🐔CAPRESE STUFFED CHICKEN🐔
Dinner tonight was flavorful but maaaann is chicken a bit hard when your back on the wagon 😅 A little too lean and clean for my usual likening but hey anything it takes to stay on🎯💯
I butterflied chicken, stuffed with fresh mozzarella, tomato and basil leaves & tied up with some string to keep it together and topped with pesto sauce.
Our lovely neighbor gave me some massive squash today so I made a simple layered ratatouille with some parm on top 😋
Made Ratatouille today based on the movie lol. It came out delicious and everyone loved it, was a bit spicy tho but like a good spicy. Anyway I hope to make this again ^-^

Anton’s speech in Ratatouille will always be one of my favorites, and it’s so, so very relevant in our society today. An excerpt:
“We risk very little yet enjoy a position over those who offer up their work and their selves to our judgment. We thrive on negative criticism, which is fun to write and to read. But the bitter truth we critics must face is that, in the grand scheme of things, the average piece of junk is more meaningful than our criticism designating it so.”
His words have resonated with me since I first saw the movie. No one is better than anyone else. It’s easy to sit behind a screen and mock others and their work, but what makes your opinion anything more than what it is...just one minuscule opinion in our vast world. So be kind. Love one another. And if you don’t agree, that’s okay too. Let’s just learn to respect one another.
Also, Anton Ego is way underrated and I do not appreciate it!
