My wonderful MIL got me a "for no reason" gift this week after coming across it in the book store. We picked out 3 recipes for this week!! Also note pic 2: as someone who comes from "only" being able to eat bagels, cereal, pancakes, fruit, or granola bars for breakfast, the switch to being able to eat anything (💡) was mind blowing. Leftover homemade wings and sautéed veggies? Tuna salad and guacamole? Stuffed peppers and sauerkraut? OKAY. It's all on the menu. It's all food. So much easier than needing to find something sweet and "appropriate" for breakfast. Plus I'm not starving and crashing at 9:30am. Other countries practice this on the reg 😊. #whole30 (mini reset, made it to day 3 so far 😜) can lead to some weird unexpectedly awesome ish. Started with almost caramelizing some onions and peppers, added mushrooms and zuchs, then the bone broth, and finished with canned clams, turmeric, and ghee (salted throughout). Was a little nervous. Meal appeal is quite lacking. But turned out BOMBBBB!! You could sub any protein in there 😏. Also soups are just ze best and this took 15 mins tops. Thanks @hantastic26 for the soup idea on this fine eve.

Ah, to cook in my own kitchen again 😋. Vacation was truly awesome (peep that River Rat cheese zomg!) but I did miss my bed and kitchen amenities. One thing about this vacation, food-wise, that stuck out from all the rest is that I tried my hand at "food freedom"... for the first time ever. I ate and drank things that I personally deem worth it, like gf smores, wine ice cream, Opi's cooking, and locally distilled moonshine, but other than that I stuck to a pretty normal eating routine. I didn't snack mindlessly nor eat when I wasn't hungry, like I usually do on vacation. I came back not feeling terrible in the digestive region, which really is a first for me!! I haven't even finished the book yet, but I HIGHLY recommend @melissa_hartwig's Food Freedom Forever. Our @whole30 goddess is so insanely insightful. If I can (calmly and happily) stick to a vacation plan that keeps me satisfied and not returning home like my typical post-vacay blob-self, I'm pretty sure anyone can. My first attempt at making almond Nutella was delish 😍🤤. I've always been intrigued by regular Nutella but I'm allergic to hazelnuts so I never got to try it. 🙅This version is really good but I have nothing to compare it to! the other day I saw someone post that this lean cuisine and apple was their lunch 🍴 and I was like 😱 because I was eating the heaping plate of beef and veggies on the next slide for fewer calories and better macros 💯 I know that different bodies respond to different things but to restrict calories to this extreme won't do any long term good 🤷🏻♀️ further, doesn't my plate look significantly more appetizing, filling, and healthy 👌🏼😋

The other night bebe made us tuna steak salads and some homemade Asian type dressing. It was like a sushi platter of love and rainbows and meteor showers. Tuna gifted by the lovely @doodle_devy and her family.
Easy AF swap: rice pasta for regular pasta. 2 ingredients (rice and water) and lack of that pesky hard-to-digest protein 😏. Loaded this batch with shrimp, onions, zucchini, and peppers. Kids currently devouring. Me too lol.
Simple lil breakfast this morning! An egg fried in marrow fat (leftover from skimming my beef bone broth), cilantro, and a slice of the almond flour mulberry bread I made last night, which was a hit with my housemates! I also had a bulletproof mocha latte, which has given me ample energy to tackle our continued war on the house fleas we're dealing with 😱 I'm using all-natural agents to fight them, hopefully they prove effective! Gave "zucchini noodle" lasagna a try after all these years. Absolutely delish, but next time I'm just throwing it all into a casserole and topping with raw cheese to cut out 403 minutes of work and a pile of veggies anyway. 🤣 Faileo.
Lunch I took to work today--homemade curry with coconut milk, zucchini, carrots, chard, and chicken breast from when I made meat stock. Curry is my favorite easy dish, warming, filling, and soothing and a good way to pack in veggies and healing herbs and broth! I put it over spaghetti squash and can highly recommend 😊 also I started taking candibactin-AR and allimax today, I plan on finishing both bottles before re-assessing how I feel. Sometimes you just need a new dressing to spice up your whole30/salad/life. I have made 3 batches of this tahini dressing since trying it 3 weeks ago 🤤 It's #toddlerapproved#pickyhusbandapproved and of course #whole30approved . It's from @meljoulwan 's Well fed cookbook but I found it on her website. 👇
1/2 c tahini
1/2 c water
1 lemon juiced
2 cloves garlic peeled and chopped
Salt and pepper to taste
-just combine everything in a food processor until smooth.
