Good evening. Tonight’s dinner is wild caught scallops pan seared in in a little butter, olive oil, fresh garlic, white wine and lemon juice with half a sweet potato and green beans sautéed in garlic and olive oil. I shared it with a friend and so glad she loved it. Hope you have a great night!
For me, today is one of those lazy, stay in your pjs until noon kind of days. Instead of trying to force myself to be productive by chugging a giant cup of coffee I opted for a warming cacao elixir instead💃🏼 Recipe 👇🏼
1 cup hot cashew milk
2 tbsp cacao powder
1 tsp @sunpotion tocos
1/2 tsp ashwagandha
1 tbsp coconut butter
1 tbsp @bulletproof brain octane oil
Lots of cinnamon

A simple pan sear of the shrimp allowed the stuffing of Chimichurri to escape while cooking, infusing the shrimp in tons of flavor🤗
💥1 cup - spinach, tightly packed
💥1 bunch - fresh parsley
💥1/2 cup - Chopped red onion
💥3-8 - garlic cloves

💥1/2 tsp. - #Flavorgod Taco Tuesday
💥1/4 cup - red wine vinegar
💥1/2 cup - olive oil
In a small food processor, combine spinach, parsley, onion, garlic, #flavorgod S&P, #flavorgod Taco Tuesday, and vinegar. Pulse a few times and scrape down sides. With blending, drizzle 1/2 cup olive oil into mixture and process until almost smooth.

Did a little extra prep last night to have some more veggie variety to add to my meals this week! These maple roasted sweet potatoes and brussel sprouts are one of my favorites- for meal prep or holiday parties 🙏🏼🙏🏼 So so simple to throw together. Recipe below ••
*feel free to double the recipe for a larger group
2 cups Brussels sprouts, halved
1 large sweet potato, thinly sliced
1/3 cup pecans
1 tbsp Avocado oil
1.5 tbsp Grass fed butter
1 tbsp Maple syrup
1/2 tsp Cinnamon
1. Preheat oven to 350. Line a baking sheet with parchment paper
2. Toss veggies in avocado oil and sea salt until evenly coated. Spread evenly on tray. Bake for 15 minutes.
3. Remove and stir veggies. Bake for another 10 minutes.
4. While baking, melt butter and mix with maple syrup and cinnamon.
5. Remove tray again and pour maple + butter mixture over the veggies. ** leave a tiny bit aside for the pecans. Stir and place back in oven for 5-10 minutes
6. Heat a skillet, then add pecans with remaining maple mixture. Let toast for about 3 minutes, stirring frequently so they don’t burn.

Gingerbread cookies with a side of snow!🎄 Celebrating the end of the semester the only way I know how - paleo, vegan, grain free, gluten-free, refined sugar free GINGERBREAD COOKIES! Seriously simple ingredients that make me feel good about eating these cookies👉🏼 almond flour, tapioca starch, coconut sugar, baking powder, cinnamon, ginger, nutmeg, coconut oil, and blackstrap molasses and that’s it my friends!! These turned out so gooey and soft and the sprinkle of coconut shreds on top make it 💯 Winter has officially begun!

Last night we had a BALL! Well, balls, plural.
Protein balls to be exact. But they tasted like Christmas 🎄treats, so they were magically and healthfully delicious. We had Chocolate peppermint balls, orange cake balls, almond joy fat bombs, and gingerbread balls.
All of ‘em were 🚫🍞 #glutenfree and 🐇🌱#vegan , and the cake balls & fat bombs (not pictured) were #paleo and #keto friendly too- all our ball bases covered!
We also just had a blast making food together and making ball jokes all night. 🤪🤗 Since the Gingerbread balls were the clear winner, I’ll post the recipe in the comments cause it’s TOTALLY worth making- you definitely want those balls in and around your mouth. 😜

It’s Friday!!💚 Slept in an extra hour this morning, had a great run outside, and munched on this delicious green smoothie bowl! 🌱🎄🙌🏻 Today’s blend made 2 servings:
-1 frozen banana
-1 cup frozen blueberries
-1 cup frozen cranberries -1 small head (bunch? Not sure what to call it) of kale
-2 scoops @vega_team vanilla protein -1 Tbsp ground flax
-1 tsp maca powder
-1 ½ cup unsweetened almond milk
So thick, so creamy, so delicious! Hope you all have a wonderful start to the weekend!!
It's sort of a sacrilege to call this pizza, so let's just call it cauliflower crust with toppings on it. I'm related to Italians, and wouldn't want to offend any of them. This is good, though! They should try some. Topped with shredded chicken, raw thinly sliced beets, olives, artichoke, hearts of palm, pepperoncini, arugula, and a creamy pesto.
Cauliflower pizza crust
4 c cooked riced cauliflower (see recipe Dec 5th)
1/4 c coconut flour
1/2 c almond flour
1/4 c tapioca starch (omit for keto)
1 large egg
1/4 tsp baking soda
1 TB nutritional yeast
1/2 tsp salt
1/4 tsp each dried oregano, basil, fennel seed
Gently mix ingredients together, then form into four personalized sized pizza crust discs on a pizza stone or baking sheet. Bake at 390 for 10-15 min, until it gets crusty and golden. Add toppings and bake until they're done 😀

Dinner from last night (zucchini noodles, spinach, mushrooms, onion, shrimp, balsamic, Parmesan and WINE)... HOW HAVE I NEVER HAD A ZOODLE?!?! Zucchini noodles are now my life so prepare to see them in every video 😂 Not pictured is the dessert we had which was sautéed pears with a bit of honey drizzle 😭😭😭 I haven’t had fruit in over a month so I’m definitely geeked. Panetone Fit (Proteico e Sem Glúten).
• 200ml de claras pasteurizadas
• 1 pitada de sal
• 200g de batata doce pré-cozida
• 3 cs de óleo de coco
• 1/2 xic de açúcar demerara ou adoçante culinário
• 1 cs de essência de panetone
• 70 ml de suco de laranja (1 laranja pera)
• 1 scoop de whey protein sem sabor ou baunilha (opcional)
• 1 xíc de mix de farinhas sem glúten
• 1 cc de mix de gomas guar e xantana (ou apenas xantana)- opcional
• 2 cs de farinha de linhaça dourada
• 1 cs de fermento químico
• 1/2 xícara de mix de berries (uva passas, cramberries e blueberries)
• 1/4 xic de nozes trituradas (opcional)
Modo de Preparo:
Na batedeira, bata as claras em neve com uma pitada de sal, em velocidade média.
Continue batendo e acrescente o óleo de coco, a batata amassada, o açúcar/adoçante, a essência e o suco de laranja.
Em um recipiente à parte, misture as farinhas e as gomas.
Acrescente à mistura na batedeira e bata até ficar homogêneo.
Utilizando o fouet ou colher, misture o fermento, as berries e as nozes.
Coloque em uma forma de papel para panetone (ou em formas de silicone) e leve ao forno baixo pré-aquecido por aproximadamente 1h20 (forma de 500ml).
Espete com a faca e se ela sair limpa está pronto.
Dica: reduza o tempo de forno quando utilizar formas de panetone de 100ml ou 200ml.
