My favorite roasted eggplant salad. It has the right balance of flavor and texture– not too sour, salty, or sweet.
The richness of roasted eggplants with a hint of sweetness from the onions and tomatoes mixed together in a light dressing of vinegar, salt, and sugar makes for a simple but tasty side dish. @oryxrotana #oryxrotana#philippinecuisine#ensaladangtalong#iphone7plus
Philippine cuisine/ Filipino food 🥘 may not be as photogenic or Instagram-able as the other cuisines, but I can guarantee you that it’s one of the tastiest and most delicious. We had pork sinigang (sour soup), kare-kare (beef stew in peanut sauce), ginataang tilapia (tilapia fish in spicy coconut milk sauce), pancit bihon (rice noodles with meat and vegetables), sizzling sisig (pork bits cooked in a sizzling pan with chilli pepper and egg), adobong pusit (squid cooked in soy sauce and vinegar mix), crispy pata (THE star of the evening: deep fried pork knuckles with vinegar sauce), buko pie (made from young coconut) and leche flan for desserts.
