Today’s gastronomic hero is activated carbon, an ingredient that’s slowly finding its way into domestic kitchen cupboards.
But apart from being the gas police, here’s what makes this bonny meal a champion: it’s a towering protein fountain👇🏻
6 chickpea falafels : 14 grams
1 cup of cooked quinoa : 9 grams
1 bundle of spinach : 3 grams
That’s 26 grams of protein, the same amount you get from a plate of ribeye steak. And the coolest thing? This time, no one had to die. 😜

Meat inspection is a mandatory service ! Meat Inspectors identify meat as: Healthy (no disease), Sound (clean, sanitary), Wholesome (not adulterated) & Properly Labeled (it is what it says it is). Functions of meat inspection :
•Detection & destruction of diseased meat &/or contaminated meat.
•Assurance of clean & sanitary handling & preparation
•Minimization of microbiological contamination of meat.
•Prevention of adulteration (the addition of harmful substances or products considered improper in certain specified quantities) & the presence of chemical or drug residues.
•Prevention of false labeling.
•Application of inspection insignia.
Inspection after slaughter of head, viscera & carcass. Inspection proceeds simultaneously with slaughter & dressing.
Causes for condemnation:
•Whole carcass: tuberculosis (generalized lesions), hog cholera, pneumonia, abscesses, caseous lymphadenitis, epithelioma (involvement of parotid lymph if ocular);
•Parts of carcass: abscesses, arthritis, bruises, contamination on the kill floor.
•Procedures for beef — examine head: SPAM lymph nodes, masseters, tongue; viscera: lungs, liver, heart, paunch, intestines, spleen; carcass: linings of thoracic, abdominal & pelvic cavities, outside surfaces, palpate kidneys, AQL (AQL : Acceptable Quality Level, statistical sampling plan to determine the cleanliness of all carcasses processed.) Federal inspection requires MANY steps of paperwork to go along with all of these duties. It’s not just simply that the inspector does their duties & there is nobody there to check their work. Paperwork is how FSIS ensures the inspector is doing their job & report that the plant is meeting the standards set by FSIS. They have to sign off on forms designed for each duty, which are then submitted & so on. Inspection is done at set hours during the day & all slaughter activities must be done while the inspector(s) are present. Animals slaughtered not under inspection are automatically assumed to be “diseased & unsound” in the eyes of the FSIS even if the meat is perfectly fine to consume & poses no health risks. So yes it actually is "profitable" to inspect each CARCASS.
I don't understand how people in the US, and particularly our political leadership, continue to deny climate change. On each trip to the Valley over the last several years there are more and more dead trees, the result of drought and beetles. The trees are a clearly visible sign that our ecosystems are changing, a sign that anyone just has to look around and notice. @yosemitenps has been actively cutting down dead trees as a safety concern and yet more and more of the forest looks dead every time you look down from the walls. I hope it's not just an oak forest in a few more years...
This depresses me. But it's also why I offset my travel through @mossy.earth and generally eat vegetarian/vegan And why I just put solar on my home. In the absence of political leadership we can still try to do things as individuals.

I really went for it on this meal hoping that the fam would like it. Drum roll please...... hubby liked it! Little one said it was too spicy, but ate half. I did accidentally dump the cayenne pepper into the meatball mixture. Whoops. Cayenne is so good for you that it even combats Streptococcus so it's all good. 👍

Thanks so much Torquay! This morning we did a vigil at a cow slaughterhouse followed by some vegan outreach and finished the day with a lovely dinner and an intimate speech at a fantastic vegan coffeshop. An epic way to end an amazing trip. I've learnt and seen so much in last two weeks. Marching through the London streets with 5000 passionate vegans and then flying to Israel for the biggest march ever has lit a fire of hope inside of me. I'm so overwhelmed with how much this movement is growing I feel like crying. Thank you to all those compassionate courageous vegans and activists, please stay strong and NEVER lose hope. Taco 🌮 Tuesday!!!: So this is the aftermath of my Taco Tuesday last night. I have seen many pictures of "pulled pork" jackfruit tacos all over, so I thought 💭 hmmm why not? they all look great! So, I picked up a can of Jackfruit at the grocery store. Got home and guess what??!! Supposedly you can only use young jackfruit that's in brine or water. I had ripe jackfruit in syrup 😔🤦♀️.... I searched to see how I could make it work and stumbled upon onegreenplanet's carnitas recipe that uses ripe Jackfruit! So all you vegans/ vegetarians out there don't loose hope if you picked up the wrong jackfruit, you can make it work!😀😊 Not even close to "pulled pork" look or texture but still great flavor! SN: Slice the fruit in medium size chunks, don't try to "shred" or "pull" apart. Tried it and it became a very stringy hair-like, overripe mango texture 🤢👎. I added some blackbeans for protein, topped it with a mango salsa using red bell peppers & cilantro, vegan sour cream and cheese.
