The Plant Proof Kale + Sprout Tempeh Bowl Recipe: You may of noticed I’ve been starting with quite a few ‘bowl’ variations + this is 100% intentional! While I could make things more complicated & throw a 15 plus step recipe at you that’s something you can learn later. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Understanding how to mix + match bowls & prepare them in approx 20 min or less is what I think will benefit you most while transitioning to a plant based diet or improving your current plant based diet. Let’s work together to get the basics right first & understand the nutritional elements of what we are fuelling our body with before we get fancy 🙏🏼🌱💪🏼
Step 1- choose your base. Quinoa, brown rice or wild rice are my preferences. Cook per instructions on packet. Today I’ve used quinoa - it’s loaded with protein, dietary fibre, magnesium, folate and zinc. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Step 2- select a Tempeh. Slice or cube and season with cumin, smoked paprika & tiny bit of olive oil. I’ve gone for a chickpea Tempeh however a soy Tempeh is equally as good. Bake for 15 minutes and turn halfway. This Tempeh is a good source of protein, probiotics, B12, calcium, magnesium and iron. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Step 3- heat black beans & add in 2 tbsp of cumin. Black beans are a good source of protein, fibre, magnesium, calcium & iron. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Step 4- flash heat kale. If you’ve read my other posts you would know Kale is high in calcium and iron! I always cook a little and squeeze lemon or lime over it when serving. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
Step 5- add all of the above into a bowl with the base at the bottom as it’s heaviest. On top add raw spinach, baby tomatoes, avocado, hemp seeds, sweet pea sprouts, nutritional yeast powder, Himalayan salt + pepper & a green chilli sauce if you like it hot. Squeeze lime over the top of your greens (always). Homemade cashew cheese can always be added as well pretty much to any bowl! ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
You’ll quickly learn that having quinoa, rice & spices on hand makes it very easy to do your weekly shopping & whip up delicious bowls! These ingredients last ages & are super cheap 💪🏼🌱
Want to know how to get your kids to help you clean more? You need to buy a cleaner that is 1. safe enough to use around little ones, 2. Smells spicy and yummy, 3. Gentle enough for them to spray on everything, and 4. Mixes with water in a fun, easy to use spray bottle. Gabriel loves cleaning up after his sticky handed sister for me 😂
Breakfast for dinner anyone?
These waffles and veggie hash are super easy to make and totally oil free!
For veggie hash:
•2 medium sized potatoes (From Quonset View Farm of course 😉)
•1 medium onion, thinly sliced
•1 clove of garlic
Cook above ingredients in vegetable broth over medium heat until potatoes are tender.
•1 cup frozen broccoli/cauliflower mix
•1 cup frozen spinach
Cook above ingredients in vegetable broth over medium heat until warm all the way through.
👉combine potato mix &veggie mix for hash. (I also added kidney beans for some extra protein 💪🏼)
For whole wheat waffles:
•1 cup whole wheat flour
•1 Tbsp baking powder
•pinch of salt
•3/4 cup almond or soy milk (I used half of each)
•2 Tbsp pure maple syrup
•2 Tbsp applesauce
•a few dashes of cinnamon
1. Mix dry ingredients together thoroughly.
2. Slowly whisk in wet ingredients until mixture is a batter consistency.
3. Spray both sides of waffle maker with non stick spray & pour on batter.
(This makes 2 Belgian style waffles)
I’m not a coffee drinker, but I wanted a coffee-like beverage to complete my breakfast dinner so I used a roasted grain beverage instead.
👉1 tsp Kaffree Roma with hot water and a little rice milk.
