I’ve been wanting to roast some eggplants for a little while now... they make a very beautiful dish! I chose baby eggplants because I find them to be much tender & sweeter than the regular-sized ones.

Oven roasted baby eggplants
Ingredients:
•2 baby eggplants, sliced in half, lengthwise •¼t garlic powder
•½t coriander
•½t cumin
•¼t red pepper flakes
•2T olive oil + extra for serving
•dry basil flakes or fresh basil chiffonade, for serving

Pre-heat oven to 400°F. Saltpepper the eggplant halves, place them on a baking sheet, cut sides up.

In a small mixing bowl, mix the garlic, coriander, cumin & red pepper flakes into the 2T of olive oil, making a paste. With a basting brush, spread paste on eggplants’ cut sides evenly. Bake in oven for 25-30mins.

To serve, squeeze the half lemon on hot eggplants, dress with some olive oil & sprinkle with basil.

I topped my eggplants with a mix of multi-colored quartered mini tomatoes, vidalia onions & minced lemon rind, sautéed in olive oil. I served them on a bed of steamed basmati rice.

Ok so I KNOW I'm two weeks late but is it me of has these first two weeks of the year been roughhh?! Everyone has been ill or otherwise experiencing some sort of January blues, me included :(. I wanted to start doing #veganuary posts but life caught up with me 😭 So here's a recipe I made last week to give my body a bit of a boost from all the poison I was feeding it at the end of 2017. Chickpea, spinach and ginger coconut curry with sun dried tomatoes. Served with my fave roared aubergines 🍆, asparagus and fried plantain 😛 ...errrmmm so. Recipe link SHOULD be in bio but as you will see it is under maintenance! 😅🙈 so I'll put it here.. btw i dont ACTUALLY  use measurements so I’ve tried my best to match the measurements with what I’ve actually put in so. Lol. Soz . .
* 	1/2 medium onion – slice or diced, however you prefer
* 	3 cloves garlic – minced
* 	1/2 cup sun dried tomatoes, chopped in half or quarters
* 	1 tin chick peas
* 	spinach
* 	lemon (for the zest)
* 	1 tin coconut milk
* 	scotch bonnet pepper (optional, I only put this because I wanted it spicier & I was ill)
* 	1 tsp cayenne chilli pepper powder
* 	ginger
* 	curry powder
* 	Sweet potato (to serve wit .

1. Heat 1tbsp coconut oil in a wok or pan and sauté the garlic and onions for about 5 minutes until the onions are translucent.
2. Add the ginger and 1/2 tsp cayenne chilli powder – ok wait. I used A LOT of ginger because I was ill, so you might want to use less. I would sayyy maybe around 3 or 4 medium sized slices? – fry for about 2 minutes, I added all purpose seasoning at this point and half a scotch bonnet, chopped.
3. Add the sun dried tomatoes and chick peas and continue to cook for another 3 minutes on a medium heat. I added some mixed herbs at this point, along with a dash of curry powder. Let simmer for another 5 minutes
4. Drain the tinned chick peas and add to pan, stir all ingredients together
5. Add the coconut milk and a little lemon zest (I also squeezed some lemon in as I was ill lol)
6. Stir and let cook for about 5-10 minutes.
7. Taste test! Add some salt and some other seasonings in there as you see fit. Add the spinach and DONE! 🙂

I just loved the vibrant colors of this dish! Spaghettini with a mélange of mini gourmet tomatoes, roasted mini brussel sprouts, & red cabbage. This, I topped with my vegan spinach pesto & toasted pine nuts.

Vegan Spinach Pesto
Ingredients:
* 2C fresh reg. spinach
* 1 bunch flat leaf parsley
* ¼C olive oil, preferably robusto
* 1 lemon, juiced
* 1 cup pine nuts
* 1t kosher salt
* ¼t freshly ground pepper
Method:
Toast pine nuts. Fill food processor with spinach, parsley, lemon juice, toasted pine nuts, salt, pepper & half the oil. Pulse until smooth, add the rest of the oil and pulse again until mixed in. Serve over pasta or grilled veggies!

