Was craving some flatbread pizza to end my long weekend!!! As nightshades bother me I tried a nightshade free sauce recipe (amazing robust flavor with the basil, beets and sweet potoates) with garlic cashew cheese (grainy texture and taste is far different from normal cheeese and it cooks funny as you can tell) and #jullianbakery #paleo pizza crust. I made half with pizza sauce and half without and preferred the half without the cooked sauce and I dipped it with cold sauce and garlic ghee sauce. 
The cheese, crust and sauce took a long time to prep by myself (glad I already had the spinach, turkey bacon, pulled chicken, brussel sprouts toppings from leftovers) but all and all it was a hearty flavor packed pizza and I have zero bloat or other symptoms as I normally fet with other pizza so it's a win win for me.

Paleo Banana Pumpkin Bread w/ Cinnamon Swirl. -2 very ripe bananas
-1c Almond butter
-1/2c pumpkin purée -3 eggs
-1tsp baking soda -1 tsp pure vanilla extract -1/2tsp pumpkin pie spice
-1/2tsp cinnamon (sprinkle then swirl on top right before baking)

Mix all ingredients in blender. Pour in to greased bread pan and bake 25-28min at 400*. For muffins, grease tin and bake at 400* for 12-15min.

A big part of the reason I changed my name from "Get your fit on with Natalie" to "Naturally YOU with natalie" was because a lot of people thought my whole life was fitness !!! No doubt -- fitness has changed my LIFE -and so has a healthy view of food and nutrition. I used to force myself to follow strict diets and I felt I wasn't LIVING! When is stopped obsessing over the scale, and just exercising  and eating well from a place of SELF LOVE instead of self hate and wanting to see my number on the  scale change , suddenly it became easy and fun! 
But besides fitness , being naturally who I AM and not feeling shame for my past and stuck in the same shitty limiting beliefs ... THAT has been the biggest change. I have started realizing that NOTHING has happened TO me . Only FOR me. And I've realized I can literally do anything  I want because nothing in my past defines me. 
While I might not be perfect or will ever he done working on ME, I've learned that I can help all the same. I've learned you only need to be one step ahead of someone else on a similar journey to help.

I’ve been in desperate need to go grocery shopping, so I’ve been having to get creative the last couple of days if I wanted to still try and eat as clean as possible. 
This actually ended up being not very pretty, but surprisingly really good! And I felt so nourished afterwards bc ALL THE VEGGIES. 
This was simply chicken sausage that I sautéed in a pan with leftover roasted broccoli and cauliflower (seasoned with cumin and paprika). I added in an egg to make it a bit if a scramble and then...that side of sweet potatoes. LET ME TELL YOU...they were the best I’ve ever had-and I don’t know why! They were my normal recipe so I can’t pin point what was different but WOW. 
Normal recipe is season with coconut oil, salt pepper and garlic powder and bake at 425F for 25 minutes. Give ‘em a try and let me know if they’re not the best things ever 😍

I’m loving this sandwich bread mix from @legitbreadcompany. It’s very easy to make and the flavor and texture are pretty on point. Time to get sandwich making! .

Everyday is a great day for cookies, especially Monday right? 
I love making paleo cookies with a few, simple ingredients. I use coconut nectar as a sweetener as its low glycemic and doesn't blow the sugar bank like maple syrup.
1️⃣ 2 cups almond flour
2️⃣ 1/4 cup coconut nectar
3️⃣ 1/2 tsp baking soda
4️⃣ pinch of salt
5️⃣ 1/2 cup raw cacao chips
6️⃣ 1 tsp vanilla extract
7️⃣ pinch of cinnamon
8️⃣ 2 tbsp coconut oil or avocado oil
9️⃣ 1 egg or 1/4 cup of egg whites
Preheat the oven to 400. Mix the sticky stuff in one bowl, dry ingredients in the other. Combine and scoop onto a pan lined with parchment paper. Cook for 10ish minutes or until browned. Freeze so they'll last forever! (Let's be honest they go quick)

I've been winding down my evenings with a turmeric latte sprinkled with CBD infused cinnamon & honey from @curednutrition. If you don't know what CBD is, it is one of the molecules produced by cannabis -BUT it does not contain the psychoactive molecule, THC. So instead, it simply relaxes/helps you destress. CBD is also 100% legal because it is derived from hemp. Also, since it doesn't contain THC, it does not show up on drug tests. SO, not only is it perfectly okay to consume, but it's pretty therapeutic! Clinical trials have shown that CBD may have neuroprotective, anti-inflammatory and analgesic properties, and potential therapeutic value in the treatment of depression and anxiety. I've been winding down my evenings with a turmeric latte sprinkled with CBD infused cinnamon & honey from @curednutrition. Homemade Paleo hot dog and fries meal.

