Cauliflower Mac & cheese!
Preheat oven to 350 F. Break a whole head of cauliflower into small pieces. Fry it in butter until al dente, then place it into casserole dish. While the cauliflower is frying pour heavy whipping cream (less than 2 cups; I didn't measure) into a large saucepan. Let boil until it almost bubbles over the top of the pan. Stir it down and repeat a few more times until it thickens. Add 1 oz of cream cheese, melt it then remove pan from heat and add a bunch of cheese. I used cheddar; not sure how much. Salt & pepper to taste. Spread sauce over cauliflower until desired ratio & stir together. There may be leftover sauce.
Crumble up pork rinds and sprinkle on top with some shredded cheddar and parm. Bake about 15 minutes until top is browned, using the broiler to speed things up if desired.

Yesterday I had a cheat day. It was worth it. No regrets.
Usually after a cheat I’ll fast 20-24 hours to reset myself and help my body get back into ketosis.
I’m starting to find a balance when it comes to my nutrition. This keto Diet works for me. My food freedom (forever) has only gotten stronger.
