Ihr dürft euch auf ein leichtes, wenig fettiges Menü freuen. Als Entrée gibt es einen Orangen-Grapefruit Fenchel Salat mit karamellisierten Walnüssen und einem leichten süß-sauren Dressing. Spicy chickpea “tuna” sushi😍. Thanks @naturally_nina_ for the idea to use chickpea “tuna” in my homemade sushi. For my spicy version, I simply added a homemade spicy tofu based mayo to lightly mashed drained and rinsed chickpeas for a fun filling. I cooked the sushi rice in my @lotusfoods rice cooker and seasoned it with rice vinegar and coconut sugar. I added carrot and avocado along with the spicy chickpea filling before rolling. I then topped the sliced sushi pieces with extra spicy mayo and @citriburst.pearls finger limes (aka vegan caviar which to me taste like lime crossed with Thai basil—yeah wrap your head around that!). Dip in coconut aminos for a delicious, healthy dinner that’s not only fun to eat but fun to make👍🏻! Recipe for the mayo will be below! Tag a sushi loving friend! Enjoy!
1/2 block tofu, removed from liquid
1 tbsp lemon juice
1 tbsp apple cider vinegar
1/2 tsp maple syrup
1/4 tsp salt
1/2 tsp Dijon mustard
1 tbsp water
2-3 tbsp sriracha, or more as desired for spiciness
Blend all ingredients in a high speed blender until super smooth and creamy.
What's @plantphilosophy's plant philosophy?
Probably something like roasted Brussels sprouts, shelled edamame, cucumber, crispy baked teriyaki tofu, and lots of spinach, topped with peanut sauce and sesame seeds.

A banana and some pumpkin purée can go a long delicious way, as @joysofjade shows us here. Get the warmth in there with some cinnamon and ginger, vanilla extract and some maple syrup for sweetness, and you have yourselves a simple and tasty pumpkin porridge. Top with some nuts and/or pomegranate seeds. A perfect breakfast, snack, or dessert for this time of year.

Winter squash and pea marinara with brown rice for lunch! 😍😋 This was delicious, especially with cumin and coriander added. 😱 I prefer to roast the squash first but since we don’t have an oven here, I cooked it as is. It was still tasty but not as good as the roasted one.
To make this, you need: 500g winter squash (ours was shredded) • a handful of sliced mushrooms • small can of peas • can of diced tomatoes • 250ml / 1 cup passata (or you can use half as much tomato paste and a bit of water) • bay leaf • 1 teaspoon each: ground coriander, ground cumin, dried oregano, dried basil • 1/4 teaspoon black pepper (or more to taste) • half a lemon juiced.
Heat a half cup of water, sliced mushrooms, all herbs and seasonings in a pot on high heat. Once the mushrooms shrink down, add the squash, diced tomatoes, and passata. Bring to a boil and then lower the heat slightly to keep it simmering (not boiling too crazy!). Let it simmer (so it reduces a bit) for ~15 minutes and stir occasionally so it doesn’t stick. Stir in the peas and the lemon juice right at the end. This makes enough marinara for four big servings.
I’ve been adding fresh lemon juice to all my savoury dishes lately. It’s so good! Feel free to change up the seasonings and add any other veggies you like.
And now we are eating the leftover sauce with some spaghetti and Wasa crackers for our dinner just before we attempt an early night. 😴 Life is good.

December is such an exciting month but can become a bit overwhelming with social engagements and preparation for the holidays. It's nice to take a little breather with a slice of cake and a cup of tea even if it is just for 5-10 minutes. .
I have always loved baking so I get excited when I discover a healthier, skin friendly way of making my pre-vegan lifestyle favorites. This is a slice of chocolate chip banana bread which I am enjoying lately. .
I really believe that finding ways to make the foods you choose to eat enjoyable and satisfying are important part of the healing journey so you don't feel restricted or deprived. There is enough stress in your life dealing with your skin, you don't need additional stress from craving foods that you are choosing not to eat😊
4 ripe bananas
1 cup buckwheat flour (I make my own by putting buckwheat groats in a blender)
1 cup almond flour
2 tsp cinnamon
1/2 tsp ground cloves
1/4 tsp ground ginger
2 tsp baking soda
1/2 tsp pink salt
1 tsp vanilla flavoring
1/4 cup maple syrup
1 tbsp apple cider vinegar
1/3 cup of vegan chocolate chips (I use Lily's vegan dark chocolate baking chips)
Heat the oven to 350 F degrees. Line a 9x5 loaf pan with parchment paper. Mix all the ingredients except for the chocolate chips in a large bowl. Mix in the chocolate chips at the end with a spatula or wooden spoon then pour the batter in the pan. Bake for 1 hour or until a toothpick comes out clean. I usually set the timer for 1 hour and check the status. Bake for a bit more if necessary. Let it cool in a pan for 15 minutes then transfer to a rack.
Red Curry 🔸1C yellow split peas soaked
🔸onion, 2clove garlic
🔸vegetable broth 4C
🔸coconut milk 3/4C
🔸vegan friendly red curry paste 2TB
🔸maple syrup 2TB, PButter 2TB
🔸brown rice vermicelli 1pkt
🔸2carrots,1red capsicum,4mushrooms, handful or coriander .
Sautee onion and garlic in water until translucent, add curry paste until fragrant, add broth and coconut milk bring to boil, add Veges, noodles simmer until cooked! 😋
Brought this salad to a holiday party last night! I used the new salad dressing from @traderjoes that use cold pressed juice. This particular one is their Almond Butter Turmeric dressing. I mixed it in before leaving the house...wish I would’ve brought along extra as the salad really absorbed it. Would’ve been good to freshen it up before eating. Still thought it was tasty though! Also turned out these purple potatoes were actually sweet potatoes!? What!? Still good but was looking for something more savory. Ah well! Fun to have more color! 💜

absolutely infinitely filled with joy after the weekend i just had. on friday night i had a late night baking bananza and laughs my ass off with my roommates; on saturday morning we had the cutest “christmas morning” secret santa exchange in our pjs with coffee and music and candles; then i had a graduation party with ALL of my amazing college friends under one roof, keg was flowing, friends were loving, danced my god damn ass off; today i went for a long walk after work with two of the most interesting and important women i have ever known; then we made a ton of rice, chili, and salad for dinner followed by tea, and friday night’s cookies & muffins 😌. i can not explain how absolutely incredibly blessed i feel. i am so present right now 💙🧡🎓 i LOVE this school and i LOVE MY FRIENDS 😭😭😭ps excited for tomorrow morning’s oatmeal + @frommybowl granola 🌿💛🍓 #vegan#govegan

1 cup Mylk
1/2 cup Dates
1 tsp Vanilla extract
1 heaped tbsp #Cacao powder
3 tbsp #Chia seeds
Mix up in a blender until well combined and chia seeds are broken down
Stir in 2 tbsp choc chips & shredded coconut if you wish
Pour into a jar or bowl and chill for 30 mins
Eat as is or top with fruit 🍓
