Ya estamos de nuevo al ecuador de la semana.

Ayer puese el SUPER boniato gigante (800gr) al horno 🔥 y aproveché para ir haciendo otras cositas y asi aprovechar que encendía el horno. 
Una de las recetas fue la de estas espectaculares galletas proteicas (sin huevo 🐣 y sin azúcar). La receta es de @inmaalbertdieteticaintegrativa 
Yo he reducido las cantidades de la receta original por si no me quedaba bien y hacía un desastre😅
Y hora pienso que quiero más 😂 ✓ 25ml de leche de almendras sin azúcar añadido 🚫
✓30gr de harina de avena🌽
✓30gr de copos de avena🌽
✓levadura
✓Dos cucharaditas de peanut butter 🌰
✓una onza de Chocolate 🍫 negro 100% + una onza de chocolate blanco troceadas

Como la masa es pegajosa, para dar las formas es aconsejable humedecerse las manos.

Poner al horno 15min aproximadamente a 150°C

As I’m sure you guys can tell by now, I love Asian inspired meals and this one was sooo bombbb🔥🔥

CHICKEN FRIED CAULIFLOWER “RICE” 🍚 sautee chopped onions and minced garlic in spray oil (i use @chosenfoods avocado oil spray) 🍚 add any veggies you want (I just added chopped shredded carrots and scallions today, but you can add snap peas, bean sprouts, anything!
🍚 add riced cauliflower, garlic powder, soy sauce, chopped cilantro and more scallions 🍚 in a separate pan, cook your chicken breast cubes in spray oil with salt, pepper and some soy sauce. Once cooked and golden, add to rice mixture 🍚 in the same pan you cooked chicken , scramble some eggs or egg whites (amount depends on how much rice. I did a whole bag of cauli rice- about 4 cups- and 3 whole eggs) 🍚 add scrambled eggs, a bit more soy sauce, cilantro and scallions, sesame seeds and a touch of toasted sesame oil 🍚 let that mix on low and top with more scallions and sesame seeds to serve😋

🥗 buy a bag of broccoli rabe slaw (they usually sell this made!) if not, shred the broccoli stem and some carrots by hand 🥗 dressing: toasted sesame oil, rice vinegar, stevia, salt and pepper (I usually do 2 tbsp sesame oil and about 1/2 cup rice vinegar, but play with the taste)! 🥗 add the dressing to the slaw and let sit in refrigerator about 30-60 minutes (the longer the yummier!) 🥗 toppings can include: pickled ginger, scallions, sliced almonds, dried unsweetened cranberries, and anything you want!

🥕spray carrots with spray oil, salt and pepper (can add any seasoning you like but I kept it simple today) 🥕 bake at 400 F about 45 minutes or until crispy on outside and soft on inside (flip at about 20 minutes)

⭐️ about 2 tbsp tahini (only ingredients aré sesame seeds) ⭐️ juice of 1 lemon ⭐️ garlic powder, salt, pepper and stevia to taste ⭐️ add little water until you get drizzly consistency (This sauce can keep in the refrigerator for any salad or dip!) 🤤🤤🤤

I wouldn't say my toddler is an excellent eater but she is a pretty good eater considering her age and all.
She might dislike one dish but if I work with her she would eat. Or she might not enjoy something in one way but would eat in another way. 
Anyways there's one thing though, that she's really not liking in anyway which is tomatoes🍅
She always try but doesn't seem to get over it, whether cooked or fresh.
It's fine she doesn't like it but just wondering if anyone has a killer tomato recipe for tots?

Dinner was: Butter roasted kabocha and onion with soy sauce, green and red cabbage coleslaw with olive oil, chickpea salsa. I always add cumin and chilli powder in salsa when I mix with chickpeas. Very good😋 and of course no luck with tomato for the little one.

Ok so in my stories today I said I'd share how this blend has saved my sanity lately. So here it is. 🌙We recently moved our 2.5 year old to a big kid bed. I stopped using the diffuser in her room because she's a bit of a monkey and I knew she'd get out of bed and mess with it. So for a week straight she was getting up between 3:00 and 5:00am. Just awake. Happy and ready for the day. NOT cool. So then we decide to put the diffuser on in her room around 10:30pm, when we went to bed. And guess what happened? I had to wake her up at 7:45am so we could take the big kids to school. She SLEPT! So we continued to do this for 5 days and it worked every single time. Then last night we forgot about the diffuser. And guess what happened? She was up at 5:00am🤦🏻‍♀️. So tonight I will NOT forget to put 2 drops of peace & calming, 1 drop of lavender and 1 drop of cedarwood in that diffuser before I go to bed.

I said I'd show you the lunchbox my little boy took to Kindy today. He got the Spinach & Cheese Triangles I made yesterday, Gingernut Cookies, Apricot Delight, Peach 🍑, Strawberry 🍓, watermelon 🍉 & cucumber 🥒carrot 🥕 & capsicum! 
When I showed him his lunchbox he wasn't sure if he'd eat both of the triangles 😅, so we'll see how he went this afternoon!

Sunday night we had an unexpected  15 people over for dinner 🙀 and yes we spent most of yesterday recovering, but I have to say this was my favorite dish and it wasn't even planned! I opened the fridge in search of more food 👀 spotted spinach and peaches (I basted the 🍑 in honey and had Luis grill them) added some ricotta cheese and had my mom pick up some caramelized walnuts 💥Bam! The perfect end of summer salad! Just add dressing (white wine vinegar & olive oil) 🍾 When it comes to meal planning there's very little planning in our house and whole lot of creativity ✨ Just so you know, not all dishes are a success 😏

Home for a spot of strawberry picking with nanna while Winnie napped and then Savanna & I did a @cosmickidsyoga session together for a little bonding time whilst Winnie had a big nap. #lunch today for my girls was a raw broccoli, carrot & apple salad on linseed & sesame corn cakes with avocado and sauerkraut and topped with pepitas.
