Homemade Stuffed Crust Pizza

For the pizza dough;
3-1/2 cups plain flour
7g active yeast
2 tsp salt
1 tsp sugar
2 tbsp olive oil
1-1/3 cup warm water
2 garlic cloves, minced (optional)
200g mozzarella, cut into chunky size
For the topping
1 red bell pepper, diced and sautéed
1 grilled chicken breast, shredded
1 white onion, diced and sautéed
To make the dough; Add yeast and sugar to the warm water and let sit for about 5 mins.
In a bowl, mix the flour, salt, olive oil and yeast mixture together to form a dough. Knead for 10 mins till the dough is smooth and elastic. Place the bowl in an oiled bowl and cover with clingfilm and set aside in a warm place to double in size about 1.5hrs
Preheat the oven to 180 degrees
Roll the dough out to form a round shape then place chunks of mozzarella around the edges of the dough. Wrap the edge of the dough around the cheese to seal it up. Spread the tomato sauce on the pizza based followed by some of the cheese, chicken, onion, peppers, fresh oregano, dried herbs and more cheese. Bake in the oven for 35mins or till the dough is well browned and cheese has melted.
