My overall outlook on working out has changed over the years. It shouldn't be something you dread, do to burn calories or look a certain way. In relation to my recent post about mental health, I can truly say that it's an unhealthy mentality. I look at fitness two ways now; firstly, like an athlete training for races. They dont do abs-workouts to look good for summer. They train explosively, lift heavy weights, do intervals or long distance running - whatever fits their particular sport. They don't train to purposely LOOK a certain way but to PERFORM a certain way. Likewise, I train to improve and challenge myself (and because it's fun 😝). Secondly, which contradicts the previous statement, I never feel bad if I go 1, 3 or even 7 days without working out. If you feel like you have to workout every day, try to challenge that negative voice and go have a rest day. Always listen to your body - strive for balance. Like running a half marathon one day and eating a bucket of ben&jerrys the following day 😜✌🏻💚

Still hanging on to summer with some BBQ pulled jackfruit and garlicky kale on the side. For those of you who voted in my story, I have to say, I think I prefer pulled oyster mushrooms over jackfruit! Som toppings bruger jeg hampefrø, som har 34% protein i sig + græskar- og solsikkerner som  generelt har et højt indhold af essentielle aminosyrer. Især bananerne giver energi, da de hurtigt bliver omsat til anvendelig energi. -frokost: en masse røde linser kogt i hakkede tomater eller eksempelvis quinoa, som begge er gode proteinkilder og jeg tilføjer altid forskellige grøntsager som ærter og bønner til disse retter. -aftensmad: ris/pasta/kartofler på en wokpande med forskellige blandinger af grøntsager ]

Så længe man som veganer spiser nok og varieret, er det nemt at få dækket sine (makro)næringsstoffer. Nøddesmør som peanut butter og alle former for frø er fyldt med proteiner og fedtstoffer. Jeg spiser en masse frugt som giver mig hurtig energi inden træning. Spinat og andre grøntsager til hvert måltid er en nem måde at sikre sig, at man får dækket alle sine behov. 
Det er især vigtigt at spise varieret - så ikke kun én type bønner/linser, men flere forskellige, så man på den måde får alle de essentielle aminosyrer - kort sagt; spis nok og varieret 💪🏻

For the soup: butternut squash, onions, garlic, coconut milk, vegetable stock, nutmeg, cinnamon, salt, pepper
For the toppings: arugula, smoked paprika, pepitas, olive oil
Method: roast your veggies (about 350F until soft and slightly browned), place in a blender with stock and coconut milk, blend until smooth, season to taste, place in a pot to heat more if you desire! Serve with a sprinkle of smoked paprika, a drizzle of olive oil, a handful of pepitas, and a bunch of arugula in your bread bowl! 😋

I transitioned by buying boxed almond milk but never loved the taste (or mystery ingredients) until I made my own.  Almond milk is not that difficult, but this is the most easy EVER because you don't have to soak or strain anything.  It's literally pour and blend. I ❤️ stuffed peppers. Quick, easy, and delicious dinner! I stuffed these with rice, black beans, and corn. Seasoned that mixture with chili powder. Then baked them for about ~40 mins at 350F and served them with cilantro, avocado, nutritional yeast and salsa! Eating vegan can be easy 🌿

Cornbread crusted four bean chorizo chili 🌶 one of my favorite meals 😍 The chili consists of kidney beans, black beans, pinto beans, sprouted lentils, onion, Trader Joe's soy chorizo, corn, fire roasted tomatoes, smoked paprika, chili powder, and chipotle peppers. Mix all that together, bring to a boil, turn it down, let it simmer for about ~20 mins stirring occasionally. While that is simmering, mix your cornbread (I used a box mix from Trader Joe's and added flax milk, aquafaba from the beans, and coconut oil). Carefully pour the cornbread batter on top of the chili and put the lid on the pot. Continue cooking on low until the cornbread is cooked all the way through and forms a 'crust' over the chili. Break through that cornbread goodness and serve with cilantro, avocado, or just eat it straight!

Let's talk about acne 🗣
Veganism is often portrayed as the wonder cure - including having clear skin and being a beacon of health, so acne has been difficult for me accept. I started getting cystic acne at the start of 2016. I tried a million variations of a vegan diet, but ended up going in medication for a year. It has now been 4 months since my treatment ended and I am left with scars on my cheeks. 
Dealing with acne is something you can’t even understand unless you’ve experienced it yourself. It’s on your face. You see it everyday. It’s not just ‘acne’. It’s a lot deeper than that. It ruins your self esteem, friendships, relationships, mental health, confidence and social life. You don’t like the way you look. You stress when nothing you do seems to fix it. You wish more than anything for the acne to be gone. You would rather disappear, isolate yourself and be alone than face the world. It’s a struggle to continue your daily life, work, hobbies and anything that involves going in public. You constantly have thoughts in your head of what you think people’s perception of you is. 
Everyday, I have made a conscious decision to try and ignore my insecurity regarding my skin - to live without holding myself back because of it. Now that the majority of my acne is gone, it feels so good to know, that I didn't put my life on hold while waiting for it to disappear.
I really hope to bring awareness to this topic and it feels scary but good to open up about this ❤

