soft-boiled eggs tutorial 🍳: bring a pot of water to a boil. then add two eggs and set the timer for 6 minutes (don't reduce the heat). while the eggs are boiling, prepare an ice bath to have ready to place your eggs in immediately (helps SO much with the removal of the shells!) once the timer goes off, place eggs in ice bath and let them cool for at least 10 minutes before cracking. and ENJOY!

•wet ingredients👉🏻 1/3 c almond milk, 1 tsp coconut oil, 1 egg •
•dry ingredients👉🏻 2 tbsp garbanzo bean flour, 1 tbsp coconut flour, 1 tbsp oat floor, 1 scoop @vitalproteins blackberry chocolate collagen peptides, 1 tbsp raw cacao, 1 tsp cacao nibs, 1 tsp flax seeds, 1/4 tsp cinnamon, 1 tsp baking powder & 1 tbsp coconut sugar. •

Library lunching today 📚🍴 Easy prepped chicken + prepped sweet potatoes for a quick and easy lunch on a busy day 🙌🏻 Made this early this morning before my first final and ate it while studying for final #2 👌🏻 Meal prepping coming in so clutch this week 💯 Feels good to be done with 2 tests, only 2 more to go 💃🏼 Got a good run/ stair master workout in with my roommate after my second final 👊🏻 Nothing relieves stress like a good sweat in my opinion 💆🏼🏃🏼♀️ I'm such a routine person that when I'm stressed if I get out of my routine it stresses me out even more 😬 So doing things I normally do like run helps me relax and take my mind off of studying 🤗 I don't stress if I can't fit it in but I still try and make it a priority! A closeup of last nights side dish 👉🏼Spicy Cauliflower Poppers 💥💥You can serve them with sauce or make an arrangement of dipping sauces on the side as a great appetizer (teriyaki, buffalo, spicy mayo)👌🏼
1 small head of cauliflower
1 egg, whisked
1 1/2 cups whole wheat panko crumbs
Cut up the cauliflower into florets, dip them in the egg and then in whole wheat panko crumbs. Place them on a lined tray and drizzle with olive oil. Bake on 350 for 35 min. Flip midway.
Sauce: 2 tbsp apricot jam or honey + 1/4 cup soy sauce + 2 tbsp spicy sesame oil + 1 tspn red pepper flakes + 1 tbsp sesame seeds + about 2 tbsp water. Stir together in a small bowl. Heat a skillet, place the cauliflower in and mix in the sauce until evenly coated, about 1-2 minutes.

Pimientos 🌶 rellenos con un salteado de soja texturizada, calabacín 🥒, zanahoria 🥕 y perejil 🌱en una crema de trigo sarraceno, curry, cúrcuma y pimienta 🙌🏻 BUENÍSIMO!!!!.
Como se prepara? 👩🏻🍳
Dejar en remojo una media hora la soja texturizada.
Cuando haya pasado el tiempo, escurrir bien y en una sartén saltear las verduras con aceite de oliva y añadir también la soja.
Salpimentar 👩🏻🍳 y añadir la crema de trigo sarraceno de @amandinorganic mezclada con curry y cúrcuma. Remover bien, esperar un par de minutos y listo! .
Cortar unos pimientos y rellenarlos 😁🌶 me encantaaa! La soja es una fuente de proteínas muy buena🙌🏻 y además es muy versátil a la hora de cocinar! Pega con todo 😍 .

TGIF! I wanted to share my delicious lunch from yesterday. When I got home from yoga today, I had no clue what I felt like for lunch. The consistency of the wrap is almost like a crepe so I could see it being used for both savory and sweet. I’m so excited for several reasons.
I proved to myself that I can go on a big trip with unknown foods and come home and dig right back in.
I’ve been sick all freaking week and still coughing up a lung, and still saw (for me) a big number.
I always get scared when I get this “skinny” that my body is gonna freak out and explode because it’s not normal for me to be this size. 😂 My brain works over time, y’all.

Brad and I were talking about failure last night and how it’s just part of life but learning from failure is one of life’s greatest life lessons. This Instagram page for example is built from the premise “I have successfully FAILED at being a uhealthy weight and obese my entire life, please come and help me...” and every day on the premise of failure I try my best to succeed. Does that make sense?
So if you’re a professional failure, like me. It’s never to late to turn it around...(and just be a loser - get it, losing weight......😂) and simply succeed.
Failure breeds success even if you don’t see the fruits of your labor for a long long time.
Make failure be your victory dance.
Show up. Fail? Show up again.

Going to FL for the weekend for a family event+ small getaway💆🏽 Sometimes it's hard to let ourselves go on a vacation or just to relax bc we think we don't deserve it or don't have time. Good morning World 👋🏼 On a cold winter day, my family really enjoyed this gluten free, quinoa-black rice-pumpkin apple pie. No refined sugar, no crap, just real ingredients. And it’s soooo good! This simple food represents at least 4 colors: orange from the pumpkin, yellow from the banana, red from the apple, purple from the blueberry.
