5-minute sweet potato snack that will keep you feeling full for hours. Just one medium sweet potato contains 4g of fiber, 2g of protein, 115 calories, Vitamin A, Vitamin C, Manganese, Copper, Vitamin B6, Potassium, Vitamin B1, vitamin B2, and Phosphorus.
GUACAMOLE WITH SMOKY BLACK BEANS by @cookrepublic⠀💚
For the guacamole⠀
1 small red onion, finely diced⠀
1/4 cup fresh chopped coriander leaves⠀
juice of 1/2 a lime⠀
1 green Serrano chilli or Cayenne chilli⠀
1/2 teaspoon sea salt flakes⠀
For the black beans⠀
1 cup cooked black beans⠀
1/4 teaspoon sea salt flakes⠀
1/2 teaspoon smoked paprika⠀
juice of 1/2 a lime⠀
freshly ground black pepper⠀
Mix all ingredients for the black beans in a small bowl and set aside.⠀
Cut the avocados in half and remove the seed. Squeeze or scoop the flesh into a medium bowl or mortar. Discard the skin.⠀
Add the remaining ingredients for the guacamole and lightly mix with the pestle or a fork.⠀
Spoon the guacamole in a rimmed serving dish. Adjust seasoning to taste (salt, pepper and lime). Top with black beans. Serve with corn chips. Enjoy! #letscookvegan

Good morning sweet peas! This morning I finally took a little time to make a yummy breakfast! I made some gluten free oats on the stove with 1 cup water, 1/2 cup oats and a handful of frozen blueberries! The blueberries cooked down while the oats cooked and made a wonderful purple yummy tasting meal😋 on top I put raw pumpkin seeds, hemp seeds (also purchased @traderjoes) coconut flakes and some frozen raspberries! Oatmeal is a great breakfast because it always leaves me feeling full!🌱🍇🍒💜🌸
