💛💜Creamy coconut semolina pudding with warm and fresh blueberries, fresh mangos and super crunchy dried mango bits from @buahfruits (*ad)! I had shared those jars with you a while ago, but today I was craving all those summer berries, especially blueberries! Who feels the same? 💜💛

Ingredients for 2:
1 c (240 ml) coconut milk
1 c (240 ml) water
1/3 c (55 g) fine semolina
1 pinch of vanilla extract
1 pinch of salt
2 tbsp maple syrup
Frozen and fresh blueberries
Fresh and dried mango bits

Direction: Add water, coconut milk, vanilla and salt to a small sauce pan. Bring to a boil then slowly add semolina while stirring frequently. Bring to a boil again, remove from heat and sweeten with maple syrup. Let cool a little and heat up the frozen blueberries in the meantime. Layer in two jars and enjoy!

Today @poppybackshall and I had decided not to eat too much as we were both too full but then spent the day menu testing and obviously had to eat even more food 🙈 I'm definitely full this time!! #cantmove #foodcoma

Not the prettiest looking smoothie bowl 😂 but it was the perfect brain fuel before my exam 💪🏻📚
Your brain runs on glucose 🤓 so a high-carb high-fructose (from natural sources, of course, where the fiber is still intact) meal paired with omega-3s (from the flax and hemp seeds) before demanding tasks where you need the most concentration is an excellent way to give your mind a boost 🙌🏼

INGREDIENTS⠀
For the guacamole⠀
2 avocados⠀
1 small red onion, finely diced⠀
1/4 cup fresh chopped coriander leaves⠀
juice of 1/2 a lime⠀
1 green Serrano chilli or Cayenne chilli⠀
1/2 teaspoon sea salt flakes⠀
For the black beans⠀
1 cup cooked black beans⠀
1/4 teaspoon sea salt flakes⠀
1/2 teaspoon smoked paprika⠀
juice of 1/2 a lime⠀
freshly ground black pepper⠀
⠀
INSTRUCTIONS⠀
Mix all ingredients for the black beans in a small bowl and set aside.⠀
Cut the avocados in half and remove the seed. Squeeze or scoop the flesh into a medium bowl or mortar. Discard the skin.⠀
Add the remaining ingredients for the guacamole and lightly mix with the pestle or a fork.⠀
Spoon the guacamole in a rimmed serving dish. Adjust seasoning to taste (salt, pepper and lime). Top with black beans. Serve with corn chips. Enjoy! #letscookvegan

Good morning sweet peas! This morning I finally took a little time to make a yummy breakfast! I made some gluten free oats on the stove with 1 cup water, 1/2 cup oats and a handful of frozen blueberries! The blueberries cooked down while the oats cooked and made a wonderful purple yummy tasting meal😋 on top I put raw pumpkin seeds, hemp seeds (also purchased @traderjoes) coconut flakes and some frozen raspberries! Oatmeal is a great breakfast because it always leaves me feeling full!🌱🍇🍒💜🌸
