Arroz Caldo is a funny one as it has a Spanish name but it really is congee and most probably influenced by our Chinese neighbors when they traded spices and textiles on Philippine shores. A Chinese business man eventually stayed in Philippines either marrying a Filipina or for business reasons, armed with Chinese cooking skills he used this knowledge in recapturing his cuisine but using Filipino ingredients that is locally available to him. This is how many Filipino dishes with Chinese influences was created.
And to think then not many knows about Filipino food and this year 2017 it's #trending . Life works in mysterious ways. I started on this journey with a passion for food, love for my home country and determination to feed everyone my cuisine. Now there are many Filipino Supperclub hosts, Food stalls and Restaurants..I say together we can lift Filipino Cuisine up there with other Asian cuisines. :
