Lazy high protein, soy free, kale tacos 🌮 🌲The "meat" is carmelized onions in EVOO with mushrooms, pinto beans, lentils, corn, peas, carrots, brown rice, and bell peppers 🌶Seasoned with veggie bullion cubes and cilantro. Tastes like ground beef tacos without killing cows.
The mush goes great on potatoes, nachos, kale, burritos, mold with chick pea flour to make burgers or meat balls, top with rice 🍚 oooh while I'm thinking about it, this will make a great food truck staple. Imagine the variety of dishes you could make, and the happy vegan shmoney 💰💰💰💰 send me some!! 🌲
Vegan meals ready to eat is the hot new emerging market. Just ask Tofurkey, Beyond Burger and Gardein 💰 #govegan
💥How much fruit is too much?💥
🦄Some people say that because of the Fructose in fruit you shouldn't eat too much of it and balance it with glucose. Let's take a look at this idea (hint: it's whack😂)
🐳Let's be clear: the nutritional problems of fructose come when they are added to foods, whether in form of sucrose, high-fructose corn syrup etc.
🦋When it comes to fruit you don't have to worry about the amount: a study tested high amount of fruit consumption (20 servings a day) and participants showed no adverse effects (and possible benefits) for bodyweight, blood pressure, insulin and lipid levels after 12-24 weeks.
🐛Before you go full rampage on fruit keep in mind that fruit still has calories and to reach your goals you gotta keep them in mind. But overall fruit is always a great choice and I hope everyone that is holding back their fruit intake because they fear negative effects now knows better☺️
🍇🍉🍌🍏🍐🍋🥑🍍🍑🍒 Eat them and strive! -
❓How much fruit do you eat daily? And what's your fave fruit❓
Go start the week right! Monday power🙏🏻🌿
It’s so easy to get swept up in the overwhelm of information in the wellness world today; to stress about calories, how much to eat and when to eat for optimal health. I definitely used to be like this, constantly nit picking at the small details like how much protein, carbs and fat I was eating, and how many calories I was consuming in a day. If you’ve experienced this you probably know how energetically and emotionally draining it can be to constantly be thinking and worrying about the numbers when it comes to what you eat.
But then I discovered that shifting my perspective and focusing on WHAT I was eating instead of HOW MUCH completely transformed my relationship with myself and my body.
I don’t believe counting calories helps people to cultivate a healthy relationship with their food because it can create a mental obsession and lead to restrictive food choices. Not all calories are created equal either. Unhealthy food is unhealthy food, no matter how many calories it has. Calories from nutrient-dense foods versus nutritionally-poor foods will have different effects on the body. Nutrient-poor foods will cause hormonal dysfunction, spiking insulin levels, increase cravings, suppressing satiety signals and encouraging overeating. Healthy, nutrient-dense foods will keep hunger at bay, help maintain stable blood glucose levels, reduce cravings, and allow your brain to signal to your stomach that it's full looking at how much colour, vitamins, minerals and fibre there is.
There may be a time in someones life where counting calories is helpful (e.g. overcoming an eating disorder) but for the most part I recommend counting nutrients over calories
If you work on shifting your focus on consuming fresh, whole, plant foods everything else naturally falls into place 🍑🍌🍉🍏🍓🥕

Came down with a bad cold this weekend😷😓Since fruit is too acidic for my sore throat I depended a lot on creamy foods like this yummy meal of mashed yam and mushroom gravy👅👅This was SO good and a healthy change from just eating popsicles and mint tea😋 Recommend going swimming in the ocean or a lake, hikes or runs in the fresh air and lots of sleep to heal a cold👌🏼