Roasted Persian Lime Creamy Dressing
Ingredients:
•pulp of 1 roasted Persian lime
•½C tahini (@pw.organics)
•½C cocomilk
•¼C water
•2T aminos(or to taste, this is the “salt seasoning component”)(@bragglivefoods)
•½t garlic powder
•½t ground ginger
•½t ground Hungarian sweet paprika
•¼t ground coriander
•¼t ground cumin
•¼t ground turmeric
•¼t ground Mexican oregano
Method: Half lime & roast in sheet with your veggies. Turn once and remove from oven when lime pulp is soft. The pulp will become so soft, it will almost disintegrate. Put aside for it to cool a bit. Mix all wet ingredients thoroughly until smooth. Add all spices to creamy mixture. Scoop out the lime pulp & add it in. This dressing should keep well in a tightly-fit glass container, refrigerated, for 3-5 days. It is great to top steamy greens, starches & darker-leaf salads!

Итак, прошло около 20 дней с момента моего старта и все ещё не все гладко.📝 После НГ я быстро выровняла свой режим и заряженная новогодним волшебством пришла к лучшим результатам.💫 Но.... Заболела! При чем как?! У меня припухло левое веко 👀

Случилось такое впервые! Оно чуть припухло, чуть больно было, когда дотрагиваешься и  незначительный дискомфорт при моргании💔

Началось все на Рождество, я не сразу заметила, хотя даже сторис с лицом снимала! Погуглила возможные причины: может быть и соль, и алкоголь, и ячмень, и даже почки, и сердце. Но среди них был недосып😁👌🏼 Что-то мне подсказало, что это оно.😅 Ложиться в 23, просыпаться в 5....хммм... я то конечно верю, что 6 часов хватает, но уровень у меня ещё не тот все же. Я ничего не предприняла, хотя мама говорила- сделай, Юля, компресс. Даже не легла раньше в тот день.

На след день все ухудшилось. Я проснулась, испугалась, загуглила ближайшего офтальмолога, который работает только с 8.30. Решила так, сделаю компресс и лягу посплю ещё, если лучше не станет- к доктору! Проспала до 09.30 👌🏼🙈💪🏼 Стало лучше.....

Сегодня после часа бодрствования, я легла поспать опять с компрессом и когда проснулась в 8.00- ушёл даже дискомфорт при моргании. Осталась небольшая припухлость. 🐵

Я немного в шоке, тк я не чувствовала себя уставшей, выматанной, во мне было полно энергии! Только во время медитации меня немного рубило. В остальном же- 👌🏼 Вот к чему могут привести действия в благостной страсти❤️🙌🏼

Зато.... вчера я осознала как люблю вставать рано! Целый день как пельмень варёный... совсем не тот уровень энергии. Поэтому сегодня я лягу в 21! Это просто архиважно 😅

Give dry beans a chance! You’ll be able to control the salt & seasonings. The flavor is also superior to canned! I prepared a 2-cup batch of black beans, which I soaked the night prior, with fresh, cold, filtered water. The following afternoon, I rinsed the beans with fresh water. In a med-large heavy enameled cast iron pot, I sautéed half a red onion, about 4 celery ribs, 2 small carrots & 3 cloves of garlic, all in a small or minced cut. To that, I added the rinsed beans, 3 bay leaves & covered everything with fresh water by an extra 2-3 inches. I turned up the heat to med-hi & soft-boiled the beans for 10mins. At this point, I lowered the temp to one notch over low, and let the beans simmer for 3hrs. I added salt about a half hour before the 3hrs were up. As always, with all beans, you must check for salt & doneness, before you serve or add them to a recipe. I stored the beans in some of the liquid; ready to be spiced up for latin weekend...

Vi avevo già raccontato la leggenda del calicanto e del passero sopravvissuto dall'inverno grazie alla protezione di questo magnifico fiore. 
Quello che però non vi ho ancora detto è che secondo la credenza popolare è una pianta che risveglia lo spirito ed il corpo con il suo profumo, nella fredda stagione invernale dovrebbe essere usato ogni mattina, sfregando il fiore sulla pelle dei polsi e delle caviglie per donare vigore e rinforzare ossa e fasce nervose. 
Non so se funziona, in ogni caso il suo profumo è talmente buono che certo male non fà! 😉

I used this Mandarin Tahini Cream to top some delicious roasted garlic batatas, which I served with some prepared black beans & quinoa. It was a nice fresh spin to the usual lime or lemon tahini sauce I’m used to mixing up & it went awesome with the batatas! I saw this batata+black bean combo on a beautiful burrito bowl @naturallyella made earlier this week & got super inspired! More black bean recipes coming ahead...

