Grain free lasagna? Yes! Dairy free? Not so much. I took my beloved Pioneer Woman lasagna and took out the grains but kept alllllll the cheese (and meat). I sliced zucchini lengthwise (3/8") using a mandolin. I salted the slices and let them sit in a colander in the sink for about 30 min. I rinsed and squeegeed them "dry" with my fingers and then layered them the same way I would lasagna noodles. I baked it for about 35 min at 350 then let it sit for about 20 min. Seems like a lot of work but really no more than boiling water, then cooking real noodles, and then rinsing/cooling, etc. And just as delicious!! I would totally make it this way again. This would totally work for #keto if that's your thing. My thing is getting in more veggies any way I can! Plus, I don't feel all heavy and blah like I do when I eat pasta. Im so happy right now. 🤗 I also just got off of FaceTime with my BFF and her fam so that made my night too! ❤️ #lifeisgood .
