Living in Texas = Tacos lol. I love to make these plant based tacos bc they're super easy but filling! The majority of prep time comes from making the sauces + slaw but if you make those in advance, preparing this recipe is a breeze.

Comienza la mañana con el pie derecho con un delicioso plato sabroso de avena con chocolate cubierto con cerezas. ¡Inténtalo esta semana!
1/2 taza de avena
1 taza de agua
1/2 taza de cerezas congeladas
1 1/2 cucharadas de cacao en polvo
1 cucharadita de azúcar de dátil o un dátil trozado (opcional)
Semillas de calabaza (opcional)
1. En una cacerola, lleva la avena y el agua a ebullición a fuego medio-alto. Reduce el fuego y deja cocer a fuego lento.
2. Una vez absorbida la mayor parte del líquido, retira la cacerola del fuego. Agrega las cerezas congeladas, el cacao en polvo y el azúcar de dátil.
3. Continúa agitando hasta que las cerezas congeladas se descongelen y se calienten. Transfiere a un bol y espolvorea con semillas de calabaza.

woke up a little late today because I was sooo excited last night about all my fun Philly plans later this week with @lifethroughjulia that i just COULDN'T fall asleep! but I completely revived myself this morning with a fresh breakfast spread 🙌🏼 first time trying figs btw and I'm on the fig train 🚂 100% DO IT: toast a @foodforlifebaking gluten free seeded english muffin and top one side with @wild_friends pb + organic figs, and the other side with @kitehillfoods chive cream cheese, cukes 🥒 + hemp seeds ..... it was honestly really hard to not smear kite hill chive over both slices 🤦🏼♀️ #obsessed

For breakfast I made this bowl of turmeric oats. I added about a 1/4 tsp of turmeric and it was exactly what I was looking for color-wise without altering flavor. It actually went perfectly with some plain @kitehillfoods yogurt and mango. The yogurt adds this extra layer of creaminess that I absolutely love. 💛🙌🏽

If you have never tried BEET HUMMUS you have GOT to try this!!! It is my new favorite... it is SO delicious - it would be very easy to eat the whole batch in one setting 😋 .
2 medium beets, roasted
1/4 cup tahini
2-3 tsp balsamic vinegar
3/4 tsp salt
1 clove garlic (optional)
Put everything in a food processor and blend until creamy. .
You can mix in a blender as well but would need to add a little water so it will blend thoroughly

The best thing about being vegan in today's world is that it's never been easier ✌🏼️🌿 I always loved me a sausage sammie and thanks to @lindamccartneyfoods and so many other companies, faux meat is alive and thriving and I don't have to miss out 👅 I will hands down admit that I didn't go vegan because I didn't like animal products and I didn't go vegan for health. I went vegan for ethics, despite loving those animal products. I have always LOVED the taste and texture of meat, so being able to have cruelty free alternatives is fantastic ✌🏼️💖 I also used vitalite dairy free butter in this sammie aswell, which in my opinion is definitely the butter to buy as I find it tastes most like 'real butter'. You can find it in most stores now👌🏼🌿💖
Often the best things are the simplest. These courgettes cooked by my grandma taste the best! She simply put some olive oil, shallots, diced courgettes and then her secret is to add some vegetable stock mixed with garlic! Then sprinkle some thyme and that's it 👌
