Well, I’m still alive πŸ˜… my bladder infection is finally getting better, kidneys are fine πŸ™πŸ»However, I spent my last two days puking 🀒 lovely, right? Reaction to the medicine πŸ™„ So today, I could finally eat at least a dry roll. Dinner tonight: Sweet Potato & Red Lentil Thai Peanut Curry with Tofu, served over Millet & Brown Rice Ramen (@lotusfoods).
β€’ 4 small sweet potatoes, diced small β€’ 1 cup red lentils β€’ 4 cups low-sodium vegetable broth β€’ 1 red onion, diced β€’ 4 oz Thai red curry paste β€’ 1/2 cup coconut milk β€’ 1/4 cup powdered peanut butter (@bellplantation PB2)
β€’ In a sautΓ©e pan, sautee the onion in a few Tbsp veggie broth β€’ Add the sweet potatoes and 1 more cup of veggie broth, bring to a simmer and cover for 5 minutes β€’ Add the lentils and 2 more cups of veggie broth, bring to a simmer and cover for 10 more minutes β€’ Add the red curry paste, the rest of the broth, coconut milk and PB2, simmer for 5 more minutes or until the sweet potatoes and lentils are soft β€’ Serve over Millet & Brown Rice Ramen cooked as instructed on the package (4 minute cooking time). Spaghetti Squash Primavera for dinner tonight. Served with sautΓ©ed red onion, bell pepper, broccoli, garlic and arugula. Topped with tomato sauce and pine nuts.

Do you know the trick to getting longer, more spaghetti-like squash strands? Cut the squash widthwise, and roast it in rings rather than in halves. When you slice the squash lengthwise, you're cutting each strand in half, as they run around the diameter of the vegetable. Cut 1.5-inch widthwise slices (carefully!). Scrape out the seeds, roast at 425F on a lined pan for up to an hour (until the squash is soft), then pull the spaghetti squash strands away from the skin with a fork. Toss with tomato sauce and top with sautéed veggies and a sprinkling of pine nuts. Yum! 😊⭐️

β€’ 1 cup frozen mango chunks β€’ 1 cup frozen blueberries (today I also used mulberries in the mix) β€’ 1 cup frozen cherries β€’ 3/4 cup plain unsweetened almond milk β€’ 1 tsp vanilla extract β€’ 1 Tbsp hemp seed β€’ 2 Tbsp vegan vanilla protein powder β€’ Blend 'til smooth β€’ Transfer to a bowl and top with Ezekiel cereal or your favorite granola.

Love having a big smoothie for breakfast! They are pretty much healthy fast food, super easy to make, tasty and full of nutrients!!! For me they are perfect to get all the greens that aren’t my favourites (guilty of not being a huge fan of spinach). Combined with banana, mango, pineapple and other fruits I hardly notice their flavor and increase my daily greens intake significantly. Do you also have any tricks to help yourself get your daily portion of greens?

Love having a big smoothie for breakfast! They are pretty much healthy fast food, super easy to make, tasty and full of nutrients!!! For me they are perfect to get all the greens that aren’t my favourites (guilty of not being a huge fan of spinach). Combined with banana, mango, pineapple and other fruits I hardly notice their flavor and increase my daily greens intake significantly. I discovered a new vegan shop in Vienna! The location is linked to this photo. They have a very delicious rice based ice cream to which you can add various fruits, nuts and other things. They sell quite a few things without packaging, so you either take paper baggie or you bring your own jar. I bought there beans and raw protein shake and all was great. Thumbs up!
