#nutritionalfitness Tuesday. "Que rico." @michael_melgar looks like he's smiling down on his newborn baby 🤤🧀I was too.
This was the best and last cheese I might ever eat in my life, bittersweet night. 🐄 .
These two are "arepas de choclo", a corn patty base under a melty white cheese, a Columbian delight.
I found out recently that cheese contains a fractional level of the allergen "alpha gal" or galactose-alpha-1,3-galactose, a carbohydrate found primarily in mammal meat. I used to tolerate cheese, but this amount tipped the scales, caused a systemic allergic reaction and scared me into abstaining from dairy indefinitely.
Avoiding pork and beef was easy. Avoiding dairy is another level of dietary challenge.
My beautiful daughter suffers from multiple severe food allergies, but she doesn't let that stop her from enjoying every second of her life! Since she was diagnosed last year we have adjusted her diet to exclude all diary, egg, rice, berries, sesame, and pork. We carry her epipen with us at all times to keep her extra safe and take extra precautions to avoid cross contamination at mealtimes. She loves eating chicken, fish, vegetables, apples, and watermelon. She is the face of food allergies! @kidswithfoodallergies
☀My carbon pencil drawing of a Nomadic Somali woman, the wind creating beautiful shapes, like it does with the sand dunes, changing the landscape as it blows. This was a page from a beautiful hardcover sketchbook I had since my college days, when I studied Da Vinci and his sketches of cloth draping over human silhouettes.
I started studying the different peoples of Africa on my own, at my college's grand library, and my drawing them was a way of documenting their appearance, dress, jewelry, with added notes on beliefs and culture, and little maps in red, one of which you can see in transparency here. It was also a way of keeping these beautiful images for myself, as back then, books about Africa were rare and hard to come by.
My biggest surprise was when suddenly I was being addressed in African languages by Black Africans I met, in Somali, yes, but also in Fulfulde, Swahili, and even Arabic! Meanwhile, I was repeatedly told, even by family members, "you are not Haitian!" This was also when I started developping intolerance to alcohol, and pork, fast food, and other junk food. This was when I struggled against the peer pressure to wear tight, short skirts, and 'flaunt what I got', and discovered my true, modest nature.
Perhaps it takes one word, one moment, to undo 400 years of being told that we are other than who we are. Thank you, Africa, I ❤ you too!☀
This is what it looks like when your Eosinophilic Esophagitis is no longer in remission. Kobe's EoE came back with 110+ eosinophils in his esophagus and stomach. Decided to stop at a family-owned, made from scratch, Mexican restaurant. Mexicalli Allie's. I had an Enchilada Torte, which is layered corn tortillas, rice, beans and ground beef. Lady behind the counter has a friend with #CeliacDisease so was patient with my questions. They do fry flour tortilla items here, so I stayed away from the chips. Was very excited that their beans were just smashed pintos and don't add lard. Which is great because my husband has a #porkallergy . They also had tamales on the menu that sounded intriguing.
Sometimes I treat myself with low sodium bacon. 2 slices max. I have a pork allergy. And after many years of testing have realized I can only eat 2-3 slices of low sodium bacon cooked super crispy. Anyone have #porkallergy ? 🍳🍳🍳 #hellobrunch
Ugh HIVES. And not the Swedish garage band either. The only thing I had today so far was espresso. Anyone else out there with severe #foodallergies experience this? Hives for seemingly NO REASON?
Just asking for any advice out there. I have been really strict with my allergy-free diet. And for those of you out there who think people are exaggerating when it comes to their food allergies: guess again. It can be extremely scary.
We are also fed incredible food multiple times a day. I am thankful for having a #porkallergy because it will help to prevent weight gain here 🍤🍣🍢🍹✨💫
This is from the reception of our exhibition last night.
I'm obsessed with Jiffy, but I learned this week it's made with lard! Today I purchased this gem & I'm praying my .50 isn't wasted on some nasty knock off of a tasty treat!!! #porkfreeisforme#porkallergy
