The Plant Proof Kale + Sprout Tempeh Bowl Recipe: You may of noticed I’ve been starting with quite a few ‘bowl’ variations + this is 100% intentional! While I could make things more complicated & throw a 15 plus step recipe at you that’s something you can learn later. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Understanding how to mix + match bowls & prepare them in approx 20 min or less is what I think will benefit you most while transitioning to a plant based diet or improving your current plant based diet. Let’s work together to get the basics right first & understand the nutritional elements of what we are fuelling our body with before we get fancy 🙏🏼🌱💪🏼

Step 1- choose your base. Quinoa, brown rice or wild rice are my preferences. Cook per instructions on packet. Today I’ve used quinoa - it’s loaded with protein, dietary fibre, magnesium, folate and zinc. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
Step 2- select a Tempeh. Slice or cube and season with cumin, smoked paprika & tiny bit of olive oil. I’ve gone for a chickpea Tempeh however a soy Tempeh is equally as good. Bake for 15 minutes and turn halfway. This Tempeh is a good source of protein, probiotics, B12, calcium, magnesium and iron. ⠀⠀⠀⠀⠀⠀⠀⠀⠀

Step 3- heat black beans & add in 2 tbsp of cumin. Black beans are a good source of protein, fibre, magnesium, calcium & iron. ⠀⠀⠀⠀⠀⠀⠀⠀⠀

Step 4- flash heat kale. If you’ve read my other posts you would know Kale is high in calcium and iron! I always cook a little and squeeze lemon or lime over it when serving. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
Step 5- add all of the above into a bowl with the base at the bottom as it’s heaviest. On top add raw spinach, baby tomatoes, avocado, hemp seeds, sweet pea sprouts, nutritional yeast powder, Himalayan salt + pepper & a green chilli sauce if you like it hot. Squeeze lime over the top of your greens (always). Homemade cashew cheese can always be added as well pretty much to any bowl! ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀

I was bad today and last night. Last night my boo and I made pizza. Today, I made some nachos. This was so so good! I got the cheese from Trader Joes. This consists of tortilla chips, vegan mozzarella cheese, guacamole, salsa, jalapenos, olives. It was so delicious! I will be eating completely raw for the next few days to offset this :-) I'm feeling really fat right now LOL

My heart was breaking tonight.
.
After loading up wood outside for the stove, I realized Jaydin had left the downstairs door open for me so I could bring the wood inside afterward. .
So sweet.
.
I didn’t really think anything of it until I was working and didn’t have a kitty nearby or ON me.
.
We started searching around the house and couldn’t find her anywhere. .
Then I started to panic.
.
She is so small and it is so cold out, she doesn’t have a name just yet, or feel totally comfortable with her surroundings AND we have wild MEAN cats outside that would most likely kill her 😭
.
After about a half hour of looking outside and coming back to see if the boys had found her...
.
They hadn’t.
.
I sat down at my desk to cry it out and then all of a sudden I had an INTENSE feeling in my gut to check the top cabinet in my desk above my computer (the door is always just slightly open)
.
I don’t know HOW she fit inside, but I was so grateful to see her beautiful eyes staring back at me when I slid the door across.
.
Now to snuggle and love her up and finally FINALIZE a freaking name already for her.

Felt like such an ass calling kitty out all around the neighbourhood 🙈

Breakfast for dinner anyone?

These waffles and veggie hash are super easy to make and totally oil free!
🥞
For veggie hash:
•2 medium sized potatoes (From Quonset View Farm of course 😉)
•1 medium onion, thinly sliced
•1 clove of garlic
•black pepper
👇
Cook above ingredients in vegetable broth over medium heat until potatoes are tender.
•1 cup frozen broccoli/cauliflower mix
•1 cup frozen spinach
👇
Cook above ingredients in vegetable broth over medium heat until warm all the way through.
👉combine potato mix &veggie mix for hash. (I also added kidney beans for some extra protein 💪🏼)

For whole wheat waffles:
•1 cup whole wheat flour
•1 Tbsp baking powder
•pinch of salt
•3/4 cup almond or soy milk (I used half of each)
•2 Tbsp pure maple syrup
•2 Tbsp applesauce
•a few dashes of cinnamon
👇
1. Mix dry ingredients together thoroughly.
2. Slowly whisk in wet ingredients until mixture is a batter consistency.
3. Spray both sides of waffle maker with non stick spray & pour on batter.
(This makes 2 Belgian style waffles)

I’m not a coffee drinker, but I wanted a coffee-like beverage to complete my breakfast dinner so I used a roasted grain beverage instead.
👉1 tsp Kaffree Roma with hot water and a little rice milk.

I'm making it easy for a bath to become a reality during the cleanse.  I'm creating a station: large jar of epsom salt and bottles of lavender, rosemary and geranium essential oils.  I'm setting the space up with my bathrobe, slippers, lotion, neck rest pillow/towel, clean floor mat and some flowers.  I've always wanted a quiet space where I can decompress alone.  Pretty sure my kids will stay away if they know I'm NAKED! . . . .

This pizza is really amazing. It was a game changer in our household - I wish I had shared all of the amazing white pizzas I created in the moment!!!⠀

Recipe:⠀
⠀
Crust (makes 2 pizzas):⠀
3.5 cups unbleached all-purpose flour⠀
1/2 cup whole-wheat flour⠀
1/4 cup ground flax seed⠀
1 package yeast (2.5 Tbsp)⠀
1.5 cups warm water⠀
3 teaspoons maple syrup⠀
1 teaspoon salt⠀
⠀
Proof (mix and let sit) water, yeast, and maple syrup for about 5 minutes until foam forms on top. Add to mixer with flour and flax seed mixture, add salt. Knead until smooth. Cut into 2, roll into balls and cover for 20 minutes to rest. Stretch dough to desired size and thickness for pizza.⠀

1/2 cup coconut milk⠀
garlic powder⠀
dried oregano⠀
dried basil⠀
⠀
Pour coconut milk over dough. Sprinkle with garlic powder, oregano, and basil.⠀

Chopped fresh broccoli - 1 to 2 cups⠀
⠀
Pre-heat oven to 425 degrees F and bake 25-30 minutes until white sauce has set in the center.⠀

Four ingredient vegan banana & oat pancakes with mixed berries for brekkie this morning 🥞 The recipe I used was: 1 cup of oats, two ripe bananas, 1/2-3/4 cup of unsweetened soy (or any plant) milk & 1/2 a teaspoon of baking powder. Blend in a nutribullet or food processor. You may need to add more oats/milk depending on the consistency. I used coconut oil in the pan & cooked for a few minutes on each side. Then I heated up a handful of frozen mixed berries in a pan & when warm poured over the pancake stack.
