1. Broth: Parboil beef bone to get rid of scum. Char ginger and onion, chicken feet, mix in the spices from the third image, fish sauce, sugar. Simmer and skim, repeat...Repeat... Until you get a clear broth. (Sometime easier to degrease Day2 after it cools).
2. Top with all your fav goodies! For me, the tendon and juicy marrow from the bones, sliced wagyu and eye of round, sprouts, herbs, Serrano, Sriracha!
Finally I found a pho-bulous veggie pho!! Nice broth, plenty of crunchy veggies, mushrooms, tofu and rice noodles. Such perfect comfort food for post tunnel-crawling fix.
It still was not as good as I could imagine the streetfood stall versions to be with plenty of fresh herbs alongside the soup. Just a shame they all have meat in them... Must look harder - we have just a few more days left in Nam!
