Good Morning, Boochfam! 🌞
🧡19 days ago I posted that Natalie's Craft Kombucha was going to soon have a new name. The time has come! Today is the FIRST official day that Counterpart Kombucha will begin to hit shelves!
💜I have LOVED using my name in this business so much, but due to some trademark issues- I racked every corner of my brain ( and the internet 😋) in search of a word that truly meant something to me, something that would fit both myself and the Booch!
💚After some time, I decided to go with Counterpart, a word that struck me right away for the Kombucha.The word has many meanings and definitions, but the specific one that hit me right in the heart is this--
. 💕💕“ One of two parts that fit, complete, or complement one another”.💕💕 .
💙In every possible way, this is what the Kombucha is to me- my Counterpart. I have never felt so passionately or so connected to anything in my life as I do the Kombucha. .
💛I make the Kombucha and the Kombucha makes me. It's a sentence I thought to myself years ago while driving a delivery…and it felt so powerful that to this day, without prompting, it just pops up in my head. It is one of the great loves of my life, and not a day goes by that I don’t feel profoundly grateful to have such a love. .
💚All of this being said, the only thing changing here is the name. All else is exactly as it always was, and always will be. This business has grown from the trunk and back seats of my car to over 40 small buisnesses throughout PA, MD and NJ. So much has changed, and yet so much has stayed the same. It is still hand labeled, hand bottled, self distributed and small batch brewed. .
💙 I want to thank you all for standing by me throughout this entire journey. It has been the best time of my life doing this, and I don’t think I could be more grateful for the immense support I have received from so many of you for so long. .

L A N G B A A N❗️ Standouts from tonight’s dinner inspired by Bangkok street food: scallops with coconut cream + kaffir + lime, salad of tripe + mushrooms + fresh oyster, and two of my new favorite desserts — coconut panna cotta and baked taro custard. ✨
First experience with Langbaan and completely blown away! The food was incredible even if way outside of our comfort zone in some cases. I still do not like oysters or tripe. Also I obviously didn’t take pictures of all 12 courses. #langbaanpdx#foodies#pdxeats
Went for the first time to say goodbye. Dave’s clients parents own this wonderful restaurant and after 40 years they are closing there doors. It was wonderful to see it full of people saying their final goodbyes. #eatlocal#pdxeats#goodbyeoverlook
I was too busy stuffing my face with dumplings at Kachka to remember to take a good photo but it was awesome. This is "herring under a fur coat" (don't question, just eat it) and 2 kinds of dumplings. Remembering the excellent fries we had last night at @trifectapdx. They must have been double fried - crispy, savory, and absolutely no soggy fries. The only thing that would improve them would be a side of aioli. #latergram#fries#happyhour
Another fav breakfast/coffee place we went to in Portland was @proudmaryusa located on Alberta Street (hey my home Province!) it is a coffee shop/breakfast lunch place from Melbourne, Australia. The design takes a break from the more typical third wave coffee shop of white on white and embraces a more industrial chic vibe to it. Even during the week when we were there it was busy. Though because it was my wife and I they asked if we wanted to sit at the coffee bar. Our answer was HELL YAH! Their coffee bar was amazing as the machines built into the counter space and so you could watch them make the drinks and try to absorb some of the skill and wisdom.
Seeing as they were from Australia which anyone knows is the birthplace of the flat white so I had to order that and we also got I regular latte if I Am not correct. The latte was on point with the espresso flavour hidden slightly behind the milk but bursting through to deliver a yummy punch to it. The temp was perfect, neither hot or cold and could start sipping right off the start.
The food was even more amazing, each bite was burst with so much flavour. I think if you were trying to put joy into a taste this is what joy would taste like.
The first thing that we ordered was the ricotta hotcake for 11.5, it is heilala vanilla hotcake, mandarian caramel, lemon cheesecake, honeycomb, spiced cookie. It looked so pretty that it was hard to take the first bite of it. But in the name of tasting, we did and it was wonderful. I am not a super sweet person so this was great as it was sweet without being overpowering. It was warm and fluffy and the fresh toppings on top were wonderful. If you go, this is a must.
The savoury item we ordered was the “Potato Hash” for 15 which is potato hash, smoked bacon, poached free-range egg, kale salad, bagna cauda and was also really amazing too. It was really nice and hot and crispy without being burnt and the fresh veggies on top made it feel not so heavy. Another great order.
I think this place was a highlight of our visit to Portland and one of the other reasons was the people working here, they were genuinely some of the nice people I met.

I was telling a friend today how I’ve been lacking creativity in the kitchen lately and then bam - this happened! I’m so proud of this dish because I didn’t use a single recipe (not even for inspiration). I’ve always wanted to be the type of person to create magical dishes out of thin air and this is my first baby step to becoming that person! •••
Green curry spaghetti squash with steamed broccoli, parsnips, carrots, and bell pepper tossed with a spicy peanut sauce and topped with cashews and green onions. It needs some tweaks before I share, but is anyone interested in the recipe?! Let me know💛

Hadn't been to Gravy in years, but walking by for lunch there was no line. This has to be one of the best omelettes in town, The Dalise. Stuffed with sausage and a bunch of other goodies, it's at least 2 meals for only 12 bones. Glad I stopped in! #pdxeats#eater#bellyfull#leftovers
