Manaeesh, also Manakish or man’ouehe (singular) is a flatbread topped with Za’atar and olive oil, then baked in the oven. It’s usually served for breakfast in the Middle East. Za’atar is a mix of dried ground herbs, made by drying the wild herbs (thyme) under the sun, then mixed all together with salt, sumac and toasted sesame seeds.

A super touching experience with family @cafereem today. Popped over for tea and cake shop shut but invited to join family for a traditional Palestinian supper. Aubergine and courgette stuffed with rice and mince served with tomato soup, pickled radish, chilli, bread, olives. Papa Reem collected aubergines from market at 4 am! SOOP and Nisrin have come together to celebrate the food stories, influences behind the menu, and the culinary heritage of Palestine. You will also hear from SOOP's wider work and approach to food and storytelling.
The much loved SOOP supper club series is back this Autumn/Winter with a host of emerging chefs across London.
All profits from the SOOP dinner series go towards the SOOP culinary support initiatives for cooks with refugee and migrant backgrounds looking to launch a career in the food and catering industry.

Three and a half years ago, I had this idea that the food I grew up with should be fused together. Last night, we actually served some of these ideas to people that weren't just close friends or family. .

One more from our Middle East trip... this was a quick snack stop in Jericho city centre for a falafel salad sandwich and extra tahini with @tomsfeast ... still amazed that we drove close enough to Jordan to see it across the river! 🥙🥙🥙
