Sweet potato fettuccine with silverbeet & poached chicken & coconut cream sauce.
There's a lot to consider when cooking a healthy meal, so a few things I'm focusing on with this dish are
* the healthiest ways to cook chicken is to poach it. Once cooked, Divide the amount of protein eaten in the day, based on 1g per kilogram of body weight ( approx. 60gm) up over the course of a 8 hour eating window. *eat more leafy green vegetables
* eat more colours
* eat more healthy fats
* eat healthy carbs
* minimise lectin foods and * no nightshades.
Poach the chicken breast in chicken broth with pepperberries & peppercorns
The sauce combines coconut cream, tahini paste, 🍋 juice, garlic, S&P.
Spiralise a sweet potato and sautée in coconut oil then set aside,
in the meantime chop up a few leaves of silverbeet and sauté.
Finely slice up the divided chicken breast and add to the pan with the sauce and reserved sweet potato to heat through.

Ok friends....I’m putting this out there for extra accountability! I’ve decided to try grain/dairy free for a week (trial) if I even make it through! I’m Italian let’s face it we are big big big cheese 🧀 eaters but I don’t think it agrees with me...I feel bloated all the time and very irritated in my tummy! So this is day 1 (like I said let’s see if I can make it through these 7 days) anyone feel that dairy/grains bloated or irritate you? My cooking mojo had been a bit absent lately. Still eating healthy stuff but not much experimenting or trying new things happening. Got this beautiful cookbook yesterday. I really struggled to stay on track, especially because of my ED and an anticipated boxing class. I ate a whole bag of grain free granola. All those nuts!!! Now I feel I lost gains trying to reach ketosis. I’m not giving up! I really want to live this lifestyle. I guess with any eating commitment..it takes work!! So frustrated. I’m extremely lethargic and fatigued. I want to get thru some of these symptoms before my next class. Focusing today on three ketogenic meals logging my foods for macros. And some bone broth. Where are my super human powers?
