This week I really wanted to bake a pie I had never made before. When I was a kid, my brother and I had a Dutch caregiver, who would often make us after-school snacks from her homeland. Her snacks were my first peek into European cuisine. One time she made us Shoo-Fly Pie, and while I don't remember the taste, I remember it being the best thing ever.
Over the years I looked for a recipe and never found one. I just got my copy of #PaleoSweets and lo & behold there was a recipe for Shoo-Fly Pie. I've tasted a lot of things since I was 10 so this might not be the best thing ever now, but it's certainly a super easy and tasty pie to make.

just in case you missed my first post of these @emmysorganics dark chocolate covered bites 🍫🔥🤤 i mean these coconut cookies are amazing all on their own, but everything is better with more dark chocolate, right?! right 🙌🏼
✨how I made them✨ melted 1 bar of dark chocolate with 1 tsp coconut oil on the stove top, mash @emmysorganics cookies by hand into ball form (1 cookie = 1 ball), dip cookies that you formed into balls into melted dark chocolate and freeze for 1-2 hours to harden chocolate. so easy! I used their chocolate chip flavor for half the batch and vanilla bean for the other half. .
Like all good things sometimes an excess might be too much. I learned quickly that too much almonds might not agree with my body.
So I decided to get creative in the kitchen and find alternatives to baking with almond flour!

But seriously...these #paleosnickers are amazing! I already made them twice. For myself and bday party's. People seem sceptical when you say: 'Oh well...this is a healthyish cake. It's gluten free, dairy free and refined sugar free.' And when they taste it they are just like 'Wow and you're sure that this is healthyish?!' That's exactly how I want my dessert to be. Naughty but healthyish! 🙋
Also... I remember eating through the cake buffet and never getting full. This lil slice of cake will fill you up for the next few hours 😂

Victoria’s Fall Freezer Brownies 🍁🍂
1.5c pumpkin purée
1/2c cocoa powder
1tsp pure vanilla extract
1/3c coconut flour
1tsp baking powder
1/2c nut butter (I used almond)
3tsp coconut manna
1/2c coconut water (you can sub any nut milk if desired, I had none on hand)
1-3tbsp date paste (depending on desired sweetness **maple syrup can be used instead)
Method➡️ Combine wet ingredients then add in dry, stir until desired smooth, spreadable consistency is obtained. Place in an 8x8 baking dish coated in coconut oil in a preheated oven at 350* for about 18 minutes. Once cooled, cover and put in freezer. Next day take baking dish out of freezer and cut into squares and plop back in freezer in a storage container.
