A delightful dinner with a delightful dinner companion @hatchethall. We started with a #salad featuring garlic dressing with Parmesan cheese and breadcrumbs (lower level, center); followed by the restaurant’s specialty—cornbread with shishito, cheddar, cultured honey butter and sea salt (Lower left). So tasty we could have had it for dessert. For entrees, we had the diver scallops with country ham vinaigrette & parsley (top left) and the best pork chops I’ve ever tasted (top right). For a side dish, we sampled the hasselback potatoes with roasted garlic aioli & wood herbs (lower right). All in all a splendid meal! ⭐️⭐️⭐️⭐️
Here's a big ole hot mess of a concoction that started off with leftover grilled Tuscan chicken and then added butter sauteed celery, onions, sun dried tomatoes, garlic zucchini, mushrooms, cubed sweet potato.
It was all seasoned with commercial brand of Tuscan herbs and spices, oregano, thyme parsley and then added the organic chicken broth, heavy whipping cream, two large handfuls of fresh baby spinach. It was brought to a rolling boil with the lid on and right before serving a BIG handful of mozzarella cheese went into the pot as well..It was absolutely delicious but I'm betting that it'll be better tomorrow.
Enjoyed a fabulous ocean view & a magnificent lunch @ the legendary @dukeslajolla with a classic #burger made of brisket & hanger grind topped with white #cheddar , yellow #mustard#aioli , #tomato , #onions on a potato bun with a side of Yukon gold fries. Heaven on an overcast day. ⭐️⭐️⭐️⭐️

That’s what my hubby calls the marinade I do for this grilled Pork Tenderloin. ⬆️😂 Just one of the reasons I married him, keeps me laughing all the time.
Anyways, I came across this recipe years ago when I was searching for a marinade. I ended up not having all the ingredients on hand so I substituted a few things and it. turned. out. so. good. Moist and flavorful annnnd not to mention, Pork Tenderloin is super lean- WIN WIN. 🙌🏻 Because it has fresh basil 🌿 and tamari sauce it’s kind of a fusion Asian flavor but it goes with any side dish!
Pork Tenderloin Marinade:
1️⃣2-3 lbs. Pork Tenderloin
2️⃣1/4 Cup Chopped Fresh Basil
3️⃣1/2 Cup Gluten Free Tamari (could also sub Coconut Aminos)
4️⃣1/4 Cup Red Wine Vinegar
5️⃣1 Tablespoon Freshly Squeezed Lime Juice
6️⃣2 Tablespoons Extra Virgin Olive Oil
7️⃣2 Tablespoons Honey
8️⃣2 Large Minced Garlic Cloves
9️⃣1/2 Teaspoon @redmondrealsalt
1️⃣0️⃣ 1/4 Teaspoon Freshly Ground Pepper
Place all ingredients in bag and marinate for at least 3 hours.
We served it with: 🥕 Roasted carrots, parsnips, and green beans with a tbsp of @betterbodyfoods avocado oil (better for high heat)
Top green beans with feta and sliced almonds! Also the roasted carrots and parsnips are super yummy with some of the leftover fresh basil. 🌿
Everything was totally a party in your mouth! 👌🏻