I was going to write a huge essay on human disconnect but instead  I'll just say this

Lack of Love and Compassion is at the root cause of hate (at every level) It's sad how thousands of years have past and we still have trouble getting along with each other. Maybe I'm an overly optimistic poetic warrior but I truly believe we can make a difference on a mass scale by starting at an individual level...Simply by being more compassionate and loving towards ourselves and one another. How ? Start by Loving Yourself, smile at a stranger, ask a random person how they are doing, love your friends and family (animals included) Small acts of kindness can go a long way. Perhaps it's not the answer to world peace but in my opinion if we start with ourselves and our community we'll definelty blaze a path in a better direction. Getting into a really nice routine, Mon/Fri legs and back, Wed arms and abs (ok, lying i do nada for abs- maybe 10 leg raises and i get bored). Ideally i need to add a session of yoga or stretching as i can feel i am getting slightly less flexi.

Beans and greens (and veg sausage). That's where it is at. Had to learn it the hard-eff-up-the-metabolism-and-skin-skinny-fat way. Plant munchers, please do not buy into the whole detox shmetox, raw only, crazy high carb bs. If it works for you i am very happy. But!! If it does not like for me it did not- because you have some pre-existing conditions and childhood of antibiotics behind you/destroyed gut- you will have to be smart about this. And that B-word i always despised proved to be the best way for me. Balance. 
I now eat roughly 25:25:50
Protein, fats and carbs so still plenty carbs but definitely higher fats and protein. I supplement w B12 1-2x week and D vit every day. Also taking magnesium before bed. Look into your food combining and make sure to get plenty of citrus w your beans to absorb the iron. Seen here is my typical dinner: salad w beans and greens and extra protein. Just a little public announcement to save you some time.

Success! Vegan Italian meatloaf stuffed with "cheesy" pasta! My uncle used to make a non-vegan version of this and requested that I make it for him, veganized. Challenge accepted! The loaf is made up of sprouted lentils, mushrooms, onion, garlic, red pepper, gardein beef crumbles, basil, parsley, breadcrumbs, pasta sauce, daiya mozzarella shreds,
aquafaba, and a bit of cornstarch. The pasta inside is mixed with more daiya, tofutti cream cheese, and some sauce. I formed the loaf, made a well, stuffed it with pasta, then folded the loaf over the pasta insides. Then I brushed the outside with some extra sauce and baked it at 375 F for ~40 mins. To serve, I topped it with torn fresh parsley and basil. Happy autumn everyone!!

Nach 2-wöchiger Zwangspause ging es heute 5 km Berg auf und ab durch die Reben.
Bei jedem Lauf muss ich an meine Tante und nun auch an meinem Opa denken, die beide in den letzten 4 Monaten durch Herzprobleme verstorben sind. Das Laufen hilft beim Nachdenken und auch beim Trauern.

Danach gab es einen Bananen-Vanille-Proteinshake mit Haselnussmilch. Nicht unbedingt oberlecker, aber ausreichend 😉

During every single run i am thinking about my aunt and grandfather which both died of some heart desease in the last 4 month. Running helps to get over it.

Antioxidant burst. 💫 Squeeze this in within 30 mins after a work out to reduce inflammatory responses and include a meal within 3 hrs with about 20g of protein to assist in muscle repair and reduce soreness. People always ask me what a "typical" meal is for me, and it's always a hard question to answer because I don't have "set" meals per se. Usually, I try to just stock my fridge with plenty of fruits and veggies then throw them together in a bowl like this. Last week while I was using the oven for ziti, I threw in 5 sweet potatoes to bake. I also bought kale from a local farm, washed and chopped it, then stored it in a baggie with a paper towel to keep it fresh. I did the same with fresh cilantro and parsley. I bought some beautiful heirloom tomatoes also from a local farm. So when I looked in the fridge this morning, I decided to sauté the kale with a little coconut oil and garlic, warm up a few tomatoes, sauté some tempeh with BBQ sauce, and throw it in a bowl with half of a sweet potato and some cilantro. That's my thought process when it comes to "typical" vegan meals. Eating plant based doesn't have to be difficult, expensive, or time consuming. Try it out! And let me know what concoctions you mix together 😊🌱

Mental health is the most important thing ❤ This is a very personal post for me to share. Going vegan 🌱 saved me in so many ways. My focus shifted from destructive patterns to fueling my body with healthy, vibrant, nutrient dense food. Moving my body because I like to challenge myself - not as a punishment but rather pure enjoyment.
⬅️2013: Underweight! Between these two photos, I have gotten even skinnier, gained weight, went through binge eating and much more
➡️2017: +3 years vegan 🐷🦁🌱 I healed my digestive issues, disordered eating, gained energy, purpose, compassion and eat a whole foods plant based diet with NO calorie restriction 🤘🏻⚡️ No longer fearing carbohydrates but THRIVING off them 🍌🍌🍎🥑🌽🍝🍚 Going vegan was just the beginning - I am constantly evolving and changing, and so is my body. Phases of being super fit to prioritizing other things. It's all about balance ✌🏻
