My husband took me to see Beauty and the Beast this week (#helovesme ), and this was my movie snack: Caramelized Coconut Chips and Dried Currants. The coconut chips are super easy to make. Just pre-heat a dry skillet over medium-high heat. Add thick-cut, unsweetened coconut flakes. Dust with some cinnamon and sea salt. Toss to coat and to cook evenly. They cook fast, so get them out of the pan as soon as they start to brown. Let them cool, add your favorite dried fruit, and pack in your purse for the movies. Truth Talk: I didn't go to the movies early in my paleo days when the smell of the popcorn and the abundant candy and soda would have been painfully tempting. At this point on my healing journey, the concession stand doesn't even seem like food to me, and I don't want it. BUT I do want a treat at the movies. It varies what I bring. Sometimes, I'll pack @paleo_angel Power Balls. Sometimes I'll pack some @heavenlyorganics Mint Patties (#aipreintro ). And I always buy a bottle of water at the theater to appease the staff. 🍯🍫SO MUCH YES. 😍😍 👉Low-carb salted caramel protein bark topped with dark chocolate chips, coconut and pecans. All I did was combine 2 scoops of quest salted caramel protein powder(best protein ever) along with 1 tbsp melted coconut oil, 1 tbsp heavy cream, 2 tbsp full-fat sour cream, 2 tbsp egg whites, unsweetened vanilla almond milk until it reached a smoother consistency(about 5 tbsp) a pinch of salt and 1/2 tsp vanilla extract. Spread on a tray lined with parchment, sprinkle on toppings and freeze for 2 hours(or 24 hours is best). Break into pieces and enjoy straight from the freezer! 👏👉tip: use parchment to hold the piece you are eating and a plate previously chilled in the freezer to set it on to avoid melting! ✅

Been reading all about gelatin and collagen helping with skin, hair, nails, and gut health. So inspired by @paleostarblog (this Paleo/LCHF homesteader living and cooking in Columbia has such a soothing voice and peaceful videos), I made one of her three gelatin-filled desserts posted on her latest YouTube video: a chocolate mousse. Her recipe doesn't have sweetener, so I used a bit of #swervesweetie and @sweetleafstevia drops, topping mine with salt and a piece of 99% @tchochocolate ⭐️ SO good! And I also added half an avocado in the blender for added healthy fats. If you're looking to mix things up for breakfast, give this Hummus and Veggie breakfast bowl a try!
Heat oil in a large sauce pan over medium-high heat. Add asparagus and sauté for 4-5mins or until tender. Remove from heat and set aside. In a large mixing bowl, combine 2 tbsp avocado oil, 2 tbsp lemon juice, 2 tsp dijon mustard, 1 garlic clove and some salt and pepper. Add kale and mix together till leaves are dark and softened. Add 3 cups of shredded uncooked Brussel sprouts, 1.5 cups of cooked quinoa, and cooked asparagus. Toss together to combine. Now to assemble the bowls, smear a spoonful of #kinglandau hummus along the side of your bowl, then add a portion of the kale salad. Top with avocado, egg and your desired garnishes. 🌱
