From Thursday to Yesterday I had one of thr busiest weekends in a while. Thursday and Friday was all about running a couple of @vroomvroomescaperoom games! We finished replicating our orginal room so we can now run 3 rooms at once! The teams loved it and we had a blast too! .
Right after the games on Friday we drove to Louisville KY to support our friend, Donna, as she participated in her first Ironman Race! There is a lot to do in preparation and making sure you're athlete is comfortable, confident and ready to take on 140.6 miles (2.4 mile swim, 112 mike bike, 26.2 mike run) starting Sunday morning!
As you can see by the pic, Donna earned that medal completing the triathlon in 15 hours and 7 mins! Donna, YOU ARE AN IRONMAN! .
It was an epic weekend filled with fun, sleepless nights, and lots of junk food (mainly tortilla chips) . A couple of meals are showed: oatmeal and veggie crumbles from the hotel, we stayed at a residence inn and that is the first time i have seen a vegan breakfast option beside oatmeal! It was good too! The other dish is roasted veggies, kale, and quinoa with a garlic aioli from my favorite place in Nashville, The Wild Cow!
Now I'm ready for some sleep, a flush, and some workouts to get back on schedule! .

Such a strange meal but of course it's delicious 💚 baked potatoes with hummus, and leftover beans rice and sweet potato haha actually really good all together! ⭐️just a reminder that you should never feel guilty for eating lots of food, you are always deserving of consuming an abundance of fuel for your body! Don't let yourself run on empty, fill yourself with quality nourishment for energy ☺️ to me eating well is a form of self love and I absolutely love food and I eat a lotttttt (as you probably realised by now) haha and the amount and type of food I eat is what my body thrives on, especially when that food is whole plant foods full of starches fruit and veggies 👌🏼 with that being said though, it's all about balance and it's good for your mental health to indulge in the occasional treat (vegan treat hehe), coming from the girl who finished off a packet of watermelon sour patch kids in one go today 😝

Who’s up for some infused water?? 💦 It’s getting pretty warm here now & im always on the lookout for more ways to enjoy my water!! Today I’ve made some with home grown & pesticide free rose petals, sliced lemons from my garden & sliced organic strawberries! This water is a reflection of Spring - sweet, floral & a touch tangy ! So refreshing for a hot day like today!

Organic seeded sour dough garlic and chilli bread with an array of different dips. I eat really healthy most of the time so I definitely didn't feel bad about eating an entire plate of garlic bread for dinner. Plus I'm breastfeeding which basically means I'm eating for two, right?
Garlic bread was made with olive oil, fresh garlic and chopped chilli.
Pico de gallo:
2 x Roma tomatoes
0.5 x red onion
0.5 x lime
Finely dice the tomato and onion and squeeze the fresh lime, then mix.
Mix one avo with some chopped garlic, olive oil, pepper and lime juice
I also mixed up some sautéed carrot, sweet potato with garlic, olive oil and pineapple! The pineapple absolutely made the whole dish it was incredible!
I also tossed some cucumber in there for good measure
Soba noodle bowl for a hot day goes down a treat 🌿🌈 soba (buckwheat) noodles are gluten free, healthy and delicious! This easy salad is great for packed lunches as well 🙃 🙃 This bowl features carrot, capsicum, cucumber, nori and edamame, with a tahini, soy and wasabi dressing 🙌🏻🙌🏻 sub soy sauce for tamari to make gluten free 😊 #vegan#sobanoodles#bowls

This is my banana stash🍌hey! don't hurry! if you couldn't eat a large quantity of fruit at a time, you may need to eat as many as 5~6 meals throughout the day. however, a few weeks later, you're gonna eat 2 or 3 large meals per day🍌🍌🍌go fruit yourself! carbs don't make you fat!!!rather, carbs make you lean and healthy💪🏻🙌just like me🤗

This 😱 was 🤤🙌🏼 have been obsessed with @goshfreefrom products this year & finally got to try the new beetroot, kale & quinoa burgers with a hint of mint 🌱🙋🏼 will be buying again 👏🏼✨ used @scharglutenfreeuk seeded ciabatta rolls & they were 👌🏼🍔 and of course paired the burger with some homemade potato wedges & vegan mayo 👅

Quick ➕ Easy Dinner tonight 🍲
I guess you could call it Fried Rice? 🤷♀️ I stirfried some @lindamccartneyfoods Vegemince, frozen Edamame + Green Beans, Zucchini, shredded Carrot and Baby Spinach for a few minutes in a little EVOO, then added some cooked Short Grain Brown Rice and @chantal_organic Tamari. Too easy!
I cook my rice in a rice cooker but you can always use a precooked rice sachet if your short of time. I’ve never seen short grain brown rice in a pack though and it’s the best type of rice when it comes to taste and texture (according to me!)
My hubby absolutely loves this so if you need to win over your bloke with a plant based meal this is a winner! 👨🏻🖤
I've finally made the decision to immerse myself in the world of calorie tracking and macro counting 😅 it's been a long time coming but I'm trying to focus on my immune health and muscle gains, when I get the all clear to start training!! So what better way to start a day of research than a blueberry and banana nicecream bowl 🍌🍌🍌 I might finish the day of with some protein rich foods and a stretch, getting the blood flowing! Let's make tomorrow as productive as today ✌🏼✌🏼
