Veggie fritters!...these were really tasty and as voted in stories by you lovely lot here is the recipe for you!
I used leftover broccoli rice - which means I whizzed broccoli in the food processor and then I simply steamed for a couple of minutes in a pan with some smoked paprika, 1tsp)) So add a cup of broccoli
1/3 cup grated halloumi
1/3 cup pine nuts (lightly toasted in a dry frying pan and then whizzed in a food processor
Grated beetroot (cooked - I used a precooked beetroot)
1 /2 tsp Garlic powder
1/2 tsp Mild chilli powder
Salt and pepper
Mix all together and form into patties.
Gently fry in a pan in a little oil and turn once browned.l, around 5 mins) ...and that’s it! Super simple lunch or even a light veggie free dins!

We have been getting an average of about 40 zucchini flowers from nonno’s garden every week, so every time we get a new harvest, we try to use them in a different way or recipe. Today we made zucchini pizza 🍕
