Okay guys, I am FINALLY reading WomanCode and am going to start eating to support my cycle to see if it helps with my digestive issues, acne, anxiety, and a few other issues. 🚺 This week calls for oats as one of my carbs so for breakfast I made this skillet oatmeal by @rachlmansfield, and DANG was it good. In this particular episode of mama trying to make something when both kids are awake, there was a diaper blowout, an emergency laundry load that needed to be done and a pretty cute four year old who helped stir everything while running around me in circles with utensils flying this way and that. But there is a loaf of strawberry, banana, yogurt bread in the oven as we speak so I'm just gonna sit on the couch, nurse the baby and imagine I'm drinking a glass of champagne.🥂🥂🥂

Quick and easy rainy day lazy mom homemade chicken noodle soup.
One chicken breast diced small, chicken broth, kale and sauteed carrots, onions and garlic and throw in a bay leaf. Cook on high for 2 hours then toss in some broken spaghetti pieces.

Cauliflower fried rice, recipe from Best recipe box: 1 medium cauliflower, chopped into pieces size of rice using a food processor or by hand, 1 large egg, 1/2 medium onion, 2 garlic cloves, 1/2 cup frozen carrots, 1/2 cup frozen peas, 2 tbsp soy sauce ( I used coconut aminos) 1/2 tsp sesame oil, 2 green onions, cracked pepper pinch of sea salt. Cook onion garlic cauliflower, in the olive oil, add carrot and peas, combine then add beaten egg, sesame oil, aminos and stir until everything is coated and egg is cooked. Topped with fresh cilantro leaves drizzled with pesto and avo on side 🙌🏼 #tip : preheat oven to toast the shells until toasted .
Homemade pesto sauce:
Steam 2 cups @earthboundfarm kale on a pan (~3 minutes)
1 cup cilantro leaves
1/2 tsp garlic powder
1/2 cup chopped onion
3 tablespoons @chosenfoods avocado oil
3 tablespoons lemon juice
Pepper and salt to taste
Put all ingredients in a food processor or blender until creamy and smooth. Store in fridge for a walk and put on everything 🙌🏼
Here's a cooking hack for you: take a jar of prepared tomato sauce (check the ingredients Rao's is tomatoes, olive oil, onions, basil, salt, garlic, pepper, & oregano- that's it. Real food right there) & a can of crushed tomatoes & add them together. It takes down the flavor of the jarred sauce just a tad, but more than 2 jars of sauce for less than half price. (The Raos is $8 & the crushed is 3.). Throw in some grass fed meat & whole wheat noodles & you have a super quick, super healthy dinner. #cooking#momlife#realfood#homemade

Top right was me with my breakfast smoothie (my face was still puffy from just waking up...lol!!!). Then, lunch (bottom right)...and while it cooled, I took a selfie with my 2-14 Cav apron that I purchased before we left Hawaii. Hubby was the commander for two troops in 2-14 while we were there, and I got to volunteer with a bunch of lovely ladies and serve the amazing soldiers and families of our troops. *sigh* Wearing my apron brought back so many fond memories!!! Now...I'm not the best cook...but I'm definitely learning how to eat cleaner and greener, which has truly bettered my relationship with food AND myself!!! Meal Prep and leftovers for the win!! 🙌🏻 the sweet potatoes and brussel sprouts were prepared on Sunday. And meatballs are leftover form Tuesday. So yummy!! These meatballs are delicious. They are husband approved and freeze well. Simple and delicious. And they are carb free. I ate them while on Whole 30. Did I say there were husband approves? That's a big deal in our house. 😉

1 pounds ground beef
1 pound ground pork
3 cloves garlic, minced
1 tablespoon chopped fresh parsley
1 Tablespoon dried oregano
1 teaspoon kosher salt
1 teaspoon fresh ground black pepper
1/2 teaspoon red pepper flakes (optional)
Preheat oven to 400 degrees. Line a baking sheets with foil, set aside.
Combine all ingredients until well mixed. Shape mixture into equal sized balls, about 2 tablespoons each.
Arrange on the lined baking sheets. Bake in oven for about 20 minutes, or until done.