There are PLENTY or restaurant options here in Chicago. And it can be really tempting to eat out... a lot.
So Dylan and I have recently begun experimenting with cooking up some tasty foods you might only associate with diners and dives. It is for sure still indulging, but we at least know all the ingredients we are using.

So this is an organic, turkey, @applegate hotdog with @sirkensingtons ketchup on a plantain "bun." (Also an organic pickle spear.)
And then we have some potatoes made into french friiiiiies.

We kinda... "shallow fry" the plantains and potatoes. Olive oil and @nutiva coconut oil mixture for frying. About 1/2 inch full in a skillet. 
Tips for plantains: Peel and cut in half (or 1/3 and 2/3) length-wise. Fry on all sides for about 30 seconds on each side. Then take them out and roll them out till they are decently flattened, and fry again about 20-30 seconds on eat side.
For French fries: Cut, and soak in water for 5 minutes. Drain, and fry on high heat until golden brown.

Today was an absolute shit show!!💩💩 It was literally one thing after another. From kids (appointments, tryouts, practices), to dogs having panic attacks, to contractors, plumbers, and granite guys (the workers were all welcomed). And all of a sudden I looked at the clock and it was after 6pm. 😳😳 I don’t workout at night ... ever. If I’m not done in the morning it doesn’t happen. But I also have a “never miss a Monday” rule. So I went into our online group and posted up a video letting them know I needed help. I asked them to hold me accountable and not let me skip my workout. I let them know even the coach needs a little encouragement from time to time. 💪🏻💪🏻 And you know what?? They stepped up. They got in that group and let me know they believed in me and knew I’d get it done. They reminded me how much better I would feel after it was over. 👊🏻👊🏻 I simply couldn’t let them down. And that’s why these groups work!!! We may all workout in our own homes but we are all in this together!! And they came through for me tonight. 🙏🏻🙏🏻 So here it is ... at 7pm ... getting it done. And they were right. I feel so much better for sticking to my goals. ❤️❤️ If you crave this kind of support and accountability let me know. The November group is starting soon and honestly, the more the merrier!!!!☺️☺️

How is your Monday, Insta friends?!?! Want to know what I did today?? NOTHING!!! Basically had the most unproductive day, EVER 😜I kind of feel great about it. No blog work (unless you count this IG post), no housework, no grad school work, no clients to see. I did teach a yoga class and snuck in a workout, but then promptly sat in front of the TV for a good few hours. I didn't really make dinner 🍴 either. Just threw in some chicken breast and TJ's tomatillo sauce into my Instant Pot and called it tacos 🌮(really good BTW, in case you were wondering). Totally re-thinking the way I do Mondays from here on out!! So no, I didn't make this Pomegranate Avocado Salsa today. I just thought I'd share because my friend just texted me to remind me how much she loves it!! Such a great recipe for fall and the holidays. So easy too!! Recipe link is in my profile or below 👇:

We’ve got some next level delicious meal prep on deck for this week, let me tell you 🤤

It took a lot of work in the kitchen yesterday to pull this all together, but it will make meals so much easier this week. The lineup:
•
🍔 Greek burgers with lean ground beef, onions, green peppers, pine nuts and parsley
🍶 garlic lemon aioli for ze sauce
🍗 baked chicken drumsticks with coconut Thai curry sauce
🍚 quinoa mix with buttercup pumpkin (my new fav, IT SMELLS LIKE A MELON), craisins, honeycrisp apple and pine nuts
🍳 frittata with peppers, onions, spinach, sausage, jalapeño and garlic
🍠 sweet potato fries
🌶 chopped red peppers
🌳 steamed broccoli
🥑 my fav teeny tiny avocados
🍌 not pictured: the peanut butter chocolate chip banana bread I just baked (RIP me)

The secret sauce to meal prepping: cooking food that tastes good to you! If you make the same chicken and the same vegetables week after week, you’re not going to want to eat what you prep. 🙅🏼

Making a diverse palate of food with plenty of options and flavors (and the occasional treat!) keeps things interesting and makes me actually excited to eat what I made. I try to make a good mix of proteins, good fats and complex carbs for meals. 🥗🍗🍓🍚🥘

Another meal prep hack: SAUCES. I’m talking pestos, aiolis, curries, tahini dressings, hummus, you name it. Sauces are where the flavor is AT and can make such a difference for simple ingredients. @ sauces, take me to Flavortown.

Lots of adorable dumplings ready for vegetable dumpling soup 🤤
3/4 almond flour
3/4 cassava flour
1 1/2 tsp salt
3/4 tsp baking soda
3/4 cup whole fat coconut milk
•add all ingredients to a bowl, mix and shape into roughly 24 dumplings.  Add to pot of soup and cook for 5 minutes. •
