#lasanhadeberinjelasimplesmentecaminhe

FINALLY found some sweet potatoes at our farmers market recently and I definitely cried on the inside a little when I saw them because of how small and misshapen they are compared to what we get at the grocery store 🍠 😭😭 switching to buying almost everything from the farmers market has been a huge adjustment as far as produce shopping goes. We now buy with the seasons so if it isn't at the farmers market we don't get it 🤷♀️The only exception for the most part to our farmers market only shopping has been sweet potatoes but now that we have seen the huge size difference it's going to be hard getting the store potatoes 😩
I attended a gourmet four-course dinner put on by my sister and the rest of the seniors in her class. Everything was amazing! I’m going back today for brunch 😋
Not pictured: local raw mussels and oysters.
First course: Cauliflower bisque, Second: Waldorf salad, Third: flat iron steak with mashed veg and brussels, Fourth: not pictured is the cheesecake I forgot to photograph and only had a few bites out of because I was so full! #girlinhealing#gourmetdinner

Do you like papaya?
I love cutting one open that requires no messy deseeding..
Papaya is so good for you it’s crazy. When in season you should try to work it in your diet.. here’s a few reasons why:
Because a #ketodiet can be rough on the digestion, papaya is a perfect fruit that will help you “go” 🙏🏼
Here’s a tidbit on that:
“Papain is a digestive enzyme that aids in the breakdown of proteins. People living in the tropics have long used papaya to aid in the treatment of constipation and irritable bowel syndrome. The fruit is easy to digest and the high fiber content may improve your intestinal health.”
Not only that....
Papaya is rich in vitamin A and C, helps reduce joint pain and inflammation from arthritis, reduces menstrual pain, helps fend off cardiovascular disease because it’s rich in folate, it’s antioxidants help prevent DNA damage so it protects against cancers and skin aging, it’s high in fructose but if you have diabetes, fermented papaya helps lower blood sugar, helps prevent against macular degeneration (vit A), and has antioxidant effects on Alzheimer’s and Prostate cancer (because of the lycopene).
It’s pretty much a miracle fruit and I have to practice self control to not eat a whole one each morning as they’re plentiful and everywhere here in Thailand.

A cold and rainy day here in Pittsburgh can only call for one thing , low carb Apple Cider Donut bites with chocolate dipping sauce!. The amazing folks at @cocopolosuperfood sent me chocolate to try out and it is seriously the best Ive had! The one I used here was their 39% Cocoa brand. It is sweet, creamy, chocolatey and you cannot even tell it's low carb! It also melts down very easily like regular chocolate. And before you say Apple's aren't really low carb, I know 😊 I only used 1/4 cup apple cider, less than 1 net carb/ bite.
Recipe below! Bookmark this post before you forget ! .
🍩Apple Cider Doughnut Bites
½ Cup Coconut Flour
¼ Cup Swerve
1 Tsp Baking Powder
¼ Tsp Salt
Dash of Cinnamon, Nutmeg and Clove
¼ Coconut Oil, Melted
½ Tsp Vanilla
¼ Cup Apple Cider
¼ Cup Almond Milk, unsweetened
About 1 cup Oil of Choice, for frying
¼ Cup Granulated Erythritol
1 Tablespoon Cinnamon
🍫Chocolate Sauce- optional (will add a total of 5 Net Carbs to recipe)
40g 39% @cocopolosuperfood Chocolate Nibs, melted
1. Combine the flour, erythritol, baking powder, salt and spices.
2. In a separate bowl, combine the eggs, melted oil, vanilla, cider and milk.
3. Preheat the oven to 325.
4. Combine the wet and dry mixtures and let set until the oven heats up.
5. In a mini muffin pan, fill the holes with about 2 tablespoons of mixture. The batter will be thick.
6. Bake for 15 minutes.
7. Meanwhile, heat oil of choice in a heavy bottomed pot to 350 degrees.
8. Remove the donuts from the tin and fry them for 2-3 minutes. Careful not to let them burn.
9. Carefully remove them from oil, and place on paper towel.
10. Mix the cinnamon and Erythritol in a paper bag (or large bowl). Drop the donuts in the bag and shake until covered.
11. Dip into melted chocolate and enjoy !
Makes 16 Donut bites / .7 Net Carbs each

S@#$ I Threw In A Pan is the last one for awhile... Tonight it's a whole fish night with shirataki noodles, Swiss chard, Kelp, sesame seeds, and of course the avocado! Now I'm NOT going bye bye forever, but work has entered what we call "Peak Season" That's when we ramp up our efforts to make sure everyone has an awesome holiday season by getting their gifts in a timely fashion! Super excited to have a helping hand in some many peoples holiday celebration's! What does all this mean?
It means that next week I'll be doing overtime hours! One week that will be 50, and untill the end of the year it will be 55 hour weeks.
Sadly I won't have enough time in the day to give daily SITIAP posts, workout posts, recipe posts, and BJJ posts.
This really bums me because I love sharing my food and BJJ adventures! I'll still keep up with my gratitude journal on Instagram, but till the first of the year the SpiderMonkey is in full on grind mode! I can't wait to share with you guys soon!!! Don't forget to hit like and share guys!
