happy tuesday!! one of the things i love most about instagram and communities like @toneitup is that i get to know so many amazing women who i probably wouldn’t have come into contact with otherwise! it’s honestly been the biggest blessing to be in such a positive, supportive, and health-minded environment. it’s so much fun when i see and get tagged to jump in on the little challenges to get to know you all better, so today i figured i’d share my “5 random facts about me”😸
1. my favorite strength training move is the deadlift, specifically the sumo deadlift. Because nothing makes me feel more powerful💪🏼
2. my eyes change color depending on what i’m wearing, from green to brown to gray-ish (does that mean they’re hazel? I never know🤷🏻♀️)
3. my husband ryan and I have been together for 10.5 years, but only married for 3.5. we knew we’re stuck together pretty early on😂 but decided it was best to wait until after we graduated from medical school to tie the knot 👫
4. speaking of ryan, we’re actually in the process of building our first home, and it’s going to be a tiny home (about 400sq feet!!), and we are completely stoked about it (except for the part about downsizing our closets... i think he likes shoes as much as I love my activewear)
5. 3 of my buckets list items include: hiking to Everest base camp, hiking Machu Picchu, and bungee jumping in either New Zealand or Whistler.
I have always loved leftovers! All you have to do is reheat food which has already been prepared, it takes almost no time, and it still tastes delicious!
Here I have some leftover Vegan Pumpkin Potato Adobo Tamales mixed together with some Chunky Vegan Queso topped with tomatoes, cilantro, salsa, hot sauce, and fresh lime juice. Amazing!
I also love combining foods together to make new combinations and this is definitely a winning one.
When you have delicious food in your fridge, it makes it much easier to produce delicious, compassionate meals whenever you want, without having to prepare something from scratch.

Enjoying some sweet and savory sprouted multigrain toast this Tuesday morning! 😛 The sweet one: sunbutter + banana + cocoa nibs + @foragerproject Vanilla Cashewgurt. The savory one: avocado + our @cultured.guru Wild Fermented Kimchi + fresh arugula from the garden (that made it through all the freezes). 🙌🏻
BALANCEEEEE. I’ve been in Germany for a little over 2 weeks now, I haven’t lifted a single weight or calculated how much I’ve been eating. I’ve been practicing more intuitive eating and yoga 🧘🏽♀️ yet, I’m still the lowest weight I’ve been in awhile... I’m not so much focused with how flat my tummy is, or what I can/cannot eat. I’ve been focusing on eating a bigger abundance of fruits, nuts, and veggies 🌱 and just going with the flow of life here (also treating myself to german bread every now and then #noregrets ) but, I’m enjoying myself and that’s all that matters. I’m so fortunate to have the opportunity to live in another country for a whole yearrrrr and experience the culture. Life is sooo much more than counting calories, macros, and workouts, it’s about the memories you make and adventures you get to experience in your lifetime. Be patient with yourself. Take care of your body but don’t focus all of your energy in looking a certain way. Alsooooo - always here to help you get started on living a healthy and balanced lifestyle ✨😘 #balance

I love cooking!! 3 years ago this would have been a sandwich with spreads and other crap, that would have spiked my sugars and left me feeling hungry for more in only an hour!
These days I'd rather eat plant based meals in larger quantities that are better for my stomach, which in turn means better energy, better skin and better health.
It wasn't easy at first to ditch the foods I believed I loved, it took perseverance and determination to force some of the foods down me.... avocado? Spinach? 🤢🤢 Now I'm all about the greens and I am super grateful that I stuck with it.
I now manage my weight way easier, I haven't been on the scales in 3 years and I feel fantastic.
With the support of arbonnes nutrition over the past 10 months my body and mind has gone from strength to strength and I have learned even more about what my body ACTUALLY needs!

Enoki. At first glance I didn't have any clue that these guys were enoki mushrooms. Im used to the long white ones you find in stores. The farmer explained to me that conventionally grown enoki is deprived of fresh air and light and grown on a string. So they end up tall, white and with tiny caps. These babies look much more wild. Had them on soup last night and they pack much more flavour (and I'm guessing nutrients too). 🍄
My beautiful vegan hazelnut and chocolate brownies.
I made these yesterday and they have nearly all gone already. Heavy, rich and moreish, their ingredients are the only clue to their nutrient density.

1 can drained black beans
About 3 very ripe bananas (I used some I had previously frozen)
Half a cup of dessicated coconut
1 cup of raw cacao
Half a cup of ground chia and linseed mix
Half a cup of wholemeal spelt flour (or gf flour of your choice)
A tablespoon of tahini
A spoonful of coconut oil
100g of whole hazelnuts
Pinch of pink himalayan rock salt
Dash of vanilla extract
About 100g of 70% cocoa chocolate chips
Mash bananas and beans.
Stir in all the ingredients and mix well.
I used my silicon cupcake mould to make a dozen brownies and baked at about 180° for about 20 or 25 mins before turning out.