6/25/17 Sunday supper. Have been MIA due to nephew being in town. Wanted to take him out to different places so that kept me away from cooking at home. Tonight I got to finally make a good homemade meal. I also experimented and made a very traditional stewed pork dish using plant based ingredients. The fam bam loves it! Also made cooked to death green beans and tallie girl made a steamed Brussel sprouts and potato dish. Now planning to watch Collateral Beauty with the family. May need tissues this. 😢
Baking was my first true love, inspired by my mum and my Nan. Every time I went to Nan's house the first thing we would do was to ask what we were baking today (the second was to ask Nan to set us up with her gauche paints and some of her special art paper). A lot of the time we would bake a carrot cake, often crepes and occasionally a chocolate fudge cake or Greek shortbreads. I remember so many times sitting up at the kitchen table helping mum to bake (and when I say helping I really mean licking the beaters and dipping my finger in the bowl every time her back was turned 😂). My Nan and my Mum were the ones to inspire my creativity and I'm so thankful for that. After I studied nutrition I realised I could re-invent any recipe to make a much healthier version (I want to have my cake and eat it too you see 😉). Once you have a few recipes under your belt and you become more confident you can start to tweak and change up ingredients. It's the best of fun ❤️ Who is your inspiration in the kitchen?
6/25/17 Sunday afternoon. Had a lovely morning of brunch and walk on the beach with the fam bam. Had relatives stay on and off since end of May and today we are back to just us! Teaching girlie 2 some more yummy foods she can make in her apartment/dorm. This is one of her favs. Simple steamed Brussels sprouts and potatoes seasoned with garlic powder, salt, pepper, olive oil, and red pepper flakes. She has so many great childhood memories eating this. One of them is waiting for big sis taking her star testing in a hotel. This along with fruits was her snacks. Not sure why she has such fond memory of this day. I think she was just 6. 👶🏻
Throwback to when I made the best pizza EVER. Here's a deep dish pizza from @veganricha blog😍🤤 with homemade everything! The filling is a mixture of peppers, mushrooms, spinach and kale, homemade crust, easy homemade marinara and melty cashew mozzarella on top! This photo does not do this pizza justice but it's in a cast iron skillet that is about 3 inches tall❤️
Today's lunch was:
Leftover Grains Salad Bowls
1 shallot, minced
1 clove of garlic, minced
1/4 cup rice vinegar
2 tbsp of soy or tamari sauce
2 tbsp water
1 tbsp lemon juice
2 tbsp syrup
1/4 cup of your favourite oil
4 cup leftover cooked grains, cold or at room temperature, rice, quinoa..
4 cups thinly sliced cabbage
8 cups of chopped spinach or romaine lettuce
4 sliced radishes or beets
2 carrots, grated or cut into matchsticks
1 cucumber cut into matchsticks
Whatever you have, sesame seeds, sprouts, toasted nuts...... 1. Make the dressing: mix everything together in a glass and set aside
2. Make the bowl: Scoop a cup of grains into each 4 bowls, layer one quarter of the cabbage, spinach, cucumbers, carrots, radishes. Mix that dressing again and drizzle some over, than top that with whatever you want! Serve right away! .
Smoothie power! 🌿☀️🍌🌷 I love basil in smoothies, it adds this amazing freshness to every sip:) it also grows so fast so if you have a porch, patio or window pot I strongly suggest growing your own (pictures coming soon of some flyaway basil seeds taking root in the moss between my patio stones😂) . If you do already have some plants let me know in the comments below👇🌱
About 3mo. ago I decided to cut meat out of my diet (honestly something I thought I'd never attempt to do lol) it's been a very successful change so far. I'm not perfect, but I really try to be more conscious. I decided to do this not only for my health, but also for the environment. It's our job to take care of this beautiful planet we live on. Stanford U put out a great journal article explaining how animal agriculture is the main culprit behind climate change (link is in bio if you'd like to become more edumacated) If we all try to make small changes in our daily lives it will add up to big changes worldwide 😊 this is what I picked up food shopping today (first fully vegetarian grocery "haul" ..though I have eggs and fish at home)
Grilling out for my birthday and my husband's loaded Gardein burgers are 💥👏🏼
1 c cashews soaked 2 hours in boiling water, rinsed
1/2 of a roasted red pepper
1/2 cup water
3 tbsp ketchup
2 tbsp mustard
1/2 tsp smoked paprika
1/2 tsp garlic powder
1 date, pitted
Sea salt to taste
Blend everything in a Vitamix/high speed blender until smooth.

It may be cold and dark outside, but that doesn't stop this plant lady from grabbing more.
This green guy is my new plant, though apparently I have enough already 😂😂😂
People, like plants, still need sunshine and fuel to keep growing even when it's cold out👌🏻
