Okay.. I love egg white cocktails but lately I can't stomach the smell 🤷🏻♀️
So I started researching what I could use as a substitute. I really wanted the magic foaming stuff that a few of you have but was unable to source it in oz so I gave Aquafaba a go. It's the water that chickpeas sit in.
I can't believe it!!! It worked!!!
I added a little too much though as I could detect the brine amongst the delicate flavours. I like the slight saltiness it brings though so I'm totally going to try it in a whisky sour. My foam here is a lot denser than I've ever achieved in a Ramon fizz before. I used freshly squeezed pineapple juice, just to lend a helping hand. Possibly made a difference. A little more tweaking required but I'm totally stoked 😎 .
▪️60mls gin @tanquerayginau
▪️30mls Turkish delight liqueur @thegrovedistillery
▪️20mls thick cream
▪️20mls pineapple juice
▪️20mls lime juice
▪️20mls lemon juice ▪️a few crushed cardamom pods ▪️30mls aquafaba
Dry shake all but the soda for a couple of minutes. Have a rest and pour a small amount of soda in your glass and leave in fridge. Shake mix again until your arms fall off. Strain in to your glass and let sit in the fridge whilst you clean up your mess. Add a little more soda and indulge!!
I didn't think it would be hard to properly make a Ramos Gin Fizz at first glance, but after a few failed attempts and some cocktail therapy from Ben of @thefarmersspoon I'm finally getting there. This isn't a 'read the recipe' cocktail, it takes a bit of practice and understanding of the process to execute a perfect version. This by no means, is that!
Recipe from @punch_drink with an added dash of bitters.
Ramos Gin Fizz
2oz Gin (Plymouth)
1/2oz Lemon juice
1/2oz Lime Juice
1/2oz Simple syrup (1:1)
3dsh Orange Flower Water
1dsh Amargo Chuncho bitters
1oz Heavy cream
1 egg white
2oz Soda water
Dry shake the egg white with gin, simple, citrus, orange flower water and bitters for about 5 min.
Add two small cubes of ice and shake an additional 2-3 min until ice is melted.
Add the cream at the end and shake a final 30 sec.
Pour into tall glass and let sit for a minute or two, then slowly pour soda water directly into center of meringue until it pops up past the rim of the glass. Add straw.

Ramos Gin Fizz
2 oz @cutwaterspirits Old Grove Gin
1/2 oz Lemon Juice
1/2 oz Lime Juice
3/4 oz Simple Syrup
1/2 oz Heavy Cream
1 Egg White (or 3/4 oz Liquid Egg Whites)
3-5 dashes Orange Flower Water
Combine all ingredients, dry shake, add ice, and shake again for 2 minutes. Top with soda water, garnish with a lime wheel.
