Sweet potatoes, garbanzo beans and tomatoes come together pretty nicely in this low fat vegan stew. I added some cinnamon and served with brown rice and extra green beans. My only other advice...up the spices!

SO...coming to @youngsdairy (an active dairy farm) eating vegan isn't as hard as some would think. I even had a sweet treat with my team. 😮 I enjoyed a vegan vanilla shake and it was AMAZING!!! I planned ahead and brought it with me so I wouldn't feel left out when everyone was eating ice cream. What's even better than good nutrition and staying on track...no tummy aches!!!
Carnitas tacos! Recipe from @fedandfit, done in the instant pot in about an hour and a half! Paired with an easy coleslaw with toasted almonds & dried cranberries, it was so easy and yummy, and something the kids loved! Finding healthy food the kids will eat is always such a challenge, but this pork is always a hit no matter how I serve it! We use it in tacos, to make burrito bowls, in salads...the possibilities are virtually endless. I'm sure it would be great for breakfast too!
The first step of last night's dinner: @ottos_cassava_flour tortillas (recipe courtesy of @forkandbeans). We're a family of 5, so not small by any means, but not huge either. And my kids are only 10, 6 and 6, but I swear, they eat like teenage boys. All of them. Especially the 6 year old girl. 😉 So I have to make a lot of food. All the time. When I first began making tortillas, I rolled them out with the rolling pin, and cooked them one at a time in a frying pan. But that quickly became tedious because of how many I had to make. So I invested in a tortilla press and a cast iron griddle. Now I take the whole mess out to the grill (yay to not heating up the house more) and can make this huge batch of tortillas in a matter of minutes, because I can cram about 5 tortillas on the griddle at a time! Next stop, carnitas tacos!
STORE-BOUGHT VS HOMEMADE: Mini Chocolate Covered Donuts 🍩🍫💃🏻 As a kid I had access to a TON of junk food and sweets. We weren't concerned with quality ingredients or sugar-intake, and I loved allllll of the processed snacks 😬🤷🏻♀️ Nowadays I'm more conscious of what goes into my body. But I like to practice moderation over deprivation, especially when it comes to quality sweets, because this girl is not giving up her home-baked cookies! 🙅🏻

So....ive had no dairy for about 7 days. It was kind of a personal experiment to see if I could do it (if my coffee would be up to scratch LOL!!) and if I felt different. I was happy with the results, my tummy had settled down a bit, it wasn't perfect but it was better. But if that wasn't enough to convince me, the PAIN I'm experiencing at the moment after eating lunch out (coffee=milk, salad with a beetroot and cheese flan, fruit with yoghurt) 😩😩😩😩😩😩
