The #RamosGinFizz is an elusive #cocktail find, largely thanks to the minutes of vigorous shaking required to get a proper foam head. And no one does head better than Parliament bar. 😏 The two-inch head is best slurped though the straw to avoid being left with a white substance around your lips. The #drink tastes like a creamsicle with a very light fruit flavor, although I've seen pistachio versions here too.

This is the creme of the creme when it comes to space age swank glassware... Gin, Lemon juice, Lime Juice, Superfine Sugar, Orange Blossom Water, Whipping Cream, Egg Whites, and topped off with Club Soda! It's a swell evening tonight!
It’s Friday and it’s time for a Ramos Gin Fizz.
.75oz Cahoots Lavender
1oz Lemon Juice
1 Egg White
Combine gin, Cahoots Lavender, lemon juice, half-and-half, and egg white in a shaker. Dry shake without ice to emulsify. Add ice and hard shake until nearly all the ice has melted. Fine strain into a chilled collins glass or flute. Top with soda.
Years ago at a bar I used to work at on Alki Beach... An older fella would come in on weeknights in the winter and order a Ramos Gin Fizz. I didn't know how to make one the first time he ordered it, so he kindly walked me through it. The first several attempts were total failures, but he kept ordering them, and he would laugh as he watched me break a sweat as I shook his drink. I was determined to get it right though, and eventually, after talking to another bartender, I was introduced to the all-important dry shake. .
The next time he came in, I made him his drink and he smiled as he pointed at the straw, "It's standing up straight! That's how you know it's right!" .

An asian variation on the classic Ramos Gin Fizz, this drink
requires an extra long hard shake resulting in a creamy texture and smooth mouth feel.
45ml - Hayman’s Old Tom.
30ml - Chrysanthemum cordial.
15ml - Calamondin Juice.
5ml - Yuzu Juice.
15ml - Manuka honey water.
60ml - Cream.
3 drops Orange blossom water.
2 dashes Egg white.
Top with soda.
Shake hard wet and dry and strain.
Garnish Lime nest and viola edible flower.
