Took my 'peaceballs' to work 🚗⏰📑💼 I had them with vegan pasta and tomato sauce yesterday 😋 They are super healthy and high in protein 💪 It has a nice texture (The lighting at my office was terrible so the colour looks darker in the last pic 😬) and I will make them as Burger patties next time. For this one, I used the following ingredients:
2 cups of cooked Purple Jasmine Rice
1 cup of Quinoa
1/2 cup of Red Lentil
1/2 cup grated carrots
1 Flax egg
2 tsp Black pepper
1/2 tbsp Mixed Spice
1-2 tbsp low sodium soy sauce
2-3 cups of veggie stock
1/2 tbsp Garlic powder
A small handful of dried oregano or Italian herbs
Cook lentil and Quinoa with veggie stock in a pot until they are soft and Quinoa is fluffy. Leave them to cool down. (While waiting for the lentil and Quinoa to cook, make a flax egg.)
Preheat the oven @ 220c.
Once they are cooked and cooled. Mix with rice and add the rest of ingredients.
Mix well and scoop the mixture to make small balls. Roll each ball with your hands for a smooth surface.
Bake for 20 minutes. Rotate each ball half way of baking for a nice equal brown colour.
Once cooked and smell lovely. Take them out and leave to cool a bit before serving with your delicious pasta.

We've been up all night because Maisie had earache, so I've kept her off school and we're having a slow start to a lazy, rainy day at home (pancakes, lots of tea, jigsaws, snuggles in front of movies, maybe baking a lemon cake later 🍋) we may or may not stay in our pyjamas, who knows 🤷🏻♀️I do love these kind of days, where I can just relax and enjoy doing simple things with my kids.

Good morning and happy hump day! 💙 That was my post workout breakfast: oatmeal covered with espresso nicecream and topped with chocolate sauce, almonds and blueberries 😍
I made the nicecream using 2 medium frozen bananas and 1 espresso and the chocolate sauce mixing 1 tsp cacao powder, 1/2tsp Agave syrup and 2 tsp water. Easy, fast, cheap and tasty 😉

For pitaya cherry nicecream, add 2 frozen bananas, 1 tsp pitaya powder from @just_blends, 1/2 cup cherries, 2 pitted dates, 3 soaked cashews, 3 tsps fresh almond milk to the blender. Pulse for about a min until you get a creamy texture. Enjoy!

Nettle tea with manuka honey. Nettles are full of vitamin C and a great source of iron. It's good for the endocrine system and for blood sugar balance. Pick your own (don't forget gloves... 😱) or buy dried, either way works. 🍃🍃🍃🍃