Be it for the luck, for the fortune; superstition or not, whatever the reason, was a good one for me to eat some last night. Cauliflower & Sweet Potato Ginger Soup with Farro:

I really rough-chopped the following:
•½ head cauliflower •½ sweet onion
•1 pint grape tomatoes, quartered •1 baked sweet potato (leftover), skin removed & cubed

I let these ingredients sweat it out, on med-hi temp, until softened (except for the sweet potato), in a med pot, uncovered, without needing any oil. I added about ½inch fresh grated ginger to the veggies & seasoned with salt, ½T turmeric & ¼t coriander. Stirred & sautéed for 5 more mins. Added 1sm carton of organic veggiebroth & filled the rest of the pot with water & brought it to a boil. Added 1C fast-cooking farro & boiled for 10 mins. Just about when the soup was ready, I stirred in the sweet potato cubes. Once warmed up, I checked for salt & served.

Вчера мы с Максом ездили просить у леса новогоднего настроения ( читай: просить у ёлочек веточек😭) Мы не ищем лёгких путей, а это, в первую очередь, отличный повод сбежать за город.🌲🌬 .................................... Я не поддерживаю традицию бессмысленного убийства ёлочек уже лет 5. Даже если вы мне скажете, что их специально растят- я лучше заплачу, чтобы они остались расти, тк живыми они принесут больше пользы, они прекрасно очищают воздух, а это так актуально в наших загазованных городах. Easy Peasy; even my 5 year old helps me make this! Cut the squash in 1/2 scoop out the seed - Pre heat oven to 350 - drizzle olive oil all in the inside and season well. I used crack black pepper, salt, garlic powder, Italian seasoning - flip upside down on a baking sheet and bake for about 25-35 minutes depending on the size of your squash. But you’ll know it’s done when it’s lightly browned and the squash easy pulls away from skin when you scrap it with a fork. Add your favorite spaghetti sauce and call it dinner!!! __________

Baby Eggplant Italian Vegan Balls:
================
Eggplant kit for mixer:
•2 baby eggplants, skin-on, chopped
•½ sweet & ½ red onion, minced
•3 garlic cloves, minced
•1t salt & 1t pepper(or to taste)
•1t italian ground herb mix
•½T olive oil 
Eggplant vegan Italian balls mix:
•1 eggplant kit
•¼C fresh Italian flat leaf parsley, minced
•¼C mozz-style veggie shreds
•1 roasted red pepper, jarred
•1 flax egg(2T ground flaxseed+⅓C water rested for 5mins)
•¾C Panko, or any vegan breadcrumb mix.(check ingredients! many mixes contain milk🤨)
•add water if mix is too dry
Method:
Pre-heat oven to 375°F. Place all ingredients in eggplant kit on an oven-safe sheet pan, drizzle with olive oil & mix. Place in oven. Bake for 30mins, stirring once, at halftime. Remove from oven, leave oven on. I let the ingredients cool down so I could put them inside my Ninja Iq Mixer, combine them with the veggie balls mix & pulse them. Add water if mix is too dry. Form balls. Recipe yield: 12 big veggie balls. Return to oven & bake for 30mins. If using with pasta; simmer the balls in the sauce for at least 10mins. I served mine with Italian sauce over roasted spaghetti squash!

Roasted Persian Lime Creamy Dressing
Ingredients:
•pulp of 1 roasted Persian lime
•½C tahini •½C cocomilk
•¼C water
•2T aminos(or to taste, this is the “salt seasoning component”)
•½t garlic powder
•½t ground ginger
•½t ground Hungarian sweet paprika
•¼t ground coriander
•¼t ground cumin
•¼t ground turmeric •¼t ground Mexican oregano
Method: Half lime & roast in sheet with your veggies. Turn once and remove from oven when lime pulp is soft. The pulp will become so soft, it will almost disintegrate. Put aside for it to cool a bit. Mix all wet ingredients thoroughly until smooth. Add all spices to creamy mixture. Scoop out the lime pulp & add it in. This dressing should keep well in a tightly-fit glass container, refrigerated, for 3-5 days. It is great to top steamy greens, starches & darker-leaf salads!

I revived and dusted off my old camera last night, so here is one of the (moody) pictures I took of my Calathea Medallion. Its new leaf on the left just opened up last night, and it's even more special because I almost killed this plant since getting it last summer through a brutal fertilizer burn. I’m so happy it’s doing better! It’s one of my most challenging (for me) plants but it’s also one of my favorite. I am still just figuring out this whole plant thing, but I'm glad I am. It's proved to be so relaxing and calming, and helping these cold Pacific Northwest winters go by just a bit less depressing. Quite a bit less, actually. .
