Spicy chickpea “tuna” sushi😍. Thanks @naturally_nina_ for the idea to use chickpea “tuna” in my homemade sushi. For my spicy version, I simply added a homemade spicy tofu based mayo to lightly mashed drained and rinsed chickpeas for a fun filling. I cooked the sushi rice in my @lotusfoods rice cooker and seasoned it with rice vinegar and coconut sugar. I added carrot and avocado along with the spicy chickpea filling before rolling. I then topped the sliced sushi pieces with extra spicy mayo and @citriburst.pearls finger limes (aka vegan caviar which to me taste like lime crossed with Thai basil—yeah wrap your head around that!). Dip in coconut aminos for a delicious, healthy dinner that’s not only fun to eat but fun to make👍🏻! Recipe for the mayo will be below! Tag a sushi loving friend! Enjoy!
1/2 block tofu, removed from liquid
1 tbsp lemon juice
1 tbsp apple cider vinegar
1/2 tsp maple syrup
1/4 tsp salt
1/2 tsp Dijon mustard
1 tbsp water
2-3 tbsp sriracha, or more as desired for spiciness
Blend all ingredients in a high speed blender until super smooth and creamy.
