Chopped kuruma ebi with whipped summer eggplant at Tsukuta, Karatsu. This flavor was not Japanese - more Levantine, reflecting the use of eggplant (in other words, this tsumami was some sort of baba ganoush riff). The mixture was not bitter or acrid as baba ganoush can be, but light, rich and fluffy. Luxurious? Not really. But certainly uniquely delicious.

Shuko's 🍣 kaiseki tasting with a perfectly curated wine and sake pairing was the best omakase I've had in a while. Pete Wells was right, it was "a string of mesmerizing little plates followed by a sushi recital". Thanks chef @laujimmy6 for the amazing experience and the cool hip hop playlist.
