❤ QUINOA, AVOCADO & POMEGRANATE SALAD ❤
Quinoa is a great source of nutrients, healthy fats and protein. Combined that with avocado and this salad is a super healthy option. The flavor of this salad comes from the fresh herbs, a touch of cumin (my secret touch) and lime juice. The pomegranate adds great colour and a splash of natural sweetness. ..

INGREDIENTS
▪️1 cup of quinoa, cooked (I prefer mixed quinoa which adds great colour)
▪️½ tsp ground cumin
▪️½ lime ..
▪️½ cup avocado, cut into cubes (coat in lemon juice to maintain the colour)
▪️2 spring onions
▪️2 tbsp chopped coriander (cilantro) ..
▪️1 tbsp chopped mint, ..
▪️10 cherry tomatoes, quartered
▪️3 tbsp pomegranate seeds ..
▪️Salt and pepper to taste
▪️Mint leaves for garnish.

COOKING THE QUINOA
Wash the quinoa in water. Heat a sauce pan with a splash of oil on medium heat. Add the quinoa and slow fry for one minute until the quinoa becomes transparent. Add 2 cups of water and cover with a lid. When the quinoa starts to boil, turn to a low heat and cook for 30 Minutes. Remove the lid and let the quinoa cool.

SALAD PREPARATION
In a serving bowl, add the cooked quinoa and the rest of the ingredients. Mix together to combine. .

Malzemeler:
•350 gr karnabahar
•1 adet havuç
•300 gr haşlanmış nohut
•1 tk toz kişniş
•2 diş sarımsak
•0,5 sb kinoa
•1 adet limon
•3-4 dal maydanoz
•4-5 dal roka
•1 çb zeytinyağı
•Tuz, karabiber
Yapılışı:
Öncelikle havuçlar ve karnabaharlar doğranır, daha sonra biraz zeytinyağı, tuz, karabiber ve toz kişnişle karışım oluşturulur. Tepsiye yayılan karnabahar, havuç ve nohutun üzerine sos gezdirilir. 220 derecede ısıtılmış fırında nohut, karnabahar ve havuç karışımı 20 dk boyunca pişirilir. Aynı zamanda sarımsakları da fırına atıyoruz. Bir yandan da yıkanmış kinoayı,sosluk tenceresinde 1 sb su kaynamış suya ekleyin ve pişirin. Bir yandan da közlenmiş sarımsaklı sosu hazırlıyoruz. There’s been a lot of “festivities” this month and I’ve been in need of some detox!! Everywhere I look the sweets are so abundant!! 🙄 Felt the need to call on my go-to grain bowls tonight (aka detox bowl)! ......really need to get back into healthier habits here, but for now I leave you with a perfectly light chicken, fennel & grape quinoa bowl we threw together with ingredients we had. I am enjoying quinoa so much!! I had a busy week and i didn't have time to spend hours making lunch. I quickly bloomed some quinoa and tossed in sugar snap peas, pomegranate seeds, peas and sliced onions. I added generous amounts of chopped coriander and mint along with a healthy squeeze of lemon juice. Season well with salt and pepper and you have a winner!! Quinoa is extremely versatile , you can make it anything you want!

El ingrediente base para nuestro Andina Bowl. Los incas llamaban a la quinoa “la madre de todos los cereales” y la consideraban sagrada. Ha sido consumida por miles de años en Sudamérica, aunque comenzó a ser considerada como un “superalimento” en años recientes.
Si nos referimos a los micronutrientes, en la quinoa se destaca el contenido de potasio, magnesio, calcio, fósforo, hierro y zinc entre los minerales, mientras que también ofrece vitaminas del complejo B en cantidades apreciables y vitamina E con función antioxidante.
Si comparamos la quinoa con la mayor parte de los cereales, ésta contiene muchas más proteínas y grasas, aunque éstas últimas son en su mayoría insaturadas, destacándose la presencia de ácidos omega 6 y omega 3. Respecto al aporte calórico, la quinoa es semejante o levemente superior a un cereal, pues contiene menor cantidad de hidratos. Para el deportista puede ser un alimento muy valioso, semejante a la avena, dada la presencia de buenos minerales, de hidratos complejos y proteínas. Por su alto contenido en fibra y su mayor aporte proteico respecto a los cereales, la quinoa tiene un bajo índice glucémico, lo que la vuelve ideal para personas con diabetes o que desean adelgazar comiendo sano.
También es de gran ayuda para controlar los niveles de colesterol en sangre, ya que su fibra y sus lípidos insaturados favorecen el perfil lipídico en el organismo.
Es especialmente beneficiosa en la dieta de personas celíacas, ya que no contiene gluten.

Si nos referimos a los micronutrientes, en la quinoa se destaca el contenido de potasio, magnesio, calcio, fósforo, hierro y zinc entre los minerales, mientras que también ofrece vitaminas del complejo B en cantidades apreciables y vitamina E con función antioxidante. Si comparamos la quinoa con la mayor parte de los cereales, ésta contiene muchas más proteínas y grasas, aunque éstas últimas son en su mayoría insaturadas, destacándose la presencia de ácidos omega 6 y omega 3. Respecto al aporte calórico, la quinoa es semejante o levemente superior a un cereal, pues contiene menor cantidad de hidratos. Para el deportista puede ser un alimento muy valioso, semejante a la avena, dada la presencia de buenos minerales, de hidratos complejos y proteínas. Por su alto contenido en fibra y su mayor aporte proteico respecto a los cereales, la quinoa tiene un bajo índice glucémico, lo que la vuelve ideal para personas con diabetes o que desean adelgazar comiendo sano. También es de gran ayuda para controlar los niveles de colesterol en sangre, ya que su fibra y sus lípidos insaturados favorecen el perfil lipídico en el organismo. Es especialmente beneficiosa en la dieta de personas celíacas, ya que no contiene gluten.

1/2 cup Eden Millet, rinsed
1/2 cup Eden Red Quinoa, rinsed
1/2 cup Eden Quinoa, rinsed
2 cups water
1 pinch Eden Sea Salt
15 ounces Eden Great Northern Beans, rinsed and drained
1 1/2 cups baby seedless cucumbers, quartered and sliced
2 cups organic tomatoes, small diced
1 cup yellow bell pepper, small diced
3/4 cup red onion, minced or small diced
1/3 cup Eden Pumpkin Seeds
1/4 cup fresh dill, finely chopped
Dressing
1/3 cup Eden Olive Oil
1/4 cup Eden Red Wine Vinegar
3 Tbsp fresh lime juice
1 tsp Eden Sea Salt

Heat a skillet and dry roast the millet for 5 minutes. Remove and place in a medium saucepan with the quinoa, red quinoa, water, and sea salt. Cover and bring to a boil. Reduce heat to low and simmer 20 minutes. Remove from heat and let sit covered for 10 minutes. Remove, place in a mixing bowl, and fluff to cool.

When the millet and quinoa is room temperature place in a serving bowl and add the beans, cucumbers, yellow pepper, onion, tomatoes, pumpkin seeds, and dill.

Combine the dressing ingredients and mix. Pour over the salad ingredients and toss to thoroughly mix. Serve room temperature or chill slightly before serving.
