I've become aware of the fact that I hardly ever post photos of my lunch or dinner. I think that's because I'm only 17 so I take my lunch to school and my dinner is often cooked for me. So today seen as it's Saturday, I decided to make a delicious lunch for you all to see. I made this a while back with a friend and it was so delicious that I decided to recreate it. Roasted eggplant and pumpkin on sourdough toast with avocado, sticky balsamic reduction and some lettuce from my garden. All I did was roast the pumpkin and eggplant with a drizzle of lemon juice and while that was in the oven I cut up the lettuce, prepped the avocado, cooked my toast and put some balsamic vinegar in the microwave for 2 minutes to reduce. I love the sticky balsamic glaze that you can buy from the supermarket however as it has sugar in it I've started making my own and it pretty much tastes the same, just a little less sticky 😊 after I took this photo, I topped my toast with some extra greens 🌿 thank you so much for reading my post, I appreciate it so so much 💕
Also shout out to this superhero, fresh off the yoga teacher presses and swooping in to teach her first @f.i.t.4all class with basically zero notice (👼). I've met a lot of incredible humans through fitness/F4A, but this was the first time I actually got to bring someone in from another part of my life (#MusBforever ) to experience the warm & fuzzies I feel teaching at our community sites. Not to mention she absolutely killed it, and I wanna take her class over and over 😌 Can't wait to have ya back soon, Katie! 💕

When the squad is gonna go for drinks but ends up getting mozzarella sticks and shakes instead 👌👌👌 A well-deserved and much needed trip to @champsdiner after a fun, kinda silly, kinda crazy @f.i.t.4all event with @emilylho & @katierose_nunziato was just what we all needed. The new mozz sticks were everything I dreamed of and more. Also got the reuben (it was GOOD) and yall, I am tired. But in a way that feels really satisfying. Awesome night last night at Floriade Fringe, a celebration of Canberra's music, theatre, dance, food, live art and installations. I loved all the pretty lights, creative shows and Dr Graham's Blow Up Science Show ... so much fun. I literally tell myself daily that I'm not the kind of chick who would let my excuses win. And then I go and don't let 'em. 🤷🏼♀️🤷🏼♀️ For example, I could let any of these win: I'm on vacation, I had ice cream and margaritas and drank beer all day long, it's 10:00 pm, I have to get up earlyyy, what's one extra off day gonna hurt?😕😫 So basically, the usual real life excuses I hear people try to give me constantelyyyy!
If you're waiting for a perfect set of conditions to arise when you DONT have any events, weddings, trips, shitty eating days, early mornings.....ugh. You're gonna be waiting foreverrrr! ⌛️⌛️⌛️ If your fitness routine doesn't travel well or jive with real life situations like the ones I named....you need a new fitness routine!
Despite all that, I logged into my app, picked a 16 minute Tony Horton ark workout, and got it done. 🙌🏻👌🏼 Did it feel good?! Not really! But then neither does going to bed knowing you let your excuses win! 🤷🏼♀️👊🏼👊🏼 If you need a fitness routine that is doable even in imperfect (AKA real LIFE) situations, holler at me! 📲📲

I love this video because of the fact that I'm finally pushing past that ugly 135 number I've been looking at for 2 years. I always knew that I was stronger than that, yet I was too afraid to pick up any more weight. I don't know why I can put 175 lbs. on my back and drop it down low, but I'm afraid to pick up some weight off the floor 🤔
I was going to cut out the first part of this, but all that fidgeting going on is me trying to convince myself I'm not strong enough, or it's gonna be too heavy for me. The only thing that helps me is to just start lifting in the middle of these negative thoughts. It has been a mental block for me for far too long. Get out of the rut of convincing yourself you're going as heavy as you can when you know deep down you're selling yourself short. Your mind is always weaker than your body ever will be❕
I have a rule. I wait for my husband to eat dinner. It's the one time of day where we get time to spend together and I absolutely will wait no matter what at this point. That was absolutely tested tonight as I was super hungry and my husband didn't finish work until 9. I was patient and drove to get him and luckily we got some pizza and the wait was worth it. Always so happy that this place doesn't skimp on the veggies. 🤤
I am so sorry that I'm behind on answering comments. Life has been incredibly stressful. I'm happy it's the weekend now because I'm just in a desperate need to relax. 😑
My dinner tonight - Bang-Bang Cauliflower! 😋 Oddly enough, I very rarely plan out what I'm going to make myself for dinner. I don't think about it while I'm at work, and typically I listen to Podcasts 🎧 during my commute (shout-out to you @richroll @patflynn @altucher !). So I really don't think about what I'm going to make until after I walk in the door, play with the dogs 🐶🐶, say hi and chit-chat with whoever's home 🏡 and change out of my work clothes. Then I look around and see what's in the fridge and pantry, and whatever hits me, is what I go with. 🤷♀️ Tonight I saw the leftover cauliflower from the Buffalo Cauliflower that I made a few nights ago and bam! (Or maybe it was Bang!? 😏) I knew that I wanted some Bang-Bang Cauliflower. This was healthier than the Buffalo from the other night in that it was baked, not fried. It was so good, I had to force myself to stop ✋ eating it! Carnivore son came home and polished off the left-overs stating "this is good, like REALLY good". 🌱👍🌱
He also said the other day " I don't understand people who say "Oh, that's vegan? Eww." and they won't try it. If it tastes good, I don't care what it's made of, I'll eat it! " 🤣🤣🤣 I actually think it's more like "oh there's something already prepared and I don't have to cook anything? Great!" #equalopportunityeater 🌱😋🌱😋🌱😋🌱
Dinner prep! Tonight's meal was sooooooo good: MISO-HERB TOFU BOWL from @greenchef
Even the meat-lover in the family loved this! Tofu marinated and then roasted with veggies. Black lentils + almonds for extra protein. Apricots + currants to add sweetness...and a miso herb sauce that was 😘😘 And it took all of 30 minutes start to finish. Eating real food...whole foods...veggie heavy...is NOT hard or boring. It just takes creativity.
