It’s so easy to get swept up in the overwhelm of information in the wellness world today; to stress about calories, how much to eat and when to eat for optimal health. I definitely used to be like this, constantly nit picking at the small details like how much protein, carbs and fat I was eating, and how many calories I was consuming in a day. If you’ve experienced this you probably know how energetically and emotionally draining it can be to constantly be thinking and worrying about the numbers when it comes to what you eat.

But then I discovered that shifting my perspective and focusing on WHAT I was eating instead of HOW MUCH completely transformed my relationship with myself and my body.

I don’t believe counting calories helps people to cultivate a healthy relationship with their food because it can create a mental obsession and lead to restrictive food choices. Not all calories are created equal either. Unhealthy food is unhealthy food, no matter how many calories it has. Calories from nutrient-dense foods versus nutritionally-poor foods will have different effects on the body. Nutrient-poor foods will cause hormonal dysfunction, spiking insulin levels, increase cravings, suppressing satiety signals and encouraging overeating. Healthy, nutrient-dense foods will keep hunger at bay, help maintain stable blood glucose levels, reduce cravings, and allow your brain to signal to your stomach that it's full looking at how much colour, vitamins, minerals and fibre there is.

There may be a time in someones life where counting calories is helpful (e.g. overcoming an eating disorder) but for the most part I recommend counting nutrients over calories

Came down with a bad cold this weekend😷😓Since fruit is too acidic for my sore throat I depended a lot on creamy foods like this yummy meal of mashed yam and mushroom gravy👅👅This was SO good and a healthy change from just eating popsicles and mint tea😋 Recommend going swimming in the ocean or a lake, hikes or runs in the fresh air and lots of sleep to heal a cold👌🏼

6/25/17 Sunday supper. Have been MIA due to nephew being in town. Wanted to take him out to different places so that kept me away from cooking at home. Tonight I got to finally make a good homemade meal. I also experimented and made a very traditional stewed pork dish using plant based ingredients. The fam bam loves it! Also made cooked to death green beans and tallie girl made a steamed Brussel sprouts and potato dish. Now planning to watch Collateral Beauty with the family. May need tissues this. 😢

Sunday raw ginger cookie making 🍪
There’s been a few cookies going on lately 😊 Must be a winter thing. I love the flavour of ginger so much. Fresh ginger aids digestion and helps to remove dampness in the body.

Raw Ginger Cookies
.
15g fresh ginger
1/4 cup raw sundried white mulberries
1/4 cup desiccated coconut
1/2 cup activated buckwheat
1/4 cup medjool dates (pitted)
2 Tbsp raw sacha inchi powder
.
METHOD
Blend together in a high powered blender.
Roll into a large ball, then press down between two sheets of baking paper to reduce height.
Use a rolling pin, rolling backwards and forwards one way and then the other, until it is rolled flat, to desired cookie thickness. Use your chosen cookie cutter shape to cut biscuits.
Leave out for a little while for the biscuits to dry a little and become a little crunchier, or store in a sealed container in the fridge or freezer.

Protein smooooothie bowl this morning 🍫🍫
Baking was my first true love, inspired by my mum and my Nan. Every time I went to Nan's house the first thing we would do was to ask what we were baking today (the second was to ask Nan to set us up with her gauche paints and some of her special art paper). A lot of the time we would bake a carrot cake, often crepes and occasionally a chocolate fudge cake or Greek shortbreads. I remember so many times sitting up at the kitchen table helping mum to bake (and when I say helping I really mean licking the beaters and dipping my finger in the bowl every time her back was turned 😂). My Nan and my Mum were the ones to inspire my creativity and I'm so thankful for that. After I studied nutrition I realised I could re-invent any recipe to make a much healthier version (I want to have my cake and eat it too you see 😉). Once you have a few recipes under your belt and you become more confident you can start to tweak and change up ingredients. It's the best of fun ❤️ Who is your inspiration in the kitchen?

6/25/17 Sunday afternoon. Had a lovely morning of brunch and walk on the beach with the fam bam. Had relatives stay on and off since end of May and today we are back to just us! Teaching girlie 2 some more yummy foods she can make in her apartment/dorm. This is one of her favs. Simple steamed Brussels sprouts and potatoes seasoned with garlic powder, salt, pepper, olive oil, and red pepper flakes. She has so many great childhood memories eating this. One of them is waiting for big sis taking her star testing in a hotel. This along with fruits was her snacks. Today's lunch was:
Leftover Grains Salad Bowls 
Serves 4

Dressing:
1 shallot, minced 
1 clove of garlic, minced 
1/4 cup rice vinegar 
2 tbsp of soy or tamari sauce
2 tbsp water
1 tbsp lemon juice 
2 tbsp syrup 
1/4 cup of your favourite oil 
Salad:
4 cup leftover cooked grains, cold or at room temperature, rice, quinoa..
4 cups thinly sliced cabbage 
8 cups of chopped spinach or romaine lettuce 
4 sliced radishes or beets
2 carrots, grated or cut into matchsticks
1 cucumber cut into matchsticks

Toppings: 
Whatever you have, sesame seeds, sprouts, toasted nuts...... 1. Make the dressing: mix everything together in a glass and set aside
2. Make the bowl: Scoop a cup of grains into each 4 bowls, layer one quarter of the cabbage, spinach, cucumbers, carrots, radishes. Mix that dressing again and drizzle some over, than top that with whatever you want! Serve right away! .

1 c cashews soaked 2 hours in boiling water, rinsed
1/2 of a roasted red pepper
1/2 cup water 
3 tbsp ketchup
2 tbsp mustard
1/2 tsp smoked paprika
1/2 tsp garlic powder
1 date, pitted
Sea salt to taste

Blend everything in a Vitamix/high speed blender until smooth.
