Brunch after this morning’s “cold” 9 mile long run called for classic pancakes with maple syrup! Did I mention that I tend to magically transform my oatmeal into something else ❓

Classic Protein Pancakes
• 1 cup oats
• 1/4 cup protein powder (I used @vega_team vanilla protein)
• 1 tsp baking powder
• 1 medium banana
• about 3/4 cup unsweetened plain cashew milk
1. Blend or process oatmeal into flour.
2. Add protein powder and baking powder and pulse until evenly mixed in.
3. Add banana and cashew milk and blend or process until smooth.
Use about 1/4 cup of batter per pancake to make 6 medium sized pancakes!
Post-run pumpkin and flax protein pancakes topped with almond butter and banana slices 😍

Did a back workout this morning and a shorter run today for speed. Ended up running further than I meant to which meant a slowwwwww jog back to my car!! 🏃♀️🏃♀️🏃♀️
Upside...10 Minute miles
Downside...I actually ended up running 6 miles and I still have to shower and function tonight...which involves standing. Wtf...🤦♀️

Yum! 8 of these babies prepped and in the fridge! Layers are as follows: made from scratch honey mustard vinaigrette, chopped chicken breast, green apples, red grapes, green onions and spinach. Yes, they stay FRESH in the fridge for 5-6 days. Delicious - this has been an easy, repeat staple in my house for a couple of years.
