sunday evening....winding up the gears to start a new week tomorrow. still feeling a bit overwhelmed by the busy-ness of my schedule, but focusing on creating space in my daily tasks & taking life one day at a time. #patience 🙏 also, getting back into my workout routine after ~3 weeks off (minor injury, illness) and feeling so good! so that makes me excited for the week ahead 😊

I used the recipe from @ohsheglows, but eliminated the chocolate chips because I didn't have any. For this week's meal plan, 1 serving equals two muffin tops.
Portions: 1 yellow, 1 purple, 3 teaspoons

Product spotlight! I tried @miraclenoodle’s spaghetti marinara and it was so satisfying! The portion on my plate has just 7 grams of carbs! I got mine in the natural choices isle at Save On. Scroll right for ingredients and nutrition info.
I added salt to taste, and half of a @the_tofurky_company Italian style tofu sausage.

First home-cooked meal I've made in at least a week:^) went with some comfort food since I've physically and mentally been feeling under the weather all week. I adapted a recipe i found in my @ohsheglows cook book. This "green detox soup" consists of:
Red/yellow onion, garlic, broccoli, zucchini, carrots, cumin, turmeric, ginger, a dash of cinnamon, veggie broth, s&p, lemon juice, and a mix of greens (kale, spinach, and chard)
Recipe is simple: sauté onion and garlic in olive oil, add veggies and sauté about 5 min til soft, add the spices and sauté about 2 minutes, add veggie broth and bring to boil, then reduce to low heat and let it simmer 10-20 min. Add greens and a squeeze of lemon juice and cook about 2-3 more min.
Is it just me or does anyone else love cutting vegetables? Like i find it almost therapeutic. Just what i needed tonight 😌
