They say that Uni is an acquired taste. But I fell in love with Uni the first time I tried it. I keep wanting more and I can’t stop.

Uni’s taste varies region to region. Each region offers distinct taste when it comes to Uni. It’s Sweet, creamy and tastes like ocean. But Hokkaido Uni is the smoothest IMHO. I can eat this Uni all day, every day.

Wow. Minamishima is something else. What an amazing omakase with some unbelievable specials on offer! My favourite dish was the one I didn't order straight away - it was described as scampi with various toppings, and I didn't think much of it until I saw it plated up - and then I immediately had to order it straight away!!! Look at that striking blue scampi caviar. That radish and bottarga. And yes, a bright burst of citrus from the finger limes! This fish is clean and watery with very delicate, sweet aroma and taste. It’s flesh is almost translucent and light. This Japanese snapper is one of a kind, luxury fish. This rare delicacy is not only an elite nigiri item but a quintessential Japanese nigiri. 
And, no this is not anything like US red snapper/sea bream. That fish is basically glorified tilapia.

肉厚膏肥的越前蟹,由明治時代起已是獻給日本皇室享用的貢品蟹,日本人以「蟹の王樣」形容。越前蟹不能人工飼養,只能靠捕撈而來,日本政府為保護產量,只限冬季即11月至3月捕捉,不少人特意前往福井,一品越前蟹的美味。

香箱蟹在日本也是享負盛名的,其精髓在於滿肚的蟹子及鮮甜的蟹膏。日本人會將蟹子、蟹膏及蟹肉放在蟹蓋上吃,如同寶藏箱子一樣,香箱蟹因此而得名。香箱蟹只可於每年11月至1月期間捕捉,由於解禁期短,更顯珍貴。