Made a batch of "swamp soup" for dinner 🐊--kale, chard, Organic Girl supergreens salad mix, celery, basil, cilantro, green onion, and avocado for creaminess cooked in chicken broth and water with a ton of lemon juice and salt, blended and partially strained, and topped with brassica microgreens and harissa infused olive oil 💚 aint nobody gonna feel unhealthy sipping on this warming meal! I also added a scoop of @vitalproteins collagen peptides for extra protein and gut-healing goodness. Tonight I'm going to see Spider-Man at the drive-in theater with my boy. I'm taking a few treats--dang salted coconut chips, homemade lemon-wild blueberry-vanilla coconut layered gelatin bites, and flavored sparkling water. Cream of potato soup on a 90 degree day, mmmm! I didn't follow a recipe so I guess my 4 years of learning to cook are finally paying off. Boiled sweets and whites, mashed with chicken broth. Separately sautéed bacon, broccoli, celery, and garlic. Added to the soup along with green onions and canned chicken cuz we fancyyyyy 💁🏻💁🏻♂️. Of course sea salt spiced each step of the adventure. #paleofoshoyo
Fernbrook Farms CSA pickup this week. It was... a ton. I actually should have weighed it to see if it's more than their average haul (13-17 lbs). Bowl full of collards with which I've become obsessed (sauté with the beet greens, garlic, salt, & oil mmmmmm), 3 broccoli crowns, bunch o' carrots, 12 beets (we've been roasting and they're delicious. Also that autocorrected to 12 beers; I wish...), a quart of u-pick snap peas that have already mysteriously disappeared, head of cabbage, and 2 heads of lettuce. U-pick mint and camomile were "take as much as you need". Pretty sure all this, organic, for $25 is amazetastic. Yey!
Came back from work staaaaarving and I must say, I'm proud of what I whipped up in under 30 minutes! No recipe either heh 😏on my plate (and now in my belly)--tuna cakes made with 1 can tuna, 1/4 c shredded zucchini, 3 tbsp almond flour (use more to keep them together better oops), an egg, seasoned with generous amounts of curry powder, coconut aminos, lime juice and zest, salt and pepper, and minced scallion tops. Pan fried in avocado oil till crispy on the outside and hot on the inside, and topped with @primalkitchenfoods Mayo mixed with lime juice and coconut aminos and more scallions and grated ginger. Also had roasted baby peppers as a side dish. YUMMY! And now I'm very full 😋 #sibosucksbutmyfooddoesnt
SMOOTHIE BOWL FEELS 😭 I added about 1/3 a super-ripe frozen banana to this strawberry smoothie and am blown away by how sweet it tastes! After weeks of sweetening only with a few drops of stevia and tiny amounts of honey (to cut the stevia taste 😝) this is such a treat! Also in my bowl--@vitalproteins coconut water-vanilla collagen powder, unflavored brown rice protein, @malkorganics almond milk (finally got ahold of a bottle 🥛🌰), topped with Dang salted coconut chips, sprouted pumpkin seeds, and almond butter! #sibosucksbutmyfooddoesnt
Late dinner--hence the bad lighting--but this was freaking amazing, so easy, packed full of flavor and goodness! I bought a pre-cut "slaw" mix at Whole Foods, sautéed it in avocado oil, then tossed it with a spicy brown mustard (new obsession)-olive oil dressing and topped it with rotisserie chicken salad made with @primalkitchenfoods mayo, lemon juice, and green onion tops. It's like a picnic on a plate!! I made a LOT of the slaw mix and had to restrain myself from polishing off my plate, since that would be too much cabbage all at once. But, that just means leftovers 💛 #sibosucksbutmyfooddoesnt
Quick lunch break from unpacking, cleaning, and reorganizing 📦🗝at my new house! I have some basics in the fridge so simple meals it is--2 fried eggs, heirloom tomato slices with olive oil, grey sea salt, and chives, and three slices of prosciutto (the Costco pack of this stuff is a great easy snack for a good price!). Paleo noms! Spaghetti squash with pasta sauce topped with grass-fed ground beef, red onion, baby Bella mushrooms, and lots of italian spices. I was going to get vegan cheese, but that stuff is loaded with fillers that no one should subject themselves to in my opinion. One of my best creations to date.
