieces, cooked
1⁄2 cup walnuts, crushed
1⁄2 cup fresh peaches, diced
180g haloumi, cut into 1cm-thick slices, grilled
1⁄4 cup balsamic vinegar
1⁄4 cup olive oil
Juice of 1 orange
1 tsp brown sugar
Sprinkle of black pepper
Mix vinaigrette ingredients well and set aside.
Combine all salad ingredients together and toss.
