This bowl contains pretty much everything I had left in my fridge (steamed broccoli, black rice, peas, roasted Brussels sprouts, and spicy chickpeas), so what I’ll have for dinner tonight remains a mystery 🤷🏼♀️
I have my last final at 4:30 today, so I might get some sushi take out to celebrate since I’m not going home until tomorrow🎉🍙🥢
My final today is for my sports nutrition class and is also the one I’ve been most stressed about, so I’m spending the next few hours cramming in whatever information I can 📚

To make this I combined 3 tbsp chia seeds with 1 cup almond milk, a few spoonfuls of pumpkin purée, and a generous dash of pumpkin pie spice into a jar and let it sit overnight 👌🏻
Topped it in the morning with @so_delicious coconut yogurt, fruit, and chocolate pb2 😋

Almost done rehabbing this foot (I hope). Just a week and some change left, and I can test the waters again. I’ll never again bellyache about having to take a rest day here and there. After more than four weeks off of running (minus two days), I’m just dying to put on my trail shoes and and pound dirt.

Recipe testing this morning, during snack time. The end result.... Protein packed #gingerbread#pancakes !!!! The babies thought they were cookies and who I am I to judge them!? What's the "hype with hemp"? 3 Tbsp of hemp have 15g of healthy fats and 10g of protein for growing children. Hemp hearts also have 70% more iron and 25% more omega 3&6.
Protein-packed Gingerbread pancakes
2 cups whole-wheat flour
1 cup chickpea flour
1/3 cup molasses
2.5 -3 cups hemp milk *see note
2 tsp vanilla
2-3 packets stevia
3 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
2 tsp ginger
2.5 tsp cinnamon
1/2 tsp cloves
2 Tbsp melted earth balance
2 flax eggs (2 tsp flax + 6 tsp hot water; let gel)
1. Mix dry with whisk.
2. Add wet and gradually stir in milk to desired consistency. Not too thick or it won't cook through.
3. Fry with earth balance and top with maple syrup *Note: I make my hemp milk with 1 part hemp seeds to 4 parts water. Blend on high. I do not drain the "milk" as the seeds are the best part. Made with @manitobaharvest
2 weeks of 2017 left. Only 14 days. What a year I have had! The Best 9 generator was ok but I thought I’d share 10 of my favorite moments 1) Finishing the @chevronhoustonmarathon 2) Making it to my new home Maui 3) The day I officially became my own boss. 4) Running with @stephie.fit 5) Having the confidence to chop of my hair 6) Hana relay 7) Running 20 miles with @alexb214 8) Running Maui Marathon guiding an @achillesnyc athlete 9) My longest bike ride alongside my sole sister @maliacrouse 10) Running with @staygreatmygirl. I do not know how I deserved these moments and so much more but this year was nothing but a blessing. I can not wait to see what 2018 has in store.
Vegan Cobb salad (recipe below 🤗) - made better than the original with @violife_foods blue cheese and yuba bacon...because if I'm going to post a salad it has to be decadent 😋
1 large bunch kale, washed and massaged with olive oil
1 batch yuba bacon (recipe in any of my yuba posts!)
1 block @violife_foods blue cheese
1 large tomato, chopped
1 maitake mushroom, brined and seared in cast iron pan, then roasted in oven until tender (optional)
1/3 cup miso
1/3 cup tahini
Juice of 1 lemon
1/2+ cups water .
To make: blend dressing ingredients (leftovers keep well for a few days)
Mix dressing into kale; let sit for a few minutes before tossing other ingredients on top and serving. Enjoy!

5. QC Beast top 20 finish #ocrtopten . .
I’ve had a few results in terms of placement that were higher than this that didn’t even make this list. But this race meant alot to me. .
For years, I have been struggling with longer distances. I’ve managed to complete multiple Beasts, and even an Ultra Beast. I’m proud of gutting out those races to get to the finish line, but I wanted more. I wanted to get through a race without my body betraying me. I hated starting out strong until I hit a wall and then having to watch everyone pass me. .
It felt like no matter what I did, I would just end up in the same place. The harder I tried, and the more time and effort I put into training, the more disappointing it was when it all fell apart mid-race. Everyone including myself just figured I was a short distance specialist. .
Going into the race I had no idea how I would do, but the good news was I felt zero pressure for a good result. I ran the most conservative race I’ve ever run. I tried to minimize every single impact. I would lower myself carefully after every wall, avoid dynamic movements when ascending the mountain, and keep my pace slow even when I felt I had more to give. .
And somehow it worked! I managed to last for 4 hours and __ feet of elevation without my body blowing up on me. I actually held my position or maybe even gained a spot throughout the second half of the race. It was so fun! I get why some people prefer long distances and the slow grind. Not just a short distance specialist anymore!!!! Hopefully I can keep it up. .
Never doubt consistent sustained training. .
I love a good excuse to dress fun! I think I nailed my Christmas light run outfit this year using leggings under a @skirtsports gym girl ultra!

Marathon/Everest Training - Day 105

Do you do oil pulling? In the newest video Dr. Michael Greger discusses the topic Oil pulling. If you don’t know what Oil pulling is, you basically swish oil in your mouth for 20 minutes. Its said to clean, detoxify teeth and to whiten our teeth. But does it really work? Researchers decided to put oil pulling vs. chlorhexidine to the test. And they came to the conclusion that oil just worked as well as chlorhexidine. Crazy right? Well the researchers were also kind enough to do the same thing with water. And the results? It worked just as good as the other two! Swishing with oil or swishing with water had the same effect. Oil may be cheaper and safer than chlorhexidine, but it cannot hold a candle to water in every way. This year I did my first half marathon, first trail run, first open water swim, first triathlon and first 70.3 ✌🏻️ 1 trail run, 2 fun runs, 2 OWS, 4 triathlons, 6 half marathons, 1 amazing 70.3 🤘🏻😎 ive gained 🔥 in my belly to want to push harder, be stronger, go faster and I've learnt food is not the enemy its fuel. I've gained a hell of a lot of self love and I'm ready for even more in 2018 💖
I remember when a 5K was a huge accomplishment for me and now 5 miles is my short run. I can't believe the progress. Im still slow but even my pace has improved a little. #traininghard#runners
