This spaghetti squash is loaded with good for you ingredients and looks so festive and beautiful! Enjoy for your M3 or M5
✨Chicken Spaghetti Squash Boats with Kale and Walnut Pesto✨
•1 spaghetti squash, cut in half, seeds removed
•Pinch sea salt
•1 1/2 cups kale
•1/2 cup parsley
•1 clove garlic
•Juice of 1/2 lemon
•1/4 cup olive oil
•1/4 tsp sea salt
•1/2 cup walnuts
•1 pound chicken tenders, cubed
•1/2 tsp dried oregano
•Pinch sea salt and pepper
•1 Tbsp olive oil
•Garnish: Pomegranate seeds and walnut pieces
•Preheat oven to 400 and roast squash cut side down for 35-40 minutes, until tender.
•While squash cooks, prep the pesto: Add kale, parsley, garlic, lemon juice, olive oil and sea salt to a food processor and blend. Add walnuts and blend until smooth. Set aside.
•Season chicken with oregano, salt and pepper. Sauté chicken in olive oil. Once cooked through, stir in 1/2 cup pesto.
•Fluff squash in each boat. Add chicken mixture to each boat. Top with additional pesto, pomegranate seeds and walnuts.
