A celebration of fine ciders from New York State and beyond...! As part of NYC Cider Week, we are *THRILLED* to present to you, the drinking masses, an exciting selection of rare and wonderful ciders! Der scharfe Maxx with @edenciders Dry and EZ Orchards, Poire
This washed rind cheese is complex, savory, fruity and downright funky. The cheese starts with a preserved nectarine, roasted squash, dried herbal thing which quickly gives way to meaty, shiitake and barnyard. Funky and wild but with a pedigree and style.
Eden Dry is a very unique cider that is made from concentrated heirlooms apples that are barrel aged for almost a year before it is blended with Kingston Black. The resulting cider is very full bodied and loaded with ripe to overripe tropical fruit, dried peaches, and log cabin. This cider can easily match the intensity of the washed rind while allowing the subtle fruits of the cheese to really shine. At 9.5% alcohol it is higher in alcohol than everything else but that only helps it match the high butter fats and chew of the cheese.
EZ Orchard, Poire is actually a perry which means that is it made from Forelle, Comice and Bosc pears. This slightly sweet cider brings all these melon, celery and tarragon flavors to the glass, which is a real departure from our cider norms. Pears contain sorbitol which makes the cider natural sweet and full of body. The honeyed mid-palate of ripe fruits and sugar with a slight buttery finish is the perfect partner to this cheese. The golden warm ripe of the cider brings forward the pineapple and melons of the cheese.

Old Adventures of the Newtown Pippin: Exploring History, Terroir, and Biodiversity through Cider
The Newtown Pippin originated as a chance seedling on the banks of Newtown Creek, which is now the dividing line between Brooklyn and Queens. This popular apple variety had a stellar international reputation in America's early days and became a commercially important cider apple across the nation, from the eastern seaboard to the Wild West. Join us to explore the storied history and geography of the Newtown Pippin as we taste a range of apples and ciders.
Daniel Pucci, former Cider Director of Wassail in Manhattan, and cider expert and author Darlene Hayes will share their research on the history, terroir, and varietal characteristics of the Newtown Pippin gathered from the four most important and historic regions for Newtown Pippin cultivation – northern California, the Pacific Northwest, Virginia, and New York/New England. We will taste apples from each region in order to experience flavor differences in the fruit, then also try ciders made with fruit from the same orchard. Terroir isn’t discussed as often when talking about cider (as with wine), but Dan and Darlene will share some preliminary analyses that may be helpful in bringing some understanding to the role of soil, topography, and climate in taking apples from orchard to glass.

A recap on the weekend at B&T. Our first cider press session for 2017 kicked off at 5am on Saturday. Lots of apples and lots of juice pressed on our cobbled together rebuilt gear. Thanks to Mr. Clean @metalheaddad , Big Red @mr.drew92 and Leo @beersondraft for throwing haymakers as part of the press team, Mark @dimont99 for heckling us at the end and keeping us pushing hard, Saara and Matt @wearethemonsters for keeping the tap room libations flowing, and Nellie @spice_shanty for her pop-up contribution of super kick-ass sophisticado donut like pastries to pair with our 2016 pressed dry cider - also tapped on Saturday.
