Sometimes you just need some orange tofu in your life ☺️ Tim and I have trying out new recipes and experimenting with food a lot since I've been here and, although it's not the healthiest, this is defs one of our favorites so far 😍thanks @thesarahsullivan for the bomb recipe! Exactly like the real thing!
ONE PAN ORANGE CHICKEN STYLE TOFU
3 green onions chopped
2 cloves garlic minced
2-12oz containers extra firm tofu drained and cubed 1inch or smaller
½ C Soy sauce divided in half (1/4C each)
2 TBS sesame oil
4TBS Coconut oil
½ C water
4TBS Orange Juice
2 TBS Lime juice
½ C maple syrup (or other sweetener such as brown sugar)
¼ tsp Chili flakes
¼ tsp ground ginger
2 Cans mandarin oranges drained (RESERVE JUICE!) 2 TBS cornstarch plus 2TBS water for cornstarch slurry
Zest of ½ orange
Cooked brown rice
In a lidded container or gallon size ziplock, Add tofu, ¼ C Soy Sauce and sesame oil, marinate for 1-2 hours, occasionally tossing to coat evenly.
Heat coconut oil over medium heat in skillet and add tofu. Sauté until evenly browned. Add green onions and garlic; continue cooking until garlic and onion are tender, about 3 minutes. Add water, orange juice, lime juice, maple syrup, chili flakes, ginger and reserved mandarin orange juice and bring to boil. Reduce heat and cook uncovered until liquid has reduced about half. Add half of the cornstarch slurry, stirring constantly and bring back to a boil. Add slurry a bit at a time until desired sauce thickness. Remember the sauce thickens more as it cools. Add orange zest while hot and toss. Serve over cooked brown rice and top with mandarin oranges and any fresh veggies as desired, (I used cucumber and green pepper).

This recipe is particularly crafted for feminine health, the ingredients in the sauce alone helps reduce inflammation, and balances both your ph levels and good vaginal flora. I like to prepare this dish around the full moon because that's when my uterus is crazy busy, as should most females be if they've aligned their cycles with the moon phases as our ancestors did.
A few tips during this phase give your body a break and don't combine grains with your proteins that's a whole heck of a lot of work for your already fatigued body to handle. Digesting takes a lot of energy!
Also I used tofu in this recipe, if you're peri-menopausal or in menopause stay away from soy based products, jackfruit is a good alternative, or mushrooms. Just be cautious of the way soy products mess with your hormones.

Finally visited @riceboxed tonight and was very pleasantly surprised! Hubs ordered online, pick-up was easy (the line around the block has finally dissipated), and the staff was super friendly and very knowledgeable about the food. Bummed they didn't do shrimp as a protein for the main dishes but went with #orangetofu and loved it. The sauce was fresher, cleaner, and spicier than I've had elsewhere and the portion was more than generous (lunch tomorrow is taken care of). Tofu is such a versatile ingredient. In this recipe I marinated it in a sauce that had a touch of orange juice in with chopped asparagus and then roasted it for a while. I woke up at 530am this morning and did the Cardio Power and Resistance video from the Insanity program. Then, after work today I spent an hour and a half at the gym for bicep and triceps. I'll be completely honest, I feel like such a beast! I have fueled myself right, kicked my own ass with my workouts today and it truly makes me feel so accomplished!
I am SO grateful that despite not wanting to wake up this morning, I fucking did it. I got myself out of bed, pumped myself up through positive self talk, reminding myself of my goals and I got that shit done. I want every day to be like this! I have proven to myself that I CAN have amazing days where I am focused and dedicated like today, so now there is no excuse to not be.
What can I say? Life is damn good!
Cooking while travelling is all about substitution and innovation. I had to use Fejø apple cider vinegar instead of rice wine vinegar for this "orange tofu" dish bc we couldn't find any in the store 😂 Turned out a bit different, but still delicious 😍🍎
Orange tofu with ginger cauliflower rice and garlic pepper air fried snap peas. Omg so good.
I cut 1/2 a package of Trader Joe's tofu into cubes (6sp). I cooked them for a few minutes on each side until a golden brown (in approx 2 tsp coconut oil). The orange sauce is the juice of 1 big navel orange (approx 1/2 cup), 1 tsp ginger, 1 minced clove of garlic, 1 tbs reduced sodium soy sauce, 2 tbs no sugar maple syrup and 1 tbs mirin mixed together. When the tofu is a golden color add in the sauce. There will be a lot of it, but just let it keep on cooking until it basically evaporates and leaves an awesome orange flavored coating on the tofu. You can check my Insta stories to see what I mean. The sauce is approx 5sp.
For the cauliflower rice, I just sautéed about 1 cup Trader Joe's frozen cauliflower rice in 1 tsp of ginger paste and approx 1/2 clove of garlic.
For the snap peas I sprayed them with a sesame oil spray and added in Flavorgod garlic seasoning and crushed red pepper. I placed in my air fryer for approx 10 min.
