Yum yum vego Shepards pie. I always make it differently with whatever we have and it's an easy dinner meal in this house so often I will used tinned organic beans or lentils instead of soaking and cooking myself(which is preferred). Sometimes you just have to keep it simple and easy.
Paprika. Asafoetida (I can't eat garlic and onion at the moment). A little curry powder. Celery Carrot. Mushroom. Approx 1/4C water + veg stock paste (or liquid veg stock)
Jar of passata 2 tins of organic cannellini beans Frozen peas and corn Salt and pepper. - Normally I would use garlic and onion but I'm reacting to it this pregnancy. Often we use green beans and capsicum too instead of peas and corn, sometimes we use lentils instead, sometimes we use cumin as well for a Mexican slant. It's nice with sweet potato too. For vegan just use dairy free butter in the mash.

Where have I been all this time?! I have never tasted buckwheat pancakes before & wow they were so good! So this is what I ate for lunch at the Gokula Cafe in Watford- vegan buckwheat pancakes with roasted vegetables & vegan cheese, a simple salad with a tahini dressing & shredded salted beetroot! 😋😋 As mentioned in my earlier post, this cafe is a nonprofit community cafe so it could do with lots of support.
