Bento Pad Thai!
I'm working from home today and the suckiest thing is trying to find fast, healthy plantbased food when I'm not at @greenleaforganics 😫.
I made myself a challenge, to see how fast I could make my lunch...6.39 minutes!!! Including the sauce!
No joke, don't believe me? I've done a screen shot of the timer as the last pic.
Recipe for 6 minute Pad Thai...
✔️1/2 pack konjac noodles, I like the Slendier brand ✔️1/2 cup chopped purple cabbage ✔️1 carrot grated ✔️100gm tofu cubed, @tonzufoodforlife is the best ✔️2 Tbs red onion, chopped ✔️1 Tbs cashews ✔️1 Tbs chipped coriander ✔️2 Tbs peas.
For the satay...✔️1 Tbs @ceresorganics Almond butter ✔️1/2 cup coconut milk ✔️1 Tbs tamari ✔️2 tsp sesame oil ✔️1/2 tsp maple ✔️sprinkle of chili flakes.
1️⃣throw all the noodle ingredients together 2️⃣mix the sauce ingredients together, use a protein shake shaker if you don't have a blender at work 3️⃣eeeeeeaaaaaat!😋🤤
Hello my clean eating IG fam 👋🏻! I've been MIA on my page as of lately, due to my mom visiting from the states. Pad Thai!! Or my attempt at it... I threw in lots of carrot ribbons, zucchini noodles, and napa cabbage for crunch. I threw in some steamed broccoli. I also sautéed some tofu in the sauce I made. It's so so good with lots of cilantro, avocado, and fresh lime.
