I hear so often people tell me they don't have time to cook healthy food...and sometimes dinner has to be a fast food drive through or a cheese toastie...I got home late tonight after training and a long day and needed some food quick...this is my go to bean pasta (this is chickpea fettuccine) and steamed veggies (loving adding leek to things at the moment which by gut likes a lot more than onion). Last week I watched the documentary 'Embrace' and was left in tears. It was beautifully put together and the message of the need to change our mindset and develop a positive body image hit so, so close to home. 'Disgusting' was the most used word when girls 100 were asked to describe their bodies. This is saddening but obviously horrifyingly common. We need to change the way we view ourselves and learn to love and appreciate the amazing 'vehicles' our bodies are to us. If it's the only thing you do for yourself this weekend- girls, go watch. Last week I watched the documentary 'Embrace' and was left in tears. It was beautifully put together and the message of the need to change our mindset and develop a positive body image hit so, so close to home. 'Disgusting' was the most used word when girls 100 were asked to describe their bodies. This is saddening but obviously horrifyingly common. Vanilla, banana + blueberry chia puddings - gf, sf, cf, df and vegan! 
I'm prepping tonight for breakfast tomorrow as we need to be out the door early. And I know if I prepare this, there will be no complaints at the breakfast table.

Ingredients:
3 tbsp chia seeds
1 can coconut cream
1 tsp vanilla powder
1/2 tsp cinnamon 
1 cup frozen organic blueberries 
2 bananas finely chopped
1 tsp raw honey
Dash of filtered water

Method is ridiculously easy! 
Mix chia, coconut cream, vanilla, cinnamon and honey together, adding a dash of water.

Pour into jars halfway, then layer with blueberries and banana, before filling to top, and finally adding a sprinkle of blueberries and a drizzle of honey.

Place in the fridge overnight.

I love experimenting in the kitchen. I've made tomato sauce a few times now but haven't quite got the recipe right.. A client asked me today if I count calories.. I definitely don't and I don't recommend it to my clients. That just adds more stress to our lives! I recommend that we avoid chemicals. Eat more "real" food.. and make as much of it from scratch as you can. But if you don't have time there are some amazing healthier options from health food shops. Just be careful to actually read the ingredients on the back. If it has numbers or weird words you don't understand then I'd try and find a better option. Preservatives and additives are linked to lots of health problems like allergies, asthma, hyperactivity, headaches and even cancer. It's hard to avoid all of them but if we start to notice them then we can start making small changes which will help our health a lot! Pro tip- once you've taken your pretty picture smush the peanut butter into the yoghurt before putting the lid on, otherwise it all gets stuck to the lid and you don't get to eat as much 💁🏼😂. Yoghurt tip - always check your fat free yoghurt sugar content! Should never be more than 4.7g per 100g. This is the amount naturally occurring in milk, anything higher has been played with in a funny way 😏. Not necessarily "added sugar" but adding more of the milk sugar in so it tastes nicer without the fat 🙅🏼. .
